Time 2h50m

Yield 6 servings

Number Of Ingredients 25

2 teaspoons cayenne pepper
Big pinch of kosher salt
Pinch of granulated sugar
Juice of 2 limes
2 pounds chicken wings
1/2 cup packed light brown sugar
2 tablespoons kosher salt
2 tablespoons granulated sugar
1 tablespoon butcher grind black pepper
1 tablespoon Hungarian paprika
1 tablespoon chili powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne
Buttermilk Herb Dipping Sauce, recipe follows, for serving
1 cup full-fat buttermilk
1/2 cup sour cream
1/4 cup finely grated Parmesan or pecorino cheese
1/4 cup finely chopped fresh parsley
1/4 cup finely sliced chives
1/4 cup finely chopped fresh dill
1 clove garlic, grated
Zest of 1 lemon and juice of 1/2 lemon
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: Combine the cayenne, salt, granulated sugar and lime juice in a large bowl, then add the wings, tossing to coat. Marinate, refrigerated, for at least 2 hours and up to overnight. Allow the wings to come to room temperature for 30 minutes before cooking.
  • Soak 2 cups applewood chips in water for 1 hour
  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • For the Memphis dry rub: Combine the brown sugar, salt, granulated sugar, black pepper, paprika, chili powder, garlic powder, onion powder, cumin and cayenne in a small bowl. Any rub that is not used can be stored in a mason jar for up to 1 month.
  • Drain the soaked wood chips and throw them directly on top of the coals.
  • Remove the wings from the marinade, then place on the grate on the indirect side of the grill. Cover the grill with a lid and allow the wings to smoke for 25 to 30 minutes.
  • To finish, move the wings to the hot side of the grill to char, about 2 minutes per side. Remove the wings from the grill and add to a mixing bowl. Season liberally with the rub and toss to coat. Serve with Buttermilk Herb Dipping Sauce.
  • In a mixing bowl, whisk together the buttermilk, sour cream, cheese, parsley, chives, dill, garlic, lemon zest and juice and salt and pepper to taste. This makes a great salad dressing too--just thin it out with some more buttermilk!

SMOKED CHICKEN WINGS

CRISPY, SMOKED CHICKEN WINGS AND LEGS, CILANTRO, LIME AND SRIRACHA AND A CELERY AND RADISH SALAD

Crispy, Smoked Chicken Wings and Legs, Cilantro, Lime and Sriracha and a Celery and Radish Salad image

Provided by Michael Symon : Food Network

Time 1h5m

Yield 4 servings

Number Of Ingredients 19

8 chicken wings
8 chicken legs
Big pinch kosher salt
Pinch sugar
1 tablespoon smoked paprika
Juice of 2 limes
Extra-virgin olive oil
4 cups (1 quart) duck fat
1/4 cup sriracha, plus more, if desired
Splash apple cider vinegar
1 tablespoon honey, plus more if desired
1/4 cup unsalted butter
Juice of 1 lime
Pinch salt
3 radishes, trimmed and thinly sliced
1 stalk celery, thinly sliced on the bias
1 small bunch fresh cilantro, leaves picked
Extra-virgin olive oil
1/4 cup crumbled Maytag blue cheese

Steps:

