1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

A hearty and easy supper entree. I need to say up front that this one is a spin-off of Mareesme's: Recipe #199769 -- but I didn't have the proper ingredients for that fine recipe so I changed to smoked sausage and I eliminated the stovetop techniques, so it's all just baking/broiling. Hey, this was GOOD and I credit Mareesme for turning me on to the basic ingredients and some shrewd seasoning with the little touch of brown sugar. If you like weenies and sauerkraut, you like this one even better! pat, the old bone man.

1 lb smoked sausage
6 slices bacon
32 ounces sauerkraut, drained, not rinsed
1/2 medium onion, diced
1 teaspoon brown sugar
1/4 cup water

Steps:

  • Preheat oven to 350-degrees F.
  • Cut the smoked sausage into 6 pieces.
  • In a 9" x 9" ungreased baking dish, layer in half the sauerkraut and then lay out the sausage on top of it. Cover with the remaining sauerkraut.
  • Spread the diced onion over the sauerkraut, lay out the bacon slices across the casserole, and then sprinkle the brown sugar over it. Pour the water over the casserole which will make the sugar dissolve a bit. Cover with aluminum foil and bake on the middle rack for 90 minutes.
  • At the end of the 90 minutes, remove the aluminum foil and, on the same rack, BROIL for 6 minutes. Serve hot along with mashed potatoes.
  • Note: You won't have to add salt -- there's plenty of salt in the sauerkraut.

This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 teaspoon paprika

Steps:

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  • Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  • NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

1/3 cup water
1/4 cup brown sugar, packed
2 tablespoons Dijon mustard
1 teaspoon caraway seed
1/2 teaspoon dried dill weed

Steps:

I just had to share it! For a healthier casserole, I use whole wheat pasta, turkey smoked sausage, 98% fat free soup and low fat cheese.

2 lbs uncooked medium shrimp, peeled and deveined
1/4 cup butter
1 onion, finely chopped
2 stalks celery, finely chopped
1 -2 tablespoon fresh minced garlic (or to taste)
3/4 lb dry smoked sausage
3 green onions, chopped
2 cups canned corn niblets, drained
1 jalapeno pepper, seeded and finely chopped
2 teaspoons cumin (can use less, or adjust to taste)
1 teaspoon cayenne pepper (optional or to taste)
2 -3 tablespoons chopped fresh cilantro
1 1/2 cups milk
3 large eggs, lightly beaten
1 tablespoon seasoning salt (or use white salt to tasste)
black pepper
1 1/4 cups yellow cornmeal
3/4 cup flour
1 -2 tablespoon sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1 egg, slightly beaten
3 tablespoons melted butter
1 1/2 cups buttermilk

Steps:

  • For the cornbread; (the cornbread can be prepared up to a day in advance) set oven to 425 degrees.
  • Generously grease a 10-inch oven-proof skillet.
  • Place the buttered skillet in the oven to 5 minutes to heat.
  • In a bowl combine the cornmeal, flour, sugar, baking powder and salt.
  • In another bowl combine the eggs, melted butter and buttermilk; add to the dry ingredients; stir JUST until moistened.
  • Transfer the batter to the hot skillet.
  • Bake at 425 degrees for about 20-25 minutes, or until golden.
  • Cool the baked cornbread and then cut into 1-inch cubes.
  • Arrange in a single layer in a 15 x 10-inch baking sheet.
  • Bake at 350 degrees for about 15-20 minutes or until lightly browned; set aside.
  • For the casserole; butter a 13 x 9-inch baking dish.
  • Melt butter in a large skillet over medium heat; add in onion and celery, saute for about 5 minutes or until softened (add in the garlic the last 2 minutes of cooking).
  • Add in the uncooked shrimp, sausage, green onions, corn and jalapeno pepper; cook stirring constantly until the shrimp JUST begins to turn pink; remove from heat (the shrimp will still be raw).
  • Stir in cumin with cilantro and cayenne (if using) milk and 3 beaten eggs; mix to combine.
  • Add in the cubed cornbread; gently mix with a wooden spoon (it does not matter if the cornbread breaks!).
  • Season with seasoned salt (or white salt and black pepper).
  • Spoon the mixture into prepared baking dish.
  • Bake for about 30-35 minutes at 350 degrees.

