Potatoes get awesome baked potato flavor from a quick trip to the microwave. After that, they're smashed and loaded into a soup with bacon and cheese.

1 lb. baking potato (about 3), cubed
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup milk
3 slices OSCAR MAYER Center Cut Bacon, cooked, crumbled and divided
1 cup KRAFT Shredded Three Cheese with a TOUCH OF PHILADELPHIA, divided
3 Tbsp. snipped fresh chives, divided
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Microwave potatoes in large microwaveable bowl on HIGH 5 min., stirring after 2-1/2 min. Stir in broth and milk. Microwave 10 min., stirring after 5 min. Carefully smash potatoes with potato masher.
  • Reserve 2 Tbsp. each bacon and cheese and 1 Tbsp. chives for topping. Stir remaining bacon, cheese and chives into soup.
  • Serve soup topped with reserved bacon, cheese, chives and sour cream.

3 ½ pounds potatoes, peeled and cut into 3/4-inch cubes
½ cup chopped yellow or red sweet pepper
1 ½ teaspoons bottled roasted garlic
½ teaspoon ground black pepper
4 ½ cups chicken broth
½ cup whipping cream. half-and-half or light cream
1 cup shredded Cheddar cheese
½ cup thinly sliced green onions
1 tablespoon Chopped green onions, for garnish
1 Reynolds® Slow Cooker Liner

Steps:

  • Line a 5- to 6-quart slow cooker with a Reynolds® Slow Cooker Liner. Open slow cooker liner and place it inside a slow cooker bowl. Fit liner snugly against the bottom and sides of bowl; pull top of liner over rim of bowl.
  • Combine potatoes, sweet pepper, garlic and black pepper in the slow cooker. Pour broth over all.
  • Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
  • Carefully remove lid to allow steam to escape. Mash potatoes slightly with a potato masher. Stir in whipping cream, Cheddar cheese and 1/2 cup thinly sliced green onions. If desired, top individual servings with additional sliced green onions.
  • Do not lift or transport liner with food inside. Cool slow cooker completely, spoon out excess liquid, remove liner and toss.

3 1/2 cups nonfat milk
3 tablespoons all-purpose flour
1 tablespoon canola oil or 1 tablespoon butter
1 large onion, finely chopped (1 cup)
4 medium potatoes, cut into 1/4 inch pieces (1 1/2 pounds)
1 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground red pepper (cayenne)
1 1/2 cups shredded reduced-fat sharp cheddar cheese (6 ounces)
1/3 cup reduced-fat sour cream
8 medium green onions, sliced (1/2 cup)

Steps:

  • Beat 1/2 cup of the milk and flour with a wire whisk until smooth; set aside.
  • Heat oil in 4-quart Dutch oven over medium heat.
  • Cook onion in oil about 2 minutes, stirring occasionally, until tender.
  • Increase heat to high; stir in remaining 3 cups milk.