  • Place a deep hotel pan or roasting pan over medium-high heat. Place 2 handfuls of soaked Applewood chips into the bottom of the pan and top with a perforated hotel pan or set a cooling rack over the roasting pan. Allow the wood chips to smoke.
  • For the marinade: Combine the kosher salt, sugar, paprika, juice of 2 limes and drizzle of extra-virgin olive oil into a bowl. Add the chicken wings and legs and toss to combine.
  • Place the legs and wings into the perforated hotel pan or cooling rack set over the smoking chips and cover the pan with foil to smoke about 3 to 5 minutes. This will impart flavor, not cook the chicken.
  • Meanwhile, place a cast iron pan over medium heat and add 4 cups duck fat and using a deep fry thermometer to monitor the temperature, allow the fat to heat to about 320 degrees F.
  • For the wing sauce: Place a medium saucepan over medium heat and add the sriracha, apple cider vinegar, and honey (or to taste, depending on preference of sweetness versus spicy and vice versa) and place over medium heat to combine. Once the sauce is heated, taste and season with salt.
  • When the fat is heated and the wings and legs have smoked, add the legs to the heated duck fat and cook for about 4 minutes, being careful of any of the fat spattering. Once they crisp and brown, flip the legs and add the wings. Be careful of splatter when adding the wings and cook until brown and crisp, about 2 minutes. Flip the wings to finish cooking, about 2 more minutes or until caramelized and crispy on all sides. If desired, use a meat thermometer and make sure the temperature reaches 160 degrees F.
  • When ready, remove the legs and wings and place into the heated hot sauce and turn to coat. Add 1/4 cup unsalted butter and place into a bowl and stir to coat. Taste the sauce and season with salt and juice of 1 lime and a touch of honey, if needed or desired. Toss to coat evenly and set aside.
  • Salad: To a medium bowl add the radishes, celery, salt, cilantro, drizzle of extra-virgin olive oil, and blue cheese crumbles and toss to combine.
  • For each serving, plate 2 wings and 2 legs and top with some of the celery-radish salad. Serve any remaining hot sauce on the side.

SMOKED JERK CHICKEN WINGS WITH HONEY-TAMARIND DIPPING SAUCE

Smoked Jerk Chicken Wings with Honey-Tamarind Dipping Sauce image

This fragrant and spicy jerk marinade gives an instant shot of Jamaican flavor to these smoky wings. Pimento wood, which comes from the allspice tree, provides the unique smoke flavor of Jamaican jerk chicken. Hard to find in the US, the unique flavor of the wood really has no exact substitute but apple and pecan wood are often suggested as an acceptable substitute. Stay away from stronger woods such as hickory or mesquite as those woods will overpower the flavor of the jerk marinade. The tart tamarind melts into mellow honey smooth dipping sauce making these an instant tailgating classic.

Smoked Jerk Chicken Wings:
2 pounds chicken wings, split, wing tips removed
1/4 cup canola oil

1 tablespoon ground allspice
2 teaspoons ground cascabel chile
2 teaspoons ground black pepper
2 teaspoons kosher salt
1 cup orange juice
1/4 cup clover honey
1/4 cup ketchup
1/4 cup tamarind concentrate
1-inch piece ginger, thinly sliced
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper

HICKORY-SMOKED JERK CHICKEN WINGS WITH PICKLED PINEAPPLE

Hickory-Smoked Jerk Chicken Wings with Pickled Pineapple image

Dale Talde doesn't specialize in barbecue, but he does love Miami, so participating in this event was a no-brainer. "There are dudes who take this stuff way seriously," Dale says. "I wasn't trying to win." Instead, he set out to create a dish that spoke to the climate in Miami: smoked jerk chicken wings, seared on the grill at the last minute, and a side of pickled pineapple. "I wanted to foil the jerk spice with something refreshing," he says. "You don't need the pineapple, but it's awesome!"

Provided by Food Network

Time 4h

Yield 4 to 6 servings

Number Of Ingredients 22

1 1/2 cups chopped fresh cilantro
1/2 cup fresh thyme
1 small Vidalia onion, finely diced
5 cloves garlic, roughly chopped
2 habanero chile peppers, roughly chopped
1/3 cup fresh lime juice (from about 4 limes)
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground cumin
Kosher salt
4 pounds chicken wings, split at the joint, tips removed
1 cup rice wine vinegar
1/2 cup sugar
1 1/2 cups fresh lime juice (from about 12 limes)
1 1/2 cups fresh orange juice (from about 6 oranges)
1/2 cup fresh yuzu juice (or use another citrus juice)
1/2 pineapple, peeled, cored and julienned
1/2 Vidalia onion, thinly sliced
3 roasted red peppers, julienned
2 cups packed fresh cilantro
2 cups hickory wood chips

