TURKEY COBB SANDWICH

Breakfast and lunch on one bun, this indulgent take on Cobb salad stacks avocado, blue cheese, turkey, crisp bacon, and a gently cooked egg.

Number Of Ingredients 8

3 slices applewood-smoked bacon
1/2 ounce (1 tablespoon) unsalted butter, softened, plus more for roll or bun
1 brioche roll or hamburger bun, split
1/4 ripe avocado
1 teaspoon crumbled blue cheese, such as Roquefort
2 thin slices tomato
1 medium egg
4 thin slices cooked turkey

Steps:

  • Cook bacon in a skillet over medium heat until crisp, 10 to 12 minutes. Transfer to paper towels to drain, and wipe skillet clean.
  • Butter cut sides of roll or bun. Heat skillet over medium-high heat. Place roll or bun, buttered sides down, in skillet, and cook until golden brown, 1 to 3 minutes.
  • Mash avocado and blue cheese in a small bowl. Spread mixture on bottom half of roll or bun. Top with tomato and bacon.
  • Melt butter in skillet over medium heat. Add egg, and cook until white is set, about 1 1/2 minutes. Gently flip egg, and cook until yolk is runny in center but slightly set around edge, about 30 seconds. Remove from pan. Add turkey to pan, and heat through.
  • Place turkey and egg on top of tomato. Top with remaining half of roll or bun, and serve immediately.

These sandwiches are really good - my dh said about them "I usually don't like turkey sandwiches but these are really good". I used some light products when I made these (light mayo and light whole wheat bread) without anyone being the wiser. We served these with fruit salad and pickels for a no-work dinner. 1 large red onion, cut into 1/2 inch rounds (the original recipe used 2 onions)
1 tablespoon olive oil
3 tablespoons red wine vinegar
3 cups arugula leaves (the original recipe suggests double the amount I used)
3/4 cup mayonnaise (I used 1/2 regular mayo and 1/2 light mayo)
8 slices whole wheat bread (I used light whole wheat bread)
12 ounces smoked turkey, deli sliced
3/4 cup blue cheese, crumbled

Steps:

  • In a large skillet over medium high heat, heat oil and then add in onions, cooking until llight browned, breaking up into rings. (8-10 minutes). Remove from heat and stir in vinegar and salt and pepper. Set aside.
  • Chop enough argula to measure 1 cup and place it in a small bowl. Mix in the mayonnaisse, salt and pepper.
  • To make sandwiches: spread 1 1/2 tablespoons (I used less) of the argual/mayo over the cut sides of 4 slices of bread. Divide the turkey slices among the 4 bread slilces and then top with the blue cheese, red onion slices and argula leaves and the remaining slices of bread.

Fresh avocado, smoked turkey breast, and crispy bacon with a bleu cheese spread served on bread of your choice with thin sliced red onion, romaine lettuce, and sliced tomato. This is my version of a California Cobb, based on a wonderful sandwich at a local shop. I hope you enjoy as much as I do!

2 slices of good bread (your choice, I prefer honey whole wheat)
1/2 of a fresh avocado, chopped
3 ounces smoked turkey breast, thinly sliced
1 strip crispy bacon, crumbled
1 tablespoon crumbled blue cheese
1 -2 tablespoon mayonnaise (to taste)
1/2 teaspoon vinaigrette dressing (to taste)
fresh ground black pepper
1 -2 slice of thinly sliced red onion
romaine lettuce
1 -2 slice of thinly sliced tomatoes

Steps:

  • Lightly toast the bread, if desired. Spread with mayonnaise, bleu cheese, avocado, crumbled bacon, and vinaigrette.
  • Assemble your sandwich with the remaining ingredients.
  • Enjoy!

1/2 cup mayonnaise
1/2 teaspoon Dijon mustard
1 garlic clove, minced
1 small avocado, finely chopped
2 cups diced cooked turkey
1/2 cup seeded chopped tomato
2 ounces crumbled blue cheese
4 hardboiled egg, sliced
8 slices bacon, cooked until crisp
8 slices french sourdough bread, thick slices
2 cups shredded romaine lettuce

Steps:

  • In a medium bowl whisk together mayonnaise, mustard and garlic, season with salt and pepper to taste.
  • Add avocado, turkey, tomatoes and toss.
  • Toast bread slices and butter lightly.
  • Divide turkey mixture on 4 of the slices, top each with 2 slices bacon, 3-4 egg slices, sprinkle with crumbled blue cheese, top with lettuce and other slice of toast.

2 8- to 10-ounce red onions, cut into 1/3-inch-thick rounds
3 1/2 tablespoons red wine vinegar
6 cups trimmed large arugula leaves (about 4 ounces), divided
3/4 cup mayonnaise
8 1/3-inch-thick slices seeded wheat bread (such as La Brea Bakery) or four ciabatta rolls, cut horizontally in half
12 ounces thinly sliced smoked turkey
3/4 cup coarsely crumbled blue cheese (such as Maytag; about 3 ounces)

Steps:

  • Heat oil in large nonstick skillet over medium-high heat. Add onions and sauté until soft and lightly browned, breaking up onion rings, about 8 minutes. Remove from heat; stir in vinegar and season to taste with salt and pepper.
  • Chop enough arugula to measure 1 cup; place in medium bowl. Mix in mayonnaise. Season with salt and pepper. Spread about 11/2 tablespoons arugula mayonnaise over each cut side of bread. BLUE CHEESE MAYO:
1/4 c blue cheese
1/4 c mayonnaise
AVOCADO PUREE:
1 c pureed avocado
salt and pepper to taste
1/4 tsp lemon juice
SANDWICH:
8 slice sourdough bread, sliced thin
2 oz mixed greens
8 slice red ripe tomato
8 oz smoked turkey, sliced
8 slice bacon, fried crisp

Steps:

  • 1. Blue Cheese Mayo: Combine the cheese and mayonnaise in a small bowl, and mix well. --- Avocado Puree: Mix the avocado puree, salt and pepper, and lemon juice until well-blended. --- To assemble Sandwich: Spread one bread slice with 1 to 2 Tablespoons of the blue cheese mayonnaise. Layer the mixed greens, 2 tomato slices, 2 ounces smoked turkey, and 2 bacon slices on the bread. Spread another slice of the bread with the avocado puree, and top the other half of the sandwich. Repeat using all ingredients.
