This is my own spread. Here in Florida there is a wide variety of these served at restaurants, but this beats anyone else's, so it's been said. Enjoy! It is commonly served with crackers.

1 whole large smoked mullet
2 (12 ounce) containers whipped cream cheese, softened
1 (5 ounce) bottle sweet hot sauce

Steps:

  • Pick the meat off of bones, discard any dark meat (it has a nasty flavor), and make sure you chop the meat up fine afterwards.
  • In a small mixing bowl combine the meat, cream cheese and hot sauce. Mash the mixture well. Refrigerate overnight.

Number Of Ingredients 12

3 cups Smoked mullet (can order ahead from Ward's Seafood)
1 cup Hellman's real Mayonnaise
1/2 cup Celery, diced
1/2 cup Green onions, diced
2/3 cup Red bell peppers, diced
2 tablespoons Lea & Perrins sauce
2 dashes Soy sauce - adjust to taste
1 dash Garlic powder - adjust to taste
1 pinch Cayenne pepper - adjust to taste
3 dashes Crystal brand hot sauce - adjust to taste
1 pinch Black pepper
1 tablespoon Fresh lemon juice (1/2 lemon)

Steps:

  • 1) Mix all ingredients, chill over night
  • 2) Before serving, you might have to add 2-3 tablespoons of mayonnaise if spread seems too dry
  • 3) Taste, and adjust spices as necessary
  • 4) Plate, sprinkle with paprika for color, garnish with lemon wedges and parsley
  • 5) Serve with assorted crackers