Steps:

  • Make the marinade for the wings: Puree the cilantro, thyme, onion, garlic, chiles, lime juice, cinnamon, nutmeg, allspice, cumin and 2 teaspoons salt in a blender until smooth. Put the chicken wings in a large bowl and pour in the marinade. Cover and refrigerate overnight.
  • Make the pickled pineapple: Combine the vinegar and sugar in a large saucepan over high heat and bring to a boil. Cook until the sugar is dissolved, about 2 minutes. Remove from the heat and stir in the lime, orange and yuzu juices. Add the pineapple, onion, roasted red peppers and 2 tablespoons salt. Let sit at room temperature until the pineapple is completely cool and tender, at least 3 hours. Add the cilantro.
  • Make the wings: Soak the wood chips in water at least 30 minutes; drain. Heat a charcoal grill and prepare for indirect grilling: Bank the coals to one side, leaving the other side empty. Set up a drip pan on the empty side. Let the fire burn down to a very low heat (165 degrees F to 175 degrees F). Scatter some of the wood chips over the hot coals. Remove the wings from the marinade (no need to wipe them off) and arrange on the cooler side of the grill, over the drip pan. Cover the grill and adjust the vents to maintain a low heat. Cook 2 hours, adding more wood chips halfway through and more charcoal as needed.
  • Remove the wings from the grill. Spread out the coals and bring the grill temperature up to medium high (325 degrees F to 350 degrees F). Grill the wings over direct heat, covered and turning often, until the meat easily pulls away from the bone, 20 to 25 minutes. Serve with the pickled pineapple.

  • Liberally coat chicken wings with about 2 tablespoons Cajun seasoning.
  • Place wings directly on the grate in the smoker or in an aluminum pan with holes to allow airflow. Add more wood chips as needed to continue smoke. Smoke wings for 2 hours.

2 tablespoons soy sauce
1 tablespoon dark brown sugar
1 tablespoon palm sugar
1 teaspoon dried Thai chilies, ground
1 tablespoon cilantro, roughly chopped, plus more for garnish
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground black pepper
1 tablespoon kosher salt
1 tablespoon chopped lemongrass
1 tablespoon coriander seeds
1/2 tablespoon granulated sugar
4 pieces star anise
2 cloves garlic, crushed
2 kaffir lime leaves, chopped
30 jumbo chicken wings
1/2 cup lime juice
1/2 cup ground black pepper
1/2 cup cafe black pepper
1 1/2 tablespoons Jamaican yellow curry powder
1/2 tablespoon Thai fish sauce
Kosher salt

Lime halves, for serving

Add the chicken wings and enough water to fully cover. Refrigerate overnight.
  • Transfer the chicken wings to hotel pans in a single layer skin-side up, making sure to remove as many seeds or herbs from the marinade as possible. Refrigerate uncovered 1 to 3 hours so the chicken wings lightly dry and build a pellicle.

SMOKED CHICKEN WINGS

Smoked Chicken Wings image

If you have an offset smoker, even a leaky old fellow with rust spots and broken wheels, this recipe will provide one of its finest uses. Smoking chicken wings for 15 minutes or so before grilling or roasting them under thin bastings of barbecue sauce yields meat that is smoky but not aggressively so, deeply flavorful, with a marvelous crust. But you don't need a smoker! Simply set up your grill for indirect cooking, with a fairly small fire, and use soaked wood chips to create a plume of smoke. Put the wings on the cool side of the grill, then cover it and allow the smoke to perform its magic. You'll get wings that are pale gold, the color of chamois that you can cook into perfection over the direct heat of the fire.

