There have been so many nights when I craved lasagna but didn't want to get stuck with the usual leftovers. If you've felt the same way, this small-batch version solves all your problems! It's easy enough to throw together on a weeknight and is the perfect size for two (or three) servings.

1 tablespoon extra-virgin olive oil
1/2 small yellow onion, finely chopped (about 1/3 cup)
1 clove garlic, minced
Kosher salt and freshly ground black pepper
8 ounces ground beef
1/2 teaspoon dried oregano
One (12-ounce) jar marinara sauce
1 large egg
1 cup (8 ounces) ricotta
3 tablespoons chopped fresh parsley
3 tablespoons chopped fresh basil
1 cup shredded mozzarella
1/2 cup plus 2 tablespoons grated Parmesan
5 sheets no-boil lasagna noodles

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the olive oil in a medium saucepan over medium-high heat. Add the onion, garlic and 1/2 teaspoon salt and saute until the onion is translucent and softened, stirring occasionally, about 4 minutes. Add the ground beef and use a wooden spoon to break it into pieces. Cook, stirring occasionally, until no longer pink, 4 to 6 minutes. Add the oregano and cook 1 minute. Stir in the marinara and let simmer while you make the ricotta mixture.
  • Lightly beat the egg in a medium bowl. Stir in the ricotta, parsley, basil, 1/2 cup mozzarella and 1/2 cup Parmesan until combined.
  • Begin to layer the lasagna, spread 2 tablespoons marinara sauce evenly over the bottom of an 8 1/2-by-4 1/2-inch loaf pan. Cover with 1 lasagna noodle. Spread on 1/3 cup of the ricotta mixture followed by 1/2 cup marinara sauce. Top with another noodle. Repeat layering 4 more times, ending with the sauce. Top the final layer with the remaining 1/2 cup mozzarella and 2 tablespoons Parmesan. Bake until the noodles are tender and the cheese is melted and bubbly, about 30 minutes. Let stand 10 minutes before serving.

DADS PERFECT SAUCE (WILL MAKE MORE THAN USED IN LASAGNA)
3/4 lb ground beef
1/2 lb ground turkey sausage, or sweet sausage
1/2 c chopped onion
2 clove smashed garlic with peel off
1 can(s) crushed tomatoes (28oz)
1 can(s) tomato paste (12oz)
1 can(s) tomato sauce (15oz)
1/2 c water
2 Tbsp sugar
1 1/2 tsp dried basil leaves
1/2 tsp fennel seeds
1 tsp italian seasoning
3/4 Tbsp salt
1/4 tsp pepper
1 tsp dried parsley
CHEESE MIX
8 oz ricotta cheese
1 large egg
1/4 tsp salt
1 tsp dried parsley
ADDITIONAL INGREDIENTS
6 lasagna noodles, rinsed with warm water
1 pkg mozzarella cheese/provolone cheese mix shredded or sliced (2 cups shredded)
1/4 c plus 2 tbsp of parmesan cheese.

Steps:

  • 1. In Crock pot, cook meat, onion and garlic on a high temp until meat starts to brown and onions and garlic have sweated, but not burned. Stir in crushed tomatoes, paste, sauce and water. Season with sugar, basil, fennel seeds, Italian seasoning, 3/4 tbsp salt, pepper and 1 tsp of dried parsley. Let this come up in temperature, cover and simmer for approx 2 1/2 hrs.
  • 2. Prepare noodles by breaking noodles to fit an 8x8 baking pan. Set aside until ready to assemble after sauce has simmered. Once it has simmered long enough, turn off Crock pot rinse the noodles with warm water, no need to cook the noodles. Preheat oven to 375° F.
  • 3. Prepare cheese mixture by adding ricotta cheese, egg, 1 tsp parsley and 1/4 tsp salt. Add 1 tbsp of the Parmesan cheese and mix to combine.
  • 4. To Assemble: With a 1/2 c measuring cup, or ladle, place one or 1 1/2 scoops of sauce on the bottom of the 8x8 pan. Place one layer of your pre-measured noodles on the sauce. Spread or dollop the ricotta mixture on top of the noodles and try to spread it best you can. Sprinkle or place the Mozzarella/Provolone cheese mixture on top of that. Next, another layer of the sauce, then sprinkle the Parmesan cheese over that. You repeat this (starting with another layer of noodles) until all of the ricotta is gone. I did two good layers with about 1-1 1/2 cups sauce in each layer, and 2 hand fulls of the shredded cheese mix, to give you an idea. Once you have completed the last layer with Parmesan, I sprinkle a little extra, if any, of the shredded cheese on there too. Cover this tight with foil. PLACE ON BAKING SHEET, this probably will bubble over slightly. Into the 375° oven for 25 minutes. Very carefully, remove the foil at this point, and continue to bake for an additional 25 minutes or so. Remove from oven and let lasagna cool for 15 minutes or so. Meanwhile, you can store the remaining sauce in a freezer container, make an additional lasagna (8x8 pretty aluminum pan, just be careful as it will be heavy, may want to use a baking sheet until the freezer sets it up) and freeze it for a later day or keep in the fridge for spaghetti, pizza, bread stick dipping sauce or whatever you want to use this for.

