8 ounces Jarlsberg or Swiss cheese, cut into 1x 1/4-inch strips (2 cups)
2 cups seedless red grapes, whole or cut in half
1 1/2 cups slivered almonds, toasted
2/3 cup mayonnaise or salad dressing
2/3 cup sour cream
2 to 4 tablespoons milk
Salt and pepper to taste, if desired
Lettuce, if desired

Steps:

  • Mix turkey, cheese, grapes and almonds in very large (4-quart) bowl.
  • Mix remaining ingredients except lettuce in medium bowl. Pour over turkey mixture; mix gently. Cover and refrigerate until serving. Serve on lettuce.

  • Mix turkey, cheese, grapes and almonds in very large (4-quart) bowl.

This is a salad my husband's cousin makes and all his family loves it. Toasting of almonds is 3-4 minutes not the 5 I had to post.

12 ounce(s) smoked turkey breast - (2 1/2 cups)
4 ounce(s) jarlsberg or swiss cheese (1 cup)
1 cup(s) seedless red grapes, halved
3/4 cup(s) slivered alomnds, toasted
1/3 cup(s) mayonnaise
1/3 cup(s) sour cream
1-2 tablespoon(s) milk
- salt and pepper, to taste

Steps:

  • In a medium bowl combine smoked turkey, Jarlsberg cheese, grapes and almonds.
  • In a small bowl combine, mayonnaise, sour cream, milk and salt and pepper. Blend well and pour over salad mixture, gently combine.
  • Refrigerate until serving time, 4-6 servings (The time it takes to refrigerate is not included in the cook time)
  • To toast almonds spread on cookie sheet. Bake at 375* for 5-10 minutes until golden brown, stirring occasionally or microwave 3-4 minutes, stirring frequently until light golden brown.

1 cup uncooked tricolor spiral pasta
1/4 pound cubed deli smoked turkey
1 cup (4 ounces) cubed Monterey Jack cheese
1/2 small cucumber, thinly sliced and halved
1/3 cup chopped sweet red pepper
1 green onion, thinly sliced
3 tablespoons sour cream
2 tablespoons mayonnaise
1-1/2 teaspoons 2% milk
1 teaspoon honey
1 teaspoon Dijon mustard

  • Cook pasta according to package directions; drain and rinse in cold water. 2 Smoked Turkey Legs, recipe follows
1/4 cup diced celery
1/4 cup diced apple
1 tablespoon pecans, roasted
1 teaspoon rice wine vinegar
1 teaspoon fresh parsley, finely chopped
1/4 teaspoon freshly ground black pepper
1/4 cup mayonnaise
3 quarts water, hot
225 grams kosher salt
225 grams dark brown sugar
1100 grams (about 2.5 pounds) ice
6 turkey legs
1 cup unsalted chicken stock

Steps:

  • Remove the skins from the Smoked Turkey Legs, pull off the meat and chop into 1/2-inch cubes.
  • Place the turkey, celery, apple, pecans, vinegar, parsley, black pepper and mayonnaise in a medium-sized bowl. Stir to combine and serve.
  • Place the water, kosher salt and brown sugar in an 8-quart plastic container and stir until fully dissolved. Add the ice before submerging the turkey legs in the brine. Cover and refrigerate for 4 hours or up to 12 hours.
  • Set up your favorite smoker and add a handful of hardwood chunks. If you have heat control, set it to 150 to 170 degrees F and allow the wood to smoke for approximately 30 minutes.
  • While the smoker is heating, drain the legs, pat them dry and arrange them on a rack. Smoke the legs on the rack for 3 hours, rotating the legs halfway through.
  • Heat your oven to 350 degrees F. Make 2 pouches out of double-layered heavy-duty tin foil, adding 3 legs and 1/2 cup of chicken stock to each pouch. Braise the legs in their pouches for 1 hour, then carefully drain and reserve the jus.
  • Defat the jus, remove the skins and serve the legs alongside the smoky jus.

