4 skinless, boneless chicken breast halves, cut into bite size pieces
4 sweet potatoes, peeled and cut into chunks
1 onion, chopped
1 (20 ounce) can pineapple chunks with juice
½ cup raisins
2 tablespoons Jamaican jerk seasoning
1 tablespoon grated lime zest
2 teaspoons Worcestershire sauce
1 teaspoon ground ginger
1 teaspoon ground cumin
1 teaspoon dried thyme

Steps:

  • Place chicken, sweet potatoes, and onion into a slow cooker.
  • In a bowl, stir together the pineapple chunks with juice, raisins, jerk seasoning, lime zest, Worcestershire sauce, ginger, and cumin until well combined; pour the mixture over the chicken mixture in the cooker. Sprinkle with thyme. Cover the cooker, and set to Low setting.
  • Cook until the chicken and vegetables are tender, about 6 hours.

Easy simple and tasty crock pot recipe. Serve with Hawaiian rolls, steamed broccoli and/or a side salad.

Number Of Ingredients 4

2 lbs chicken breasts, frozen (4 oz. per person) or 2 lbs thawed chicken breasts (4 oz. per person)
2 (15 1/4 ounce) cans tropical fruit in juice
1 (12 ounce) bottle hawaiian marinade
2 cups rice or 1 lb pasta

Steps:

  • Place chicken in bottom of crockpot.
  • Add tropical fruit and juice of at least 1 can (more won't hurt it), and Hawaiian marinade.
  • Set Crock-pot for 3-4 hours on high, or 6-7 hours on low.
  • Cook rice or pasta while chicken finishes cooking. At least 25 minutes for the rice and 15 for the pasta.
  • Serve with chicken, some fruit, and sauce on top of the rice/pasta.
  • Enjoy!