ITALIAN SAUSAGE LASAGNA (COOKING FOR 2)

Perfect for when you don't want a full pan of lasagna (but still want leftovers for lunch the next day), this small version packs a big flavor punch with Italian sausage, fire-roasted tomatoes and three kinds of cheese.

1 cup shredded mozzarella cheese (4 oz)
1 cup whole-milk ricotta cheese (from 15-oz container)
2 tablespoons butter
1/2 lb bulk mild Italian sausage
1/2 cup diced red onion
1/2 teaspoon crushed red pepper flakes
1 1/2 cups Muir Glen™ organic tomato basil pasta sauce (from 26-oz jar)
4 no-boil lasagna noodles (from 8-oz package)
1/4 cup shredded Parmesan cheese
2 tablespoons thinly sliced fresh basil leaves, if desired

Steps:

  • Heat oven to 425°F. Spray 8x4-inch loaf pan with cooking spray. In medium bowl, mix mozzarella and ricotta cheeses; set aside.
  • In 10-inch nonstick skillet, melt butter over medium-high heat. Cook sausage, onion and pepper flakes in butter 5 to 7 minutes, stirring frequently, until sausage is cooked through and onion softens; drain. Return to skillet; stir in sauce.
  • Spread rounded 1/2 cup sauce mixture in bottom of loaf pan. Top with 1 lasagna noodle. Top with rounded 1/2 cup ricotta mixture. Pour rounded 1/2 cup sauce mixture over ricotta mixture. Top with 1 lasagna noodle. Top with rounded 1/2 cup ricotta mixture, followed by rounded 1/2 cup sauce mixture. Top with 1 lasagna noodle, followed by remaining ricotta mixture. Top with 1 lasagna noodle, then with remaining sauce mixture. Top with Parmesan cheese.
  • Cover with foil; bake 20 minutes. Remove cover; bake 15 to 20 minutes longer or until pasta is tender and mixture is bubbling at edges. Let stand 10 minutes. Top with basil.

Our Test Kitchen created tasty, cheesy homemade lasagna that couldn't be easier. This recipe even calls for no-cook noodles. Anyone can make this!

1 cup ricotta cheese
1/3 cup grated Parmesan cheese
1 egg
1 jar (14 ounces) spaghetti sauce with meat
4 no-cook lasagna noodles
1-1/3 cups shredded part-skim mozzarella cheese, divided

Steps:

  • In a small bowl, combine the ricotta cheese, Parmesan cheese and egg; set aside. Spread 1/3 cup sauce in an 8x4-in. loaf pan coated with cooking spray. Top with one noodle. Spread 1/3 cup sauce to edges of noodle. Top with a third of reserved cheese mixture and 1/3 cup mozzarella cheese. Repeat layers twice. Top with remaining noodle and sauce., Cover and bake at 400° for 25 minutes. Uncover; sprinkle with remaining mozzarella cheese; bake 5-10 minutes longer or until cheese is melted. Let stand for 10 minutes before cutting.

1 cup spaghetti sauce
3/4 cup shredded part-skim mozzarella cheese
1/2 cup 4% cottage cheese
1-1/2 cups cooked wide egg noodles
2 tablespoons grated Parmesan cheese
Chopped fresh parsley, optional

Steps:

  • Warm the spaghetti sauce; stir in mozzarella and cottage cheeses. Fold in noodles. Pour into 2 greased 2-cup baking dishes. Sprinkle with Parmesan cheese. , Bake, uncovered, at 375° until bubbly, about 20 minutes. If desired, top with parsley.
