SMOKIN' SCOVILLES TURKEY CHILI
This is a hearty and relatively low-fat chili recipe that is guaranteed to satisfy even the most sadistic spicy food lover...REAL MAN FOOD. (For those with wimpier taste buds, omit the Habanero pepper). Try melting a tablespoon of whipped cream cheese into each dish. Hoo boy! Also, drink beer with lime. The acidity seems to help calm the assault on your taste buds when it gets to be too much.

Steps:
- Heat the olive oil in a large saucepan over medium heat. Add the onion, garlic, green peppers and habanero pepper; cook and stir until the onion is transparent. Push these to one side of the pot, and crumble in the ground turkey. Cover, and cook for about 5 minutes, stirring occasionally, or until the meat is no longer pink. Stir everything together so the garlic doesn't burn.
- Season with chili powder, red pepper flakes, paprika, cumin, oregano, pepper, hot cocoa mix and seasoned salt. Stir in Worcestershire sauce, liquid smoke, diced tomatoes with green chilies, tomato sauce and kidney beans. Crack open a beer, and pour in about 1/3. Drink or discard the rest. Partially cover the pan, and simmer over medium heat for about 50 minutes, stirring occasionally.
- Mix in the corn and hot pepper sauce, and simmer for about 10 more minutes. Remove from the heat and allow to cool for a few minutes before serving.

POST-THANKSGIVING TURKEY CHILI
What do you do with all that leftover turkey? This dish serves a lot of people, freezes well, and tastes even better the next day. The spice amounts below are guidelines and should be adjusted depending on your taste, how much leftover meat you have and how much water you use.

- Break up turkey carcass and place with leftover meat in a large stock pot.
- Cover completely with water.
- Add chopped onion and bay leaf.
- Bring to boil then cover and simmer for 1 hour (Meat should fall easily from bone).
- Strain juices and pour back in pot, along with one or two cans of chicken broth for a fuller flavor (Boullion is also OK, but keep in mind you will have less liquid to work with).
- Separate meat and chop any large pieces, then return to pot.
- Discard any bones, skin, leftover stuffing and other non-edibles.
- Add beans, tomatoes, garlic and spices.
- Simmer, uncovered, for twenty minutes to reduce liquid.
- You may wish to add a bit of flour, if the sauce is thin: To minimize lumps, ladle a cup of liquid into a mixing bowl and whisk in flour a teaspoon at a time, then stir into chili (Keep in mind that chili will thicken in the refrigerator or freezer, so if you are planning to store it, a little thin is OK).
- Serve and garnish with shredded cheese, chopped onions, scallions, cilantro and sour cream, or dip with crackers.

- Heat the olive oil in a large, heavy skillet over medium-high heat.
- Add the onion, garlic, salt, chili powder, and oregano and cook, stirring, until fragrant, about 3 minutes.
- Stir in the tomato paste and the chipotle chile and sauce; cook 1 minute more.
- Add the turkey, breaking it up with a wooden spoon, and cook until the meat loses its raw color, about 3 minutes.
- Add the beer and simmer until reduced by about half, about 8 minutes.

- Heat skillet to medium-high heat and spray with non-stick cooking spray.
- Brown ground turkey, stir occasionally to ensure it cooks evenly.
- Remove from skillet, putting directly in to Crockpot.
- Open and drain cans of corn and black beans.
- Open Rotel cans, keep juice in can.
- Put canned ingredients in Crockpot with browned turkey and mix well.
- In mixing bowl, combine 1 cup water with pre-packaged chili mix. Mix with whisk until well blended and add to Crockpot.
- Cook on low in Crockpot for 2 hours and then serve.

This is just the best tasting chili. My family prefers it over beef chili. I like to put out toppings such as chopped onion, cilantro, chopped bell pepper, cheese, and sour cream and let everyone serve themselves.

- Garnish: shredded cheese and chopped onion Heat 1 Tbsp.
- oil in 4-quart pan over medium-high heat. Add chopped Turkey and saute about 4 minutes until light brown.
