SMOKED SALMON TORTELLINI WITH BECHAMEL SAUCE



Smoked Salmon Tortellini with Bechamel Sauce image

I derived this recipe after tasting something similar at a restaurant. It is wonderfully rich and filling.

Number Of Ingredients 12

2 (9 ounce) packages cheese tortellini
1 ¼ cups milk
¼ small onion
1 bay leaf
2 whole cloves
1 pinch ground nutmeg
¼ cup butter
1 red bell pepper, chopped
½ pound fresh asparagus, trimmed and quartered
10 ounces fresh mushrooms, sliced
1 pound smoked salmon, chopped
2 tablespoons all-purpose flour

Steps:

  • Bring a large pot of water to a boil, and cook the tortellini 7 to 8 minutes, or until al dente. Drain, and transfer to a large bowl.
  • In a saucepan over low heat, simmer the milk, onion, bay leaf, cloves, and nutmeg about 15 minutes. Remove from heat, and discard the onion, bay leaf, and cloves.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir in the red bell pepper and asparagus, and cook about 3 minutes. Stir in the mushrooms, and continue cooking until tender. Mix in the smoked salmon, reduce heat to low, and cook until heated through.
  • Melt the remaining 2 tablespoons butter in a saucepan over medium heat, and slowly whisk in the flour until smooth. Thoroughly blend in the warmed milk. Stir into the skillet with the salmon mixture.
  • Spoon the salmon and sauce mixture into the bowl with the cooked pasta, and toss to coat.

This is a super-easy salad with knock-em-dead flavours! Great for brunch or a light meal. This makes 4 appetizer or 'salad' servings, but it can serve 2 as a main course.

1/4 cup sour cream
1/4 cup olive oil
3 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
1 tablespoon dry white wine
1/4 teaspoon pepper
1 (1/2 lb) package fresh cheese tortellini
1 tablespoon olive oil
1/2 cup thinly sliced red onion
1/4 cup chopped green onion top
1/4 cup chopped fresh dill
2 tablespoons drained capers
4 ounces smoked salmon, cut into thin strips

Steps:

  • Whisk sour cream, oil, juice, Dijon, wine and pepper together.
  • Chill until ready to use.
  • Cook tortellini until al dente; drain.
  • Transfer to bowl.
  • Add 1 tablespoon of oil and toss to coat.
  • Add onion, onion tops, dill and capers; toss again.
  • Cool.
  • Add salmon and enough dressing to coat and toss well.
  • (can be made 8 hours ahead; cover and chill.).

1 lb smoked salmon
1 cup edamame or sugar snap peas, shelled
Sauce:
1/2 cup butter
1/2 cup milk
1/2 cup grated parmesan cheese
1/4 cup grated mozerella cheese
1/4 dry white wine
1 tbsp sun dried tomatoes, pureed
garlic oil to taste
1 tbsp dried dill (optional)
pepper to taste
1 pkg tortellini
salted water

Steps:

  • Preparation time: 20 minutes (less time if you purchase grated cheese) Cooking time: 15 minutes Flake the salmon and set aside in a large mixing bowl. In a 1 quart sauce pan, melt the butter over medium low heat, add milk, wine, tomatoes, dill, garlic oil and pepper. Stir constantly until the cheese is melted and some of the liquid is evaporated. The consistancy should be creamy (about 10 minutes). In the mean time, in a 2 quart sauce pan, bring 8 cups of salted water to boil and add tortellini. Cook according to package instructions until adente. During the last 1 minute of cooking time, add the edamame peas. When it is done cooking, remove from heat and allow to sit in the hot water for 2 minutes and then drain well. Combine the sauce with the tortellini and salmon and toss gently.

1 pkg cream cheese, cubed (8 oz)
1/3 c milk
1/2 c chopped cucumber, seeded and drained
3 oz smoked salmon, cut into thin strips
2 Tbsp chopped fresh dill, or 1/2 tsp. dill weed (dried)
1 pkg frozen cheese tortellini, cooked and drained
chopped parsley or green onions, if desired.

Steps:

  • 1. Cook tortellini per package instructions; drain. Meanwhile, stir cream cheese and milk in medium saucepan on low heat until smooth. Add cucumbers, salmon and dill; heat thoroughly.
  • 2. Toss with hot tortellini. Garnish with parsley or chopped green onion, if desired.
