STEAK TARTARE

16 ounces top sirloin, cleaned and trimmed
2 teaspoons sherry vinegar
1/2 teaspoon dry mustard
2 large egg yolks
1/4 cup light olive oil
6 tablespoons finely diced shallots
2 tablespoons small, brined capers, drained and unrinsed
1 teaspoon kosher salt
1/4 cup celery leaves, finely chopped and divided
2 tablespoons fresh parsley, finely chopped and divided
1 teaspoon freshly grated lemon zest

Steps:

  • Cut the steak into 1-inch cubes and park in the freezer for 10 minutes.
  • Whisk the vinegar, dry mustard and egg yolks together in a small bowl. Whisk continuously while streaming in the oil until emulsified, then whisk in the shallots, capers, salt, and roughly 2/3 of the celery leaves and parsley.
  • Hand chop the meat to your desired texture. (Alternately, divide the meat into 4 batches and pulse each batch separately 3 to 4 times in the bowl of a food processor fitted with the standard S-blade.)
  • With clean hands, quickly fold the meat and dressing together. Plate using a 3 3/4-inch pastry ring and garnish with the reserved herbs and lemon zest.

A beautifully simple preparation of raw fish that is a celebration of freshness. The thing I love about this dish is the magic worked by the lemon juice. As well as imparting sharp fresh flavor, the acid in the lemon juice affects the protein in the fish, causing a cooked texture on the surface of the meat whilst leaving the centre rare and soft. Serve with buttered crusty brown toast.

1 (5 ounce) very fresh salmon fillet
1 teaspoon minced shallot
1 teaspoon minced fresh flat-leaf parsley
1 teaspoon minced fresh chives
1 teaspoon minced cornichon (small pickled cucumber)
1 teaspoon fresh lemon juice, or more to taste
sea salt and freshly ground black pepper to taste

Steps:

  • Remove salmon skin and cut out the grey colored blood line so you have only the shiny pink flesh. Cut salmon into small cubes and place in a bowl. Mix in shallot, parsley, chives, pickle, lemon juice, sea salt, and pepper. Let marinate for 5 minutes before serving.

6 ounces salmon, cut into 1/4-inch dice
1 tablespoon capers, drained
1 tablespoon finely chopped cilantro
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 teaspoon chipotle puree
1 tablespoon scallions, chopped
Kosher salt and fresh cracked black pepper

1/2 baguette, cut on the bias into 1/2-inch-thick rounds
Ground cumin
Extra-virgin olive oil, for drizzling

Steps:

  • Combine the salmon, capers, cilantro, Dijon, olive oil, chipotle puree and scallions in a medium bowl, and season with salt and black pepper. Chill until ready to use.
  • Preheat a grill pan to medium-high heat.
  • Rub the baguette slices with cumin, drizzle with olive oil and season with salt and black pepper. Grill until toasted and slightly charred.
  • Fill the ring mold with the tartar, and then remove the mold. Serve with the crostini.

50g walnuts , finely chopped
large handful parsley leaves, finely chopped
2 tsp sumac , see 'Tip' below
½ red onion , finely chopped
zest and juice 1 lemon
4 salmon fillets
2 tbsp hummus
couscous , pitta bread or flatbreads, to serve (optional)
yogurt , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix together the chopped walnuts, parsley, sumac, red onion, lemon zest and juice of half the lemon. Season lightly and set aside.
  • Put the salmon on a baking tray and roast for 12 mins, then remove, spread with the hummus and return it to the oven for another 3 mins. Sprinkle over the walnut mixture and serve with the remaining lemon half to squeeze over along with couscous, pita or flatbreads, and yogurt on the side, if you like.

Steps:

  • Place salmon on a plate; freeze until well chilled, about 20 minutes.
  • Thinly slice salmon lengthwise into 1/8"-wide sheets. Cut each sheet into 1/8"-long strips. Cut strips crosswise into 1/8" cubes. Place salmon in a medium bowl. Add cucumber and the next 9 ingredients and toss to combine. Season tartare to taste with salt and pepper. Transfer tartare to a bowl and serve with chips.
