SMOKED TURKEY SANDWICHES WITH SPICY AIOLI

4 individual ciabatta rolls, sliced in half lengthwise
Spicy aioli (see recipe below)
4 slices picante provolone
3 roasted red peppers, sliced into strips (about 1 cup)
1 pound thinly sliced smoked turkey breast
1 cup tightly packed fresh basil leaves
3/4 cup mayonnaise
2 tablespoons Calabrian chili paste
Kosher salt

Steps:

  • Preheat the oven to 400 degrees F. Place the ciabatta rolls on a rimmed baking sheet with the cut side facing upwards. Bake until lightly toasted, 7 to 10 minutes.
  • Arrange the bread, toasted side up, on a work surface and divide the spicy aioli on all the halves evenly. On each of the bottom halves place 1 slice of cheese, ripping in half if necessary to make the cheese fit the bread. On top of the cheese, layer the peppers, followed by the turkey. Divide the basil evenly on each of the top halves, pressing slightly to adhere to the aioli. Place the tops of the sandwiches on, then cut the sandwiches diagonally and serve.
  • Whisk together the mayonnaise, chili paste and ¼ teaspoon salt in a small bowl. Refrigerate aioli until ready to assemble the sandwiches.

Hot Smoked Turkey Sausage Sandwiches with Grilled Onions, Fennel and Peppers image

8 Italian spicy peppers
1 Spanish onion
1 small fennel bulb
2 tablespoons olive oil
Salt
3 pounds link sweet Italian turkey sausage
4 hoagie rolls, centers removed
4 ounces aged provolone
Hot Green Apple Chutney, recipe follows
1/2 onion, sliced thin
1/4 teaspoon minced garlic
1/2 teaspoon minced ginger
2 Granny Smith apples, cored and diced into 1/4-inch by 1/4-inch
1/2 teaspoon pickling spice
2 tablespoons apple cider
Salt and pepper

Steps:

  • Cut the stalks off the fennel and slice the bulb lengthwise into 1/2-inch slices. Cut the onion crosswise into 1/2-inch thick slices. Lightly brush both sides of fennel, onion, and peppers with olive oil. Grill the fennel, onion, and peppers over medium heat for 10 to12 minutes, turning once. Remove from the grill and cut away the root from the fennel. Split peppers in half and remove seeds. Chop fennel, onion, and peppers into 1/2-inch pieces. Over low heat and applewood, hickory or oak, smoke the sausages for 30 minutes until they are no longer pink in the center. Toast the hoagie rolls. Fill rolls with apple chutney, sausage, peppers, onion and fennel. Top with more apple chutney and shaved aged provolone.
  • In a medium size saucepan lightly caramelize onions in oil over medium heat. Add garlic and ginger and saute for 5 minutes. Add apples and pickling spice. Gradually add apple cider. Cook until apples are just tender, about 5 minutes. Season with salt and pepper.

3 1/2 tablespoons red wine vinegar
6 cups trimmed large arugula leaves (about 4 ounces), divided
3/4 cup mayonnaise
8 1/3-inch-thick slices seeded wheat bread (such as La Brea Bakery) or four ciabatta rolls, cut horizontally in half
12 ounces thinly sliced smoked turkey
3/4 cup coarsely crumbled blue cheese (such as Maytag; about 3 ounces)

Steps:

  • Heat oil in large nonstick skillet over medium-high heat. Add onions and sauté until soft and lightly browned, breaking up onion rings, about 8 minutes. Remove from heat; stir in vinegar and season to taste with salt and pepper.
  • Chop enough arugula to measure 1 cup; place in medium bowl. Mix in mayonnaise. Season with salt and pepper. Spread about 11/2 tablespoons arugula mayonnaise over each cut side of bread. Divide turkey slices among 4 bread slices. Top with crumbled blue cheese, dividing equally. Top with red onions, then whole arugula leaves and bread.