1/2 cup dry sherry
1/2 cup frozen corn
1 cup uncooked pasta, preferably orzo
1 15-ounce can no-salt-added black beans
2 tablespoons red wine vinegar
1 teaspoon cumin
1/4 teaspoon hot red pepper flakes
1/2 teaspoon turmeric
9 ounces smoked turkey breast

Steps:

  • Bring water for pasta to a boil.
  • Chop whole onion and garlic, and saute in one teaspoon of very hot oil in nonstick pan.
  • Wash, trim, seed and chop whole peppers; add to onions as they cook, and when onion begins to soften, add the sherry, reduce heat and continue cooking until peppers are soft. About two minutes before the peppers are ready, stir in the corn and cook just to heat through.
  • Meanwhile, drain the beans and rinse thoroughly.
  • Cook the pasta according to package directions.
  • Whisk the rest of the oil and the vinegar with the cumin, hot red pepper flakes and turmeric in a bowl large enough to hold all the ingredients.

1 tablespoon butter
1 tablespoon vegetable oil
1 small red onion, sliced in half moons
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 red bell pepper, seeded and julienned
6 sun-dried tomatoes packed in oil, chopped
Meat from 1 (1-pound) smoked turkey leg, skin removed and meat roughly chopped, 10 ounces
1 tablespoon lemon juice
1/4 cup pine nuts, toasted

Steps:

  • Bring a large pot of salted water to a boil over medium heat and add the string beans. Blanch until bright green, about 3 minutes, then transfer to an ice bath. Warm the butter and the oil in a large skillet over medium heat. Add the onion and garlic, a pinch of salt and pepper, and cook until they are softened but have no color. Add the bell pepper to the skillet and continue to saute another 2 minutes. Strain the string beans and pat dry. Add the beans, tomatoes, turkey and lemon juice and stir until all ingredients are evenly incorporated and warm. Transfer to a serving bowl, top with toasted pine nuts and serve.

1 cup red seedless grapes, sliced in 1/2
1/3 cup brown jasmine rice, rinsed well
8 ounces smoked turkey, shredded
2 tablespoons red wine vinegar
1/2 cup Italian parsley, finely chopped
1/4 cup olive oil
2 avocados, pitted and diced
1/2 cup sliced almonds, lightly toasted

Steps:

  • Place in water in a large pot to boil. Add wild rice, brown rice, 1/2 tsp salt, and let return to boil. Reduce heat to low, cover, and cook 45 minute Drain leftover water. Transfer rice to a shallow bowl and set aside to cool.
  • Add grapes, smoked turkey, and parsley. Stir well.
  • Place vinegar, oil, and remaining salt in a small bowl. and whisk. Pour over rice mixture. Before serving, add avocado and almonds.

Smoked Turkey And Black Bean Salad image

Number Of Ingredients 15

1 15-ounce can no-salt-added black beans
8 ounces whole red pepper or 7 ounces chopped ready-cut red pepper (1 1/2 cups)
A few sprigs fresh cilantro to yield 1/4 cup chopped
2 ounces red onion or 1/4 cup chopped
1/2 to 1 whole jalapeño pepper
1 large clove garlic
8 ounces ripe tomato
6 ounces smoked turkey or smoked chicken in a chunk
1 tablespoon olive oil
2 tablespoons raspberry vinegar
2 teaspoons sweet-hot mustard
12 large basil leaves
1 small bunch arugula
Freshly ground black pepper to taste
2 slices country bread

Steps:

  • Wash and drain beans, and set aside.
  • Wash, seed and chop whole pepper; wash, dry and chop cilantro; chop onion; wash, seed and mince jalapeño; mince garlic, and wash tomato and coarsely dice it and smoked turkey.
  • Whisk together the oil, vinegar and mustard in a bowl large enough to hold all of the ingredients; stir in the beans and chopped ingredients.
  • Wash and julienne the basil leaves, and stir in.
  • Remove coarse stems from arugula, wash and dry and break into small pieces. Stir into salad, seasoning to taste with pepper. Mix all the ingredients well to coat with dressing. Serve with bread.
