One morning I had the crock pot ready to go and a roast pulled. Was tired of making my roast "the same old way" so grabbed a jar of salsa and poured it on top. Turned out to be a tasty meal. Very quick and easy to through together.

Steps:

  • Put roast in crock pot.
  • Pour salsa on top.
  • Cook on low 7-10 hours.

This is an incredibly easy, flavorful pot roast. It takes less than 5 minutes to prepare and cooks all day in your slow cooker. The salsa gives it a wonderful, mildly spicy taste. Leftovers would be great as tacos.

3 -4 lbs chuck roast
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon garlic powder
1 (12 ounce) jar tomatillo salsa

Steps:

  • Cut excess fat off chuck roast. Rub meat with cumin, chili powder, and garlic powder.
  • Put into crock pot and pour salsa over the roast.
  • Add an additional half jar of water (6 oz).
  • Cook on low for 7-9 hours.

8 small red potatoes, cut in half
3-pound beef boneless arm roast, trimmed of fat
2 tablespoons Gold Medal™ all-purpose flour
1 pound baby-cut carrots
1 jar (16 ounces) Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Place potatoes in 3 1/2- to 4-quart slow cooker. Coat beef with flour; place on potatoes. Arrange carrots around beef. Pour salsa over all.
  • Cover and cook on low heat setting 8 to 10 hours.
  • Remove beef from cooker; place on cutting board. Pull beef into serving pieces, using 2 forks. To serve, spoon sauce over beef and vegetables.

1-1/2 pounds beef stew meat, cut into 3/4-inch cubes
2 cups salsa
1 tablespoon brown sugar
1 tablespoon reduced-sodium soy sauce
1 garlic clove, minced
4 cups hot cooked brown rice
Sliced jalapeno peppers, optional

Steps:

  • In a 3-qt. slow cooker, combine the beef, salsa, brown sugar, soy sauce and garlic. Cover and cook on low 8-10 hours, until meat is tender. Using a slotted spoon, serve beef with rice and, if desired, sliced jalapeno peppers. Freeze option: Freeze individual portions of cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding water if necessary.

3-4 lb chuck or round roast
1 Tbsp oil
1 pkg dry onion soup mix
2 c water
1 c salsa, chunky

Steps:

  • 1. Brown meat in skillet in oil on both sides. (5 to 10 minutes) Place in slow cooker.
  • 2. Add remaining ingredients to dripping in pan. Simmer 2-3 minutes. Add to slow cooker.
  • 3. Cover. Cook on low 7-8 hours. I break it up into serving pieces, it usually falls apart easily. Enjoy!

10 plum tomatoes
2 garlic cloves
1 small onion, cut into wedges
2 jalapeno peppers
1/4 cup cilantro leaves
1/2 teaspoon salt, optional

  • Core tomatoes. Cut a small slit in 2 tomatoes; insert a garlic clove into each slit. Place tomatoes and onion in a 3-qt. slow cooker., Cut stems off jalapenos; remove seeds if a milder salsa is desired. Place jalapenos in the slow cooker., Cover and cook on high for 2-1/2 to 3 hours or until vegetables are softened (some may brown slightly); cool. , In a blender, combine the tomato mixture, cilantro and, if desired, salt; cover and process until blended. Refrigerate leftovers.