Make these when you have some beautiful fresh herbs. This is different and delicious because of the fresh herbs, garlic and pepperoni in the mayo mix. It makes a very special sandwich. If you like, you can also use this as a filling for lavosh wrapped sandwiches. Roll them up, chill them for an hour, and cut on the diagonal for a very nice lunch presentation.

6 tablespoons mayonnaise
2 tablespoons cilantro, chopped fine
2 tablespoons fresh oregano, chopped fine
1 clove garlic, minced
6 slices pepperoni, minced
3 ounces brie cheese, sliced thin and at room temperature
1 lb smoked turkey slice, very thin
3 large tomatoes, sliced thin
1 head spinach leaves, washed well and dried thoroughly
1 avocado, peeled and sliced thin

Steps:

  • Cut 6 small (one-person size) baguettes in half.
  • Mix together mayo, cilantro, oregano, garlic and pepperoni.
  • Spread evenly over the baguette halves.
  • On 6 halves, now layer the brie first, spread a bit to fill in gaps, then turkey, tomatoes, avocado, and season with s&p.
  • Top with spinach.
  • Put the other half of the baguette on top of the filling mix.
  • This can be refrigerated for about 2 hours, but any longer and the avocado will start to darken.

5 tablespoons whole grain honey mustard or 5 tablespoons Dijon mustard
2 tablespoons red wine vinegar
2 tablespoons chopped fresh parsley
1 teaspoon olive oil
1/3 cup chopped walnuts
1/3 cup chopped red onion
4 whole grain buns (6 inches long) or 4 whole grain buns, halved lengthwise and lightly toasted (6 inches long)
3 ounces baby spinach leaves (about 2 cups)
1 lb deli-sliced smoked turkey breast
8 ounces brie cheese, cut into 8 slices

Steps:

  • Combine the mustard, vinegar, parsley, and oil.
  • In another bowl, combine the walnuts and onions; stir in 2 Tbsp of the mustard mixture.
  • Remove bread from the center of each roll half, leaving 1/2" thick shells.
  • Spread each roll half with 1 tsp of the mustard mixture.
  • Dividing evenly, line each sandwich half with spinach and turkey; place 2 Brie slices on each bottom half of the rolls.
  • Top the cheese with the walnut mixture.
  • Carefully place the filled roll tops over the walnut mixture; slice sandwiches in half and serve.

6 fresh tomatillos (about 1/2 pound total)
1 fresh jalapeño chili, seeded and chopped (wear rubber gloves)
1 garlic clove, chopped
6 ounces thinly sliced cooked turkey breast
Half a 7-ounce jar roasted red pepper, rinsed and patted dry
2 ounces smoked mozzarella, cut into 6 slices
1/4 cup fresh coriander, washed, dried, and chopped
1 teaspoon olive oil

Steps:

  • Preheat oven to 350° F.
  • Split pita loaves horizontally to create 4 rounds.
  • Discard husks from tomatillos and rinse under warm water. Chop tomatillos and in a blender purée with jalapeño, garlic, and salt and pepper to taste until smooth. In a small saucepan cook purée over moderate heat, stirring, until thickened, about 4 minutes.
  • Spread 1/4 tomatillo purée on rough side of each pita round. Arrange 2 pita rounds on a baking sheet and top evenly with turkey, roasted pepper, mozzarella, and coriander. Top with remaining pita rounds, tomatillo sides down. Brush tops of sandwiches with oil and season with salt and pepper. Bake sandwiches in middle of oven 10 minutes, or until cheese is slightly melted and tops of pitas are golden brown.
  • Cut sandwiches into wedges if desired.

