One 3 1/2- to 4-pound pork loin
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
1/8 teaspoon dried thyme
Salt and freshly ground black pepper
1 tablespoon cooking oil
2 cups chicken broth
2 tablespoons fresh lemon juice
1 tablespoon soy sauce
3 tablespoons cornstarch

Steps:

  • Trim the visible fat from the loin. If necessary, cut the roast to fit into a 3 1/2-, 4- or 5-quart slow cooker. In a small bowl, combine the garlic powder, ginger, thyme and 1/4 teaspoon pepper. Rub the spice mixture over the entire surface of the loin.
  • In a large skillet, heat the oil over medium to medium-high heat and brown the loin slowly on all sides. Drain off the fat. Transfer the loin to the slow cooker. Combine the chicken broth, lemon juice and soy sauce in a small bowl; pour over the loin. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours. When the roast is done, transfer the meat to a serving platter and cover to keep it warm.
  • To make the gravy, pour the juices from the slow cooker into a glass measuring cup. Skim off the fat. Measure 2 cups of liquid, adding water to the juices if necessary to make 2 cups. Transfer the juices to a saucepan, reserving 1/2 cup. Stir the cornstarch into the reserved 1/2 cup of juices until dissolved, then stir into the juices in the saucepan. Heat over medium heat, stirring frequently, until the gravy is thickened and bubbly, 2 to 3 minutes. Cook and stir 2 minutes more. Season the gravy to taste with salt and pepper. Slice the roast and serve it with the gravy.

1 tablespoon pork rub seasoning, or to taste
¼ teaspoon Chinese five-spice powder
1 (3 pound) pork loin roast
2 medium sweet potatoes, peeled and cut into bite-size pieces
½ cup brown sugar
3 tablespoons butter
salt and ground black pepper to taste

Steps:

  • Mix pork rub seasoning and Chinese five-spice powder together in a small bowl. Rub all over pork roast.
  • Place sweet potatoes into the bottom of a slow cooker; add brown sugar and butter. Place roast on top and season with salt and pepper.
  • Cook on Low until roast is fork-tender, 6 to 7 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

1½ tsp fennel seeds
3 sprigs fresh thyme
2 garlic cloves
2 tbsp rapeseed or olive oil
300g shallots
about 1.8kg pork loin, skin removed and fat well-scored (cut from the thicker end of the joint)
1 small celeriac, peeled, quartered and cut into chunks
2 eating apples, such as braeburns or coxs, peeled, cored and cut into wedges
150ml white wine
250ml chicken or pork stock
1 tbsp honey
1 tbsp Dijon mustard

Steps:

  • Lightly crush the fennel seeds with the leaves from the thyme and the garlic in a pestle and mortar. Add 1 tbsp oil and plenty of salt and pepper, then bash to a rough paste. Rub all over the pork, then cover and chill for up to 24 hrs, if you have time (2 hrs if not).
  • Set your slow cooker to a low heat. Pour a kettleful of boiling water over the shallots, then set aside for 2 mins until cool enough to handle - this will make them easier to peel. Cut off the root and remove the papery skins. Heat the remaining oil in a large casserole or frying pan large enough to fit the pork. Brown the shallots for a few mins then tip into the slow cooker. Add the celeriac and apples, season well and give them a mix.
  • Brown the pork in the same pan, on all sides, not forgetting the ends. Sit on top of the veg and apples, fat-side up, nestling the joint in a little so you can fit the lid on. Pour the wine into the frying pan and bubble for a minute, scraping the bottom of the pan to pick up any tasty bits. Pour in the stock, honey and mustard, bubble for another min, then pour over the pork. Cover with a lid and cook on low for 5-6 hrs (depending on slow cooker size), turning the pork and stirring the veg halfway through cooking.
  • Remove the pork, wrap in foil and leave to rest for 10 mins before carving to serve alongside the veg with roast potatoes and greens.

20 cloves garlic, peeled
1 cup diced onion
2 tablespoons all-purpose flour

¼ cup fresh lemon juice

Steps:

  • Heat oil in a large skillet over medium-high heat. Season pork with salt and pepper. Place pork in the hot skillet and sear until brown on all sides, about 3 to 4 minutes per side. Transfer pork to a 6-quart slow cooker.
  • Add garlic cloves to the skillet. Cook, stirring often, over medium-high heat until brown, about 5 minutes. Add onion and cook until softened, about 3 minutes. Sprinkle flour over garlic and onion and cook, stirring, for 2 minutes.
  • Pour chicken broth into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in lemon juice, Italian seasoning, salt, and pepper, and bring to a boil. Pour broth mixture and honey over the pork in the slow cooker.

