This is a great grilled sandwich from The Comfort Diner, New York, NY. It can also be made as an appetizer by using cocktail rye, open-faced and baked at 400 until the cheese is melted.

2 tablespoons Dijon mustard
8 slices marbled rye bread
8 ounces smoked gouda cheese (2 cups grated)
8 ounces black forest ham
1 tablespoon butter, softened slightly

Steps:

  • Spread 1/2 tablespoon of mustard onto each of 4 slices of marble rye bread.
  • Add 2 ounces (1/2 cup) of smoked Gouda, followed by 2 ounces of black forest ham.
  • Cover each prepared bread slice and evenly butter the top of each sandwich.
  • Place each sandwich butter side down in a frying pan over medium heat.
  • While the first side is grilling butter second side of bread.
  • Cook until golden and crusty, about 3-4 minutes.
  • Carefully turn and cook until second side is golden, about 2-3 minutes more.

Smoked gouda, while having a wonderful and inimitable flavor, has trouble achieving that gooey, iconic cheesy stretch that makes grilled cheese sandwiches so pleasing. By adding a partner cheese with a less assertive flavor and higher melting property, like deli muenster, you can achieve both melting and flavor perfection.

Eight 1/3- to 1/2-inch-thick slices Pullman bread
4 ounces smoked gouda, very thinly sliced with a cheese slicer
4 slices muenster cheese (about 4 ounces)
1 medium jarred roasted red pepper, drained, dried and thinly sliced
2 cups baby arugula
6 tablespoons unsalted butter, softened

Steps:

  • Lay out 4 slices of the bread on a work surface. Layer each with some of the smoked gouda, 1 slice of the muenster, a thin layer of sliced red pepper (about 2 tablespoons), 1/2 cup of the baby arugula and another layer of smoked gouda. Close the sandwiches with the remaining bread. Thinly and evenly spread the butter on both sides of the bread using about 1 1/2 tablespoons of the butter for each sandwich.
  • Place 2 sandwiches into a medium nonstick skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches.

1 tablespoon extra-virgin olive oil
1 large onion, thinly sliced
Unsalted butter, room temperature
4 1/3-inch-thick slices country white bread or sourdough bread
4 ounces thinly sliced smoked ham, divided
3 ounces Gouda cheese, thinly sliced, divided
2 large handfuls frisée, torn into bite-size pieces (about 1 cup), divided

Steps:

  • Heat oil in large nonstick skillet over medium heat. Add onion; sauté 5 minutes. Reduce heat to medium-low; cover and cook until onion is very tender and golden, stirring frequently, about 25 minutes longer. Season with salt and pepper. Cool slightly.
  • Butter 2 bread slices. Place bread, buttered side down, on platter. Divide onion, ham, cheese, and frisée between bread slices. Top each with another bread slice; butter top slices.

2 tablespoons butter
1 onion, thinly sliced
1 tablespoon golden brown sugar
1/4 teaspoon white wine vinegar
1 1/2 cups smoked gouda cheese, grated
4 (10 inch) flour tortillas, 10-inch diameter
2 ounces prosciutto, chopped
2 tablespoons butter, melted

Steps:

  • Melt 2 tablespoons butter in heavy medium skillet over medium heat. Add onion, brown sugar and vinegar; saute until onion is golden brown, stirring frequently, about 25 minutes. Remove from heat. Cool to room temperature.
  • Preheat oven to 350ºF. Sprinkle cheese over half of each tortilla, dividing equally. Sprinkle prosciutto and sauteed onion over cheese. Season with pepper. Fold other half of each tortilla over cheese mixture. Brush tortillas with some of melted butter. Brush heavy large skillet with some of melted butter. Place over medium-high heat. 1 large egg, lightly beaten
2 tablespoons chopped fresh chives
1 tablespoon minced shallot
1 tablespoon mayonnaise
2 teaspoons honey mustard
1 teaspoon seasoned pepper
1-1/4 cups shredded smoked Gouda cheese
1/2 cup finely chopped fully cooked smoked ham
2 tablespoons chopped dried cranberries
24 wonton wrappers
Cooking spray
Additional minced fresh chives, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine first six ingredients. Stir in cheese, ham and cranberries. Spritz one side of each wonton wrapper with cooking spray. Gently press into miniature muffin cups, coated side up. Spoon 1 tablespoon cheese mixture into each., Bake 10-14 minutes or until crusts are golden brown. Sprinkle with fresh chives if desired; serve warm. Refrigerate leftovers.
