SMOKED WHITE TURKEY CHILI

Tired of Turkey after 3 days, this easy one pot recipe spices and spruces up the flavor. This recipe uses yellow tomatoes that are lower in acid than most tomatoes, and lends a sweetness accompanied by a touch of smoke, savory cilantro and spicy jalapenos. Shoepeg corn plays a supporting role by imparting a little crunch to each bite.

1 tablespoon olive oil
1 bunch green onion, chopped with tops separated
1 medium onion, diced
1 shallot, finely diced
12 hot pickled jalapeno peppers (nacho sliced style)
1 -2 garlic clove, minced
32 ounces diced yellow tomatoes
2 (15 ounce) cans cannellini or 2 (15 ounce) cans great northern beans
1 (11 ounce) can white shoepeg corn
2 tablespoons prepared cilantro
1/4 teaspoon white pepper
1 1/2 teaspoons ground cumin
2 cups smoked turkey breast, in bite size pieces

Steps:

  • Place a heavy bottomed saucepan or dutch oven over medium high heat and add olive oil. Add onion, green onion bottoms, shallots and garlic. Saute until soft, stirring often to avoid scorching garlic.
  • Add tomatoes and increase heat to high. Add Jalapenos. Open cans of beans and pour off most of the syrup (do not rinse!). When tomatoes are boiling, add the beans, stir and reduce heat to medium.
  • Open shoepeg corn and add, stir. Add cilantro paste, white pepper and cumin. Simmer for 10 minutes.
  • Add smoked turkey breast and simmer for another 10 minutes. Add green onion tops and serve.
  • If you don't have smoked turkey, 1 teaspoon of liquid smoke may be added as a substitute.

1 1/4 pounds Smoked turkey
1 piece Onion
1 piece Green pepper
4 cloves Garlic
1 tablespoon Cumin, ground
2 teaspoons Oregano, dried
1/2 teaspoon Crushed red pepper flakes, or cayenne pepper
1 tablespoon Smoked paprika (Pimenton)
2 cans Cannellini beans, 15 oz can
1 cans Diced green chiles, 7 oz can
1/2 cup Chicken broth
1 piece Chipotle in abodo sauce
1/3 cup Whipping cream
2 tablespoons Canola, corn, or mild olive oil
2 tablespoons *Masa Harina

Steps:

  • If the turkey has skin, dice finely. Chop the turkey in ½ to ¾ inch cubes. Chop the onion and green pepper into medium pieces. Crush the garlic. Put on rubber or latex gloves. If you are using jalapeno for garnish, finely dice it. Finely dice the chipotle in abodo sauce.
  • Heat oil in a dutch oven or stock pot. If you have skin, render the fat slowly. Remove the cracklings and snack on them. They are delicious. You deserve it, your dog doesn't.
  • Add the onion and green pepper to the pot and sauté until the onion becomes translucent. Add the garlic and cook gently so as not to burn it. Add the dry spices and cook to release the flavors.
  • Drain the beans. You may reserve ½ cup of bean liquid to help thicken the chili. I do not like beans, only tolerating cannellinis, lentils, and chickpeas, so I rinse the beans well in a colander.
  • Add the turkey, beans, diced green chiles, chile in abodo sauce, chicken broth (and reserved bean liquid if using) to the pot. Stir well. Cover and simmer 30 to 45 minutes. Stir frequently. Add a bit of chicken broth if it is getting dry.
  • Taste & adjust seasonings. If the chili is soupy, add 1 or 2 tablespoons of masa harina and stir thoroughly. Cook 10 - 15 minutes more to thicken. If it is too dry, add a little chicken broth.
  • Just before serving, add ¼ to 1/3 cup whipping cream. If you are using turkey breast, this dish is very low fat, and the cream will help, especially if you do not like sour cream in your chili. If you make this in advance, do not add the cream until you reheat it.

4 cups cooked turkey meat, chopped
3 (28 ounce) cans crushed tomatoes
2 cups low-sodium chicken broth
1 (12 fluid ounce) can beer
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 (15 ounce) can black beans, drained and rinsed
salt and ground black pepper to taste

Steps:

  • Heat oil in a large pot over medium-high heat. Add onion and bell pepper and cook, stirring occasionally, until vegetables are soft, about 7 minutes. Stir in garlic and cook until it starts to soften, about 1 minute.
  • Stir in chili powder, cumin, oregano, salt, and pepper. Add turkey and stir until well coated with spices. Pour in crushed tomatoes, chicken broth, beer, brown sugar, and Worcestershire sauce. Reduce heat to medium low and bring to a simmer, uncovered. Cook, stirring occasionally, until chili has thickened, about 50 minutes. Add black beans and cook until heated through, about 10 minutes. Season with salt and pepper.

1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
2 cups cubed cooked turkey breast

1 can (4 ounces) chopped green chiles, drained
1 tablespoon minced fresh cilantro
