SLOW COOKER BARBECUE BEEF BRISKET
This Slow Cooker Barbecue Beef Brisket is as tender, juicy, and flavorful as it gets!

- In a small mixing bowl, whisk together the spice rub ingredients. You will probably have excess spice rub - save it to use later on pork, seafood or chicken.
- Pat the brisket dry with paper towels, then sprinkle spice rub onto the meat and rub it in with your fingers.
- Let the meat stand on your kitchen counter for 30 minutes, or up to 24 hours in the fridge. If you're keeping it in the fridge, remove it 30 minutes before cooking.
- Pour the barbecue sauce into your slow cooker.
- At this point, you can decide if you want to brown the meat before adding it to the slow cooker or not; that's your choice. To brown the meat, coat a large skillet with a tablespoon of olive oil and place over medium-high heat. Once the oil is heated, add your brisket to the skillet and sear it on both sides until browned.
- Remove your brisket from the skillet and place it inside the slow cooker. Turn to coat with the barbecue sauce.
- Cover the slow cooker with the lid and cook your brisket on LOW for 10 hours, or on HIGH for 5 to 6 hours.
- Remove brisket from the slow cooker and place it onto a cutting board. Let rest for 5 minutes. Keep slow cooker covered.Cut the brisket into thin slices, making sure to cut across the grain.
- Stir the sliced meat back into your slow cooker; serve.

SLOW COOKER TEXAS SMOKED BEEF BRISKET
This is a wonderful and very easy recipe to throw in the slow cooker on those really busy days. It can be increased for a large group or downsized for 2 people. It reminds me of summers in Texas.

- Mix paprika, pepper, salt, brown sugar, chili powder, and cumin together in a bowl; rub evenly over the surface of the brisket. Put brisket in a large, resealable plastic bag; refrigerate 30 minutes to overnight.
- Stir barbeque sauce, water, Worcestershire sauce, and liquid smoke together in the bottom of a slow cooker. Lay brisket into the sauce mixture. Arrange onions atop the brisket.
- Cook on Low until brisket is very tender, 6 to 7 hours. Rest brisket 10 minutes before slicing or shredding; serve with sauce from the slow cooker.

SMOKY BARBECUE BEEF BRISKET (CROCK POT)
This smoky flavored brisket is great for sandwiches or by itself. Start it before leaving the house in the morning and come home to a great meal.

- Trim fat from brisket. If necessary, cut to fit into crock pot.
- Combine chili powder, garlic powder, celery seed and pepper; rub evenly over meat. Place meat in a 3 1/2-5 quart crock pot.
- For sauce, combine catsup, chili sauce, brown sugar, vinegar, Worcestershire sauce, liquid smoke and dry mustard. Pour over brisket.
- Cover; cook on low setting for 8 to 10 hours or on high for 4 to 5 hours. Remove meat from cooker. Cut the brisket into thin slices across the grain. Skim fat off juices in cooker; serve juices with meat.

- In a large resealable plastic bag, combine the liquid smoke, pepper and salt; add the brisket. Seal bag and turn to coat; refrigerate for at least 4 hours or overnight., Drain and discard marinade. Combine the brown sugar, celery salt, garlic salt, onion salt, nutmeg and paprika; rub over meat. Wrap in a large sheet of heavy-duty foil; seal tightly. Place in an ungreased 15x10x1-in. baking pan. Bake at 325° for 4 hours or until meat is tender., Remove brisket to a warm serving platter; skim fat from pan juices. In a saucepan over medium heat, combine 1 cup pan juices with barbecue sauce; cook and stir until thickened. Thinly slice meat across the grain; serve with sauce.

BRISKET WITH BBQ SAUCE
After growing up in West Texas for 30 years where barbecue is the best, I found this recipe which is so tender and absolutely delicious. Leftovers, if you have any, make really great sandwiches. You can increase the liquid smoke to 4 tablespoons for really smoky flavor.

- Pour liquid smoke over brisket. Rub with onion salt and garlic salt. Roll brisket in foil and refrigerate overnight.
- Preheat oven to 300 degrees F (150 degrees C). Place brisket in a large roasting pan. Cover and bake for 5 to 6 hours. Remove from oven, cool, and then slice. Put slices back into pan.
- In a medium saucepan, combine brown sugar, ketchup, butter, water, celery salt, liquid smoke, Worcestershire sauce, mustard, salt and pepper. Stir, and cook until boiling.
- Pour sauce over meat slices in pan. Cover and bake for 1 more hour.

KELLY'S CROCK POT "SMOKED" BEEF ROAST OR BRISKET
This is awesome! If you love brisket or beef cooked in the smoker and just don't have time to, or maybe the weather won't permit- you have to try this. I have used EVERY cut of beef roast or brisket, it always comes out great! Enjoy!

Steps:
- Trim beef of any large extra fat. A little is good for flavor.
- Place the roast in the middle of a large piece of aluminum foil.
- Rub beef all over with all of the spices.
- Sprinkle liquid smoke over beef and rap tightly in foil. Make sure it's completely wrapped.
- DO NOT ADD ANY LIQUID TO THE CROCKPOT!
- Place in crock pot and cook on low setting for 8-10 hrs (10 for a larger cut of beef).
- Unwrap beef and serve with the "smoker" juices in the crock pot or with your favorite barbecue sauce.
