- Place your pork loin in the slow cooker and pour the melted butter over it. Mix the dry onion mix and one can of cranberry sauce together and pour over the meat
- Cook on low for 6-7 hours or until the pork loin test done with your meat tester.
- Once done, shred your loin and let it sit in the gravy. Then I take the other can of cranberry sauce and mix with some of the gravy and spoon over the pork when served.

Sweet, tangy and easy. The sauce is also good with chicken instead of pork. Try serving with rice and onion rings.

- In a medium bowl, stir together the cranberry sauce, salad dressing, and onion. Place pork in a slow cooker, and cover with the sauce mixture.
- Cover, and cook on High for 4 hours, or on Low for 8 hours. Pork is done when the internal temperature has reached 145 degrees F (63 degrees C).

PORK TENDERLOIN WITH PEAR-CRANBERRY SAUCE
This is my own recipe. I scored some great locally raised pork tenderloin and some homemade maple syrup in the same week, and was inspired to create a recipe that used these and other regional ingredients. This recipe comes together very quickly. I made the sauce while the tenderloins were roasting and it took me less than 45 minutes from the time I started prepping ingredients to getting it on the table. By the way, I specify port, but sweet marsala or sherry should work (or substitute 2 Tbs of balsamic vinegar in 1/3 cup water for the 1/2 cup wine). Using >Bosc< pears is key because they won't break down when cooked. I served the tenderloins with buttermilk biscuits and lightly steamed green beans. And had a pint of Wolaver's brown ale to go with it all. Beauty!

- For the sauce: In a saucepan, melt butter over medium-low heat and add shallots. Cook just until softened.
- Add pears, cranberries, syrup, juice, port, salt and lemon peel (leave the peel whole to make it easier to remove later). Bring to a very gentle simmer and reduce by about half to a syrupy consistency (8-10 minutes). The cranberries will break down a bit and the Bosc pears should soften but not turn to mush. Remove from heat, remove the peel and keep warm.
- For the tenderloins: Preheat oven to 450°F.
- Dry the tenderloin and remove any excess fat and connective tissue (the silvery film often found around tenderloins will constrict when cooked and can make them curl up and wring out the moisture from the meat). Season with salt and pepper. Heat the oil in a large skillet over medium-high heat until it just starts to smoke. Brown the tenderloins on all sides (about 10 minutes).
- If you didn't use an oven-safe skillet (I use cast iron) then place the tenderloins in a baking dish. Place the skillet/dish in the oven and roast until the pork registers 135°F - about 10-15 minutes. Turn the tenderloins about halfway through the cooking time.
- Transfer the tenderloins to a carving board and let them rest for about 5-10 minutes. They should reach an internal temperature of about 145-150°F.
- Gently reheat the sauce for a few moments. Slice the tenderloin into 1" pieces and dress with the sauce.

- Place pork roast in 3 1/2 to 4-quart slow cooker.
- In small bowl, combine cranberries, broth, orange peel and 1/4 cup of the cranberry juice cocktail; mix well. Pour over roast.
- Cover; cook on low setting for 7 to 9 hours.
- To serve, place roast on serving platter; cover with foil to keep warm. Pour juices from slow cooker into medium saucepan; if necessary, skim off any fat.
- In small bowl, combine remaining 1/4 cup cranberry juice cocktail and cornstarch; blend well. Stir into juices in saucepan. Cook and stir over medium heat until bubbly and thickened. Serve with pork roast. Garnish with shredded orange peel if desired.

FRESH CRANBERRY SLOW COOKER PORK ROAST
I've seen many recipes using canned cranberry sauce, but I much prefer fresh ingredients. I like to leave the fat on the roast while cooking, but then reduce the fat content of the gravy by chilling the cooked roast overnight. Once chilled, I remove the congealed fat that has all floated to the top before straining the juices to make my gravy. My husband says this is the best pork roast ever! Very tender and tasty with a slightly sweet sauce.

Steps:
- Trim excess fat from roast. Sprinkle with salt and pepper. Place in slow cooker.
- In a small bowl, combine cranberries, honey, orange juice & rind, and spices; pour over roast.
- Place whole, peeled sweet potatoes on top of roast.
- Cover and cook on LOW 8 hours.
- Remove sweet potatoes and roast from cooker.
- Strain juices.
- Melt butter in skillet, add flour, stir to combine and cook on medium heat to warm. Slowly whisk in strained juices. Cook over medium heat until thickened to gravy.
- Whip sweet potatoes, adding butter and orange juice for moisture. Bake or broil until hot. Serve with roast.