3 tablespoons coarsely chopped onion
1/2 jalapeno pepper, seeded and chopped
1/2 garlic clove, coarsely chopped
1/8 teaspoon red-pepper flakes or jalapeno seeds
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
3 tablespoons coarsely chopped fresh cilantro
1 avocado, peeled, pitted, and thinly sliced
Juice of 1 lime
24 slices thin white bread
9 ounces smoked turkey, thinly sliced

Steps:

  • In the bowl of a food processor fitted with the metal blade, combine beans, onion, jalapeno, garlic, red-pepper flakes, salt, and pepper. Pulse until smooth and thick; add water 1 tablespoon at a time, if necessary, to reach spreadable consistency. Transfer to 1 medium bowl, and stir in cilantro.
  • In another bowl, gently toss avocado with lime juice to prevent browning.
  • Assemble the sandwiches: Spread black-bean mixture on two slices of bread; layer one slice with smoked turkey and tossed avocado, and place the other slice on top of it. Using a serrated knife, trim crusts and cut into triangles. Cover with a damp paper towel until ready to serve.

1 large red onion, cut into 1/2 inch rounds (the original recipe used 2 onions)
1 tablespoon olive oil
3 tablespoons red wine vinegar
3 cups arugula leaves (the original recipe suggests double the amount I used)
3/4 cup mayonnaise (I used 1/2 regular mayo and 1/2 light mayo)
8 slices whole wheat bread (I used light whole wheat bread)
12 ounces smoked turkey, deli sliced
3/4 cup blue cheese, crumbled

Steps:

  • In a large skillet over medium high heat, heat oil and then add in onions, cooking until llight browned, breaking up into rings. (8-10 minutes). Remove from heat and stir in vinegar and salt and pepper. Set aside.
  • Chop enough argula to measure 1 cup and place it in a small bowl. Mix in the mayonnaisse, salt and pepper.
  • To make sandwiches: spread 1 1/2 tablespoons (I used less) of the argual/mayo over the cut sides of 4 slices of bread. Divide the turkey slices among the 4 bread slilces and then top with the blue cheese, red onion slices and argula leaves and the remaining slices of bread.

2 tablespoons ketchup
2 tablespoons shallots, finely minced

1 granny smith apple, cored and sliced thinly
1/2 lb smoked turkey, sliced
1 cup sauerkraut, drained
6 ounces gruyere cheese or 6 ounces jarlsberg cheese

Steps:

  • In a small bowl whisk together the mayonnaise, ketchup, shallots, pickle relish and Dijon mustard. Season to taste with salt and pepper.
  • Spread the mayo mixture on one side of each bread slice.
  • Layer apple slices and turkey slices on half the bread, mayonnaise side up.
  • Lastly, top with the sauerkraut, cheese, and the remaining slices of bread.
  • Grill sandwiches in batches either with a panini machine or in a grill pan.
  • Cook until bread is golden and cheese has melted.

1 cup crumbled Maytag blue cheese
3 tablespoons sour cream
1 tablespoon minced fresh thyme
8 5x3x1/2-inch slices multi-grain bread
8 radicchio leaves
3/4 pound sliced smoked turkey
2 tablespoons Dijon mustard

Steps:

  • Prepare barbecue (medium-high heat) or preheat griddle pan over medium-high heat. Brush onion with olive oil. Grill until brown, about 2 minutes per side. Season with salt and pepper; cool.
  • Mix cheese, sour cream, and thyme in small bowl to blend. Season generously with pepper. Spread cheese mixture over 4 bread slices. Top cheese with grilled onions, radicchio, then turkey. Spread mustard on remaining 4 bread slices; place atop turkey. Press sandwiches lightly to compact. Cut sandwiches in half; wrap each tightly in plastic wrap. 1 to 2 tablespoons minced fresh parsley leaves
fresh lemon juice to taste
four 5-inch lengths of Italian or French bread, halved horizontally and toasted
3/4 pound thinly sliced smoked turkey breast
arugula or lettuce leaves

Steps:

  • In a small bowl mash together with a fork the Stilton, the mayonnaise, the chutney, the parsley to taste, the lemon juice, and salt and pepper to taste until the mixture is combined well, spread the halves of the bread with the Stilton mixture, and divide the turkey between the bottom halves of the bread. Top the turkey with the arugula and cover the sandwiches with the top halves of the bread.
