A delicious, Spanish-inspired dish, using vitamin-packed kale and borlotti beans in a lovely smoky sauce.

1 tablespoon olive oil
1 pound skinless chicken thighs
1 red onion, finely diced
1 clove garlic, crushed
½ cup dry sherry
1 teaspoon smoked paprika
1 (15 ounce) can borlotti (cranberry) beans, drained
1 (14.5 ounce) can chopped tomatoes
1 cube chicken bouillon
4 ounces chopped kale
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Add chicken thighs, onion, and garlic. Cook and stir until starting to brown, about 10 minutes. Add sherry and smoked paprika; cook and stir until mostly reduced, about 5 minutes.
  • Stir borlotti beans, tomatoes, and chicken bouillon cube into the pot. Cook and stir until flavors combine, about 10 minutes. Stir in kale; simmer until thickened into a stew consistency, about 20 minutes. Season with salt and black pepper.

Number Of Ingredients 5

2 Leeks, 5 celery stalks, salt and pepper, 1/2 tsp chili flakes, 1 tsp garlic
10 chicken thighs 1 cup flour, 2 tbsp smoked paprika, 1 tbsp of each salt and pepper
1 cup white wine, 2-3 cups chicken stock
2 cups of torn swish chard
10 baby potatoes

Steps:

  • Saute in large frying pan, leeks, celery, salt and pepper, add chili flakes, garlic til soft and then set aside. Mix flour mixture and coat chicken thighs and saute in same frying pan with butter and oil until golden brown. Add leek mixture back in. Add 1 cup of white wine. Steam alcohol off and add 2 tbsp of sour cream, 1 tsp of dijon mustard, and 10 small baby potatoes cut in half and 2 cups of chicken stock or enough to almost cover chicken and potatoes. Bake in oven at 350 for 1 hour. Toss in a hand full of fresh swish chard. Serve with sauerkraut on top and toasted baguette on side.

1 red onion, chopped
2 red bell peppers, chopped
2 cloves minced garlic
1 cup sliced fresh button mushrooms
1 lb. boneless, skinless, chicken breasts cut into 1 in. cubes
2 Tbsp. smoked sweet paprika, divided
1 can (14.5 oz.) diced tomatoes undrained
1 can (15oz.) rinsed and drained cannelloni beans
1 can (14.5 oz.) low sodium chicken broth
2 tsp. dried oregano leaves
Salt & pepper to taste

Steps:

  • 1. Heat olive oil over med heat 2. Add onion, peppers, and garlic and cook stirring freq. 3 min. 3. Add mushrooms & cook stirring freq. 2 min. 4. Add chicken and sprinkle with 1tbsp. Paprika 5. Cook stirring freq. 3 min. 6. Stir in remaining paprika cook 1 min., stirring freq. 7. Add tomatoes, beans, broth, oregano, salt and pepper, stir well and heat til boiling 8. Reduce heat and simmer, stirring occasionally, 10-15 min or until chicken is cooked and veg. tender.
