My family which is mostly German-Irish ate the same meal for New Year's every year of my life. It consisted of pork roast, sauerkraut, kielbasa and mashed potatoes. We ate the pork (pork roast and kielbasa) because pigs are a symbol of progress. Pigs push forward, rooting themselves in the ground before moving, and we need to move into the New Year in the same way. We eat sauerkraut, as it's believed it will bring blessings and wealth for the new year. It also reminds us that with the good comes the bitter as well. We eat potatoes to remind us that even as poor men we still had potatoes to eat.

1 tablespoon bacon drippings
1 cup minced onion
1 large red apple, diced
1 teaspoon caraway seeds
2 pounds sauerkraut, drained and rinsed
½ cup dry white wine
½ cup chicken stock
2 tablespoons brown sugar
2 pounds boneless pork loin roast
1 pound kielbasa sausage, cut into 3-inch pieces

Steps:

  • Heat bacon drippings in a Dutch oven over medium heat. Cook and stir onion in hot drippings until soft and translucent, about 5 minutes. Stir diced apple and caraway seeds with the onion and cook until apple is just tender, about 3 minutes more. Add sauerkraut and stir.
  • Stir white wine, chicken stock, and brown sugar together in a bowl; pour over the sauerkraut mixture.
  • Put pork roast into the bottom of the crock of your slow cooker. Pour sauerkraut mixture over the pork.
  • Cook on Low until the pork easily falls apart when pulled with a fork, 6 to 8 hours; add kielbasa sausage pieces and continue to cook until the sausage is heated through, 15 to 20 minutes more.

3 pound pork shoulder roast
16 ounces jarred or bagged sauerkraut, drained
2 Tablespoons brown sugar

Steps:

  • Place roast in the slow cooker. Add sauerkraut and brown sugar and mix to combine the three.
  • Cover and cook on low for 3-4 hours or until internal temperature registers in the middle at 150 degrees. Transfer to a plate or platter and allow to sit for 10 minutes
  • Cut roast into slices and serve with sauerkraut mix.
  • Label a gallon size freezer bag. Add all ingredients, remove excess air and lay flat to freeze. To cook, follow instructions above.

Steps:

3 tablespoons cider vinegar
2 tablespoons reduced-sodium soy sauce

1 large onion, halved and sliced
1 boneless pork loin roast (2-1/2 pounds), halved

2 tablespoons cornstarch
2 tablespoons cold water

  • In a small bowl, whisk the first nine ingredients until blended. Place onion in a 5-qt. slow cooker. Place roast, potatoes and carrots over onion. Pour sauce mixture over top. 2 medium apples, peeled, sliced
1 teaspoon caraway seed
1/4 cup apple juice or water
1 boneless pork roast (2 1/2 to 3 lb), string removed, trimmed of fat
6 small red potatoes (about 18 oz), cut in half
1 tablespoon Dijon mustard
3 tablespoons Dijon mustard
2 tablespoons packed brown sugar

Steps:

  • In 5- to 6-quart slow cooker, lightly mix sauerkraut, apples, caraway seed and apple juice. With spoon, make indention in center of mixture; place pork roast in center.

1 1/2 teaspoons dried thyme leaves

3/4 cup Progresso™ chicken broth (from 32-oz carton)
1 package (14 oz) kielbasa sausage, cut into 2-inch slices
2 tablespoons Dijon mustard
1 jar (16 oz) sauerkraut, drained

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In slow cooker, place potatoes, 1/2 teaspoon of the thyme, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Toss to coat.
  • Season ribs with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. In 12-inch skillet, heat oil over medium-high heat; cook ribs in oil, turning occasionally, until browned. Transfer to large bowl.
  • Add onion to skillet with drippings, stirring 5 to 6 minutes, until lightly browned. Transfer to slow cooker. Add broth to skillet; heat to boiling, scraping up any brown bits on bottom of skillet. Add to slow cooker.