Yield 4 to 6 servings

Number Of Ingredients 3

16 to 20 small to medium chicken wings, tips removed (save them for stock)
Kosher salt and ground black pepper, to taste
1 cup barbecue sauce (see recipe)

Steps:

  • Build a small fire in your grill, leaving one side free of coals. When coals are covered with gray ash and the temperature is medium (you can hold your hand 5 inches above the coals for 5 to 7 seconds), you are ready to cook. For a gas grill, turn one of the burners down to low or off, lower cover and heat for 15 minutes.
  • Place 2 or 3 handfuls of water-soaked wood chips - like apple, cherry or hickory - onto the coals. For a gas grill, place 2 or 3 handfuls of soaked wood chips onto two large pieces of aluminum foil, then fold the foil over to create a package for the wood. Pierce the top of that package a few times with a fork, then place it on top of the hottest burner on the grill.
  • Sprinkle the chicken wings generously with salt and pepper, then place them on the unheated side of the grill, opposite the wood chips. By this point, the chips should be starting to give off smoke. Cover the grill and allow the chicken to smoke for approximately 15 to 20 minutes.
  • Uncover the grill to release the smoke. At this point, you can move the chicken so it grills directly over the dying charcoal; cook the chicken over a low flame on a gas grill; roast it in a 425-degree oven; or cook it under the broiler until the chicken is crisp and cooked through, approximately 10 to 15 minutes. However you do it, baste the chicken occasionally with barbecue sauce and turn it often. Remove the chicken to a warmed platter and serve.

SMOKED CHICKEN WINGS WITH CAROLINA BBQ SAUCE AND GREEN ONION AND FETA DIP

Smoked Chicken Wings with Carolina BBQ Sauce and Green Onion and Feta Dip image

Provided by Amanda Freitag

Categories     main-dish

Time 1h50m

Yield 4 servings

Number Of Ingredients 20

24 chicken wings, split at the joint, wing tips removed and reserved for another use
1 tablespoon kosher salt
1 tablespoon coarsely ground pepper
Vegetable oil, for deep frying
1 cup sour cream
1/2 cup chopped green onions
1/2 cup crumbled feta cheese
1/4 cup buttermilk
2 tablespoons minced parsley
1 clove garlic, finely minced
1/2 teaspoon kosher salt
2 teaspoons ground black pepper
1 1/2 cups apple cider vinegar
1/3 cup dark brown sugar
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
2 teaspoons crushed red pepper flakes
1 teaspoon kosher salt
1 teaspoon ground black pepper
Carrot and celery sticks, for serving

Steps:

  • For the wings: Heat a smoker to 250 degrees F. Toss the wing pieces with the salt and pepper and spread them on the middle grate of the smoker. Smoke them for 20 minutes, flip, and smoke for an additional 20 minutes. Remove the wings from the smoker and set aside.
  • While the wings smoke, make the BBQ sauce: Put the vinegar, brown sugar, ketchup, Worcestershire sauce, red pepper flakes, salt and pepper in a small saucepan and bring to a boil over medium-high heat. Reduce the heat and simmer the sauce until it is reduced by 1/3, about 20 minutes. Cool to room temperature.
  • While the wings smoke, make the dip: Combine the sour cream, green onions, feta, buttermilk, parsley, garlic, salt and pepper in a small bowl. Set aside.
  • To finish the wings: Heat about 4 inches of oil to 375 degrees F in a large, wide heavy-bottomed pot over medium heat. Working in batches, fry the wings just to crisp and reheat them, about 2 minutes. Using a slotted spoon, transfer the cooked wings to a bowl. When they are all fried, toss them with the BBQ sauce, and then serve with the green onion dip, carrots and celery sticks.