10 eggs
2 tablespoons Dijon mustard
1 teaspoon hot sauce
1 cup half-and-half
1 ½ teaspoons salt
1 teaspoon ground black pepper
1 (14 ounce) package Hillshire Farm® Smoked Sausage
1 teaspoon Chopped chives

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13x2-inch baking dish.
  • In a large bowl, combine the thawed hash browns, onion, and bell peppers. Reserve a 1/2 packed cup of cheese and mix the remaining 1 1/2 cups with the hash brown mixture. Transfer to the baking dish and smooth into an even layer.
  • In the same bowl, whisk together the eggs, Dijon, hot sauce, half-and-half, salt, and pepper. Pour the egg mixture over the hash brown mixture and gently press down with the back of a spoon to help hash browns absorb the egg.
  • Cut the rope sausage crosswise into 1/4-inch slices. Lay across the top of the hash browns and gently press into the mixture.
  • Bake for 45 minutes. Remove and top with reserved cheese. Increase temperature to 400 degrees F and finish baking just until eggs are set and top is slightly brown, about 7 to 10 minutes. Let rest 10 minutes. Sprinkle with chopped chives or parsley if desired, then serve.

  • Slice smoked sausage in bite size pieces.
  • Put smoked sausage in frying pan.
  • Add chopped onion and saute until onion is tender.
  • Add green beans, mushrooms, and potatoes.
  • Heat through and serve.

Being married to a Southerner...I had to learn how to make and use grits...he just loves this casserole...use any sausage you want...he likes when I use Beddar Cheddar smoked sausage...this is one delicious casserole...its not just for breakfast, we have this anytime... see, even us Northern girls can cook grits...Lol! I hope...

4 - 4 1/2 c water
1 c quick cooking white hominy grits
1/2 tsp salt
2 - 3 Tbsp butter
1 c shredded, sharp cheddar cheese
1 c shredded, monterey jack cheese
3 beaten eggs
1/2 c milk
1 tsp oil
4 - 5 links, beddar cheddar smoked sausage ( cut lengthwise then cut into bite sized pieces) or your favorite sausage
can add some onion with the sausage - i didn't this time , gives great flavor
1 clove minced garlic is great also, to cook in with the sausage

Steps:

  • 1. Preheat your oven to 350 degree F. Spray a 3 quart casserole dish with nonstick cooking spray or grease. Set aside. Saute the sausage in 1 tsp oil just till it starts to get some caramelization as it's already cooked. If using raw sausage cook until no longer pink, and starting to brown. Drain if needed.
  • 2. In a large saucepan, bring the 4 cups water to a boil. Stir in the grits and salt, reduce heat to medium. Cook for 2 1/2 - 5 minutes; stirring frequently, until nice and creamy.
  • 3. Stir in the cheddar cheese and butter until cheese is melted.
  • 4. Now, stir in the beaten eggs, milk and sausage. Pour into prepared baking dish.
  • 5. Sprinkle evenly with Monterey Jack cheese. Place in oven and bake for 25 - 30 minutes or until set and cheese is turning golden.
  • 6. Enjoy!

1 pkg Eckrich Smoked Sausage, cut into bite-size pcs
2 cups cooked rice
1/2 cup chopped onion
1/2 cup chopped red pepper
1 cup frozen peas, thawed and drained
16 oz processed cheese sauce
1 cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 375 deg. Lightly butter a 9" square baking dish or 2 qt casserole dish. Combine rice, onion, red pepper, peas and cheese sauce. Spoon mixture into the baking dish. Evenly place sausage pieces into the mixture and top with shredded cheese. Bake 20 to 30 minutes or until bubbly and browned on top.

1 (14 1/2 ounce) can of red gold diced tomatoes, juice and all
1 (14 1/2 ounce) can of red gold tomato sauce
2 cups egg noodles (I use the no-yolk type)
1 package smoked sausage, cut into bite size pieces
1/4 cup margarine or 1/4 cup butter

Steps:

  • In a mixing bowl, combine the first three ingredients.
  • Place in buttered baking dish.
  • Place cut sausage on top of noodles and tomato mixture.
  • Cut butter or margarine into small pats and dot casserole.
  • Bake at 350 for 25-30 minutes or until sausage is browned and casserole is bubbly.

Number Of Ingredients 10

3 c idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb.
4 Tbsp butter
4 Tbsp flour
2 c milk
1/2 tsp salt
1/4 tsp pepper
1/2 lb velveeta cheese, diced
1/2 c sharp cheddar cheese, shredded
1 lb smoked sausage
1/8 tsp paprika

Steps:

  • 1. Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • 2. Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • 3. Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat (stir constantly)until warm, melted and smooth.
  • 4. Pour cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese and paprika evenly over the top.
  • 5. Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