STOVE TOP SMOKER SMOKED CHICKEN WINGS

Stove Top Smoker Smoked Chicken Wings image

Cut the chicken wings into two parts, discarding the tip, which has no meat. The wings will absorb more flavor and are easier to smoke, and more fun to eat. From the cookbook, "Smokin"

Time 50m

Yield 4 serving(s)

Number Of Ingredients 6

1 1/2 lbs chicken wings, will fit on the smoker rack at one time (about 16 pieces)
2 tablespoons wood chips
kosher salt
fresh ground black pepper
1 1/2 tablespoons unsalted butter
hot red pepper sauce

Steps:

  • Chicken wings can take more assertive woods, like hickory or mesquite, but also work well.
  • with mellower choices like alder or cherry.
  • Trim the wings into sections, discarding the tips.
  • Season 1 1/2 pounds of wings with 1 1/2 teaspoons kosher salt and a generous 1/4 teaspoon freshly ground black pepper.
  • Smoke over medium heat until an instant-read thermometer inserted into the thickest part.
  • of the drummie registers 170ºF, 20-25 minutes from the time the smoker lid is closed. Check for doneness after 20 minutes into cooking time.
  • After closing the lid of the smoker, slice about 1 1/2 tablespoons butter into a heatproof mixing bowl. Set the bowl on top of the smoker to melt the butter as the wings smoke.
  • When the wings are done, toss them in the butter, seasoning them with as much of your favorite hot red pepper sauce as you'd like. That, and a lot of napkins is all you need-skip the celery/blue cheese thing.

SMOKED CHICKEN WINGS

Smoked Chicken Wings image

Fox Bros. Bar-B-Q in Atlanta, GA, sells its own barbecue sauce, which you can order online, but any store-bought sauce will work for this smoked chicken wings recipe too.

Categories     Bon Appétit     Smoker     Chicken     Sauce     Grill/Barbecue     Atlanta     Summer     Dinner

Yield 4 servings

Number Of Ingredients 17

Wings
3 tablespoons paprika
4 teaspoons kosher salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon chipotle chile powder
1 teaspoon mustard powder
4 pounds large chicken wings without tips (16-18), flats and drumettes separated
Barbecue Sauce
2 tablespoons unsalted butter
1/2 cup store-bought barbecue sauce
1/4 cup hot sauce (preferably Texas Pete)
1 tablespoon mild-flavored (light) molasses
Kosher salt
Special Equipment
A chimney starter if using a charcoal grill, or a smoker box if using a gas grill; hardwood chunks or chips

Steps:

  • Wings
  • If using a charcoal grill, fill chimney starter with charcoal; light and let burn until coals are covered with a thin layer of ash. Pour contents of chimney onto one side of grill. Arrange 3 chunks of wood or a handful of chips next to, not on top of, coals. (Placing them on top of the coals will cause them to burn too quickly; you want the wood to catch slowly and smolder.) Place grate on grill and cover grill, positioning vent on lid as far from heat source as possible. (This will help draw the smoke up and over the meat as it rises.)
  • If using a gas grill, prepare grill for medium-low indirect heat, leaving one or two burners off. Place wood chips in smoker box and set over direct heat; cover grill.
  • Stick an ovenproof probe thermometer through top vent if your grill has one. Heat until thermometer registers around 275°F, adjusting vents on bottom and top of grill or control knobs as needed to maintain temperature. Get any high-heat grilling done while you wait for the temperature to drop.
  • Meanwhile, mix paprika, salt, chili powder, garlic powder, onion powder, chipotle chile powder, and mustard powder in a small bowl. Arrange wings on a large rimmed baking sheet and sprinkle half of rub over top. Turn over and sprinkle remaining rub over other side. Let sit at room temperature until grill is ready.
  • Place wings on grill over indirect heat, leaving a small gap between each piece to allow smoke to circulate. Smoke wings, replenishing wood as needed (and adding a coal or two of charcoal as needed), until deeply browned and an instant-read thermometer inserted into the thickest part of each piece registers 165°F, 1 1/2-2 hours (as long as smoke is circulating well in grill, you shouldn't need to turn wings).
  • Barbecue Sauce
  • Just before wings are done, melt butter in a small saucepan over medium heat. Add barbecue sauce, hot sauce, and molasses and cook, stirring, until heated through; season with salt. Toss wings in sauce in a large bowl just before serving.