5 tablespoons oil, divided (or use as much as needed)
0.5 (1 ounce) package dry onion soup mix
fresh ground black pepper

8 garlic cloves (optional or use as many as desired, I use lots!)
1/3 cup French dressing
1 tablespoon cornstarch
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • Using a strainer separate the dried onions from the dry powder; place the dry onions in a small bowl.
  • Heat about 3 tablespoons oil in a skillet over medium heat.
  • Rub the roast all over with 2 tablespoons oil, then season the pork loin with the onion soup powder, black pepper and garlic powder.
  • Brown the roast on all sides in hot oil then allow to cool slightly or enough for easy handling if stuffing with the garlic cloves (if your cloves are very large I suggest to slice in half).
  • Make small slits all over in the roast, then stuff with garlic cloves (this is only optional).
  • Place the roast in the slow cooker.
  • In a bowl whisk the French dressing with the cornstarch until smooth then add in the cranberry sauce and dried onions; mix until combined.
  • Pour the mixture over and around the pork.
  • Cover and cook on HIGH heat for 4 hours or on LOW for about 7-8 hours or until the pork reaches internal temperature of 160 degrees F.

1 large yellow onion (sliced into 3 very thick slices)
1 (14 ounce) can sauerkraut
1/2 cup chicken broth
2/3 cup Saucy Susan peach apricot sauce

  • Coat bottom of crock pot with olive oil then add the 3 thick slices of onion.

4 teaspoons vegetable oil
2 onions, chopped medium
3 garlic cloves, minced
1 cup dry white wine
2 cups low sodium chicken broth
1 cup apple cider
1 cup pitted prunes
2 bay leaves
2 tablespoons minced fresh thyme (or 2 t. dried)
1 lb carrot, peeled and cut into 1-inch pieces
1/2 cup all-purpose flour
1 cup heavy cream
3 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
1/4 cup minced fresh parsley

Steps:

  • Dry the roast with paper towels, then season with salt and pepper.
  • Heat 2 teaspoons oil in a 12-inch skillet over med-high heat until just smoking.
  • Brown the roast on all sides, reducing the heat if the fat begins to smoke, about 10 minutes; add the rost to the slow cooker.
  • Add the remaining 2 teaspoons oil to the skillet and heat over medium heat until shimmering.
  • Add the onions and 1/4 teaspoon salt; cook until softened, about 5 minutes.
  • Stir in the garlic and cook for about 15 seconds.
  • Stir in the wine, scraping up any browned bits.
  • Simmer until the wine has reduced by half, about 3 minutes, then pour into the slow cooker.
  • Add the broth, cider, prunes, bay leaves, and thyme to the slow cooker.

2 tablespoons Cider Vinegar
2 tablespoons Worcestershire Sauce
1 teaspoon Prepared Horseradish
1/4 teaspoon Ground Black Pepper

Steps:

  • In a small bowl, combine the dry rub ingredients. Rub into both sides of the pork roast.
  • Place a wire rack in the bottom of a 3 1/2-quart or larger crockery slow-cooker. Combine water and liquid smoke. Pour into slow-cooker. Place the pork roast on the wire rack. If necessary, cut pork into 2 pieces to fit. Cover and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours.
  • About 1 hour before serving, combine barbecue sauce ingredients in a medium saucepan. Place over medium-high heat. Bring to a simmer and cook, stirring occasionally, for 30 minutes.
  • Lift pork roast from slow-cooker and let stand for 20 minutes. Using tongs, remove metal rack and discard any pan drippings.
  • Shred and chop the pork roast. Return pork to slow-cooker and cover with sauce. Stir well to combine. If cooking on HIGH, change setting to LOW. Cover and cook for another 30 minutes.

Lean pork loin cooks quickly, which is a disadvantage in a slow cooker. Cook's Country has discovered how to make it work. Wrap the seasoned pork in foil, invert a loaf pan to elevate the pork above the bubbling juices, where it can cook gently, and put the apple-onion mixture on the bottom to make a tasty compote to serve with the pork. A pork loin roast about 9 inches long will fit best. Nestle the inverted loaf pan into the apple mixture so that the pork fits on top and the cooker can close.

4 teaspoons kosher salt
1 tablespoon minced fresh rosemary
1 tablespoon minced fresh thyme
2 teaspoons pepper
4 lbs boneless pork loin roast, trimmed
2 tablespoons unsalted butter
2 onions, chopped fine
2 tablespoons packed brown sugar
1 teaspoon salt
1 cup apple juice
3/4 teaspoon pepper
5 apples, peeled cored, halved and cut into 1/2-inch pieces (Gala, Pink Lady or Fuji)
1/2 cup raisins

Steps:

  • For the pork, combine salt, rosemary, thyme, and pepper in bowl. Pat pork dry with paper towels and season with salt mixture. Wrap pork in 18-inch square of heavy-duty aluminum foil and refrigerate for at least 6 hours or up to 24 hours.
  • For the apple compote, melt 1 tablespoon butter in 12-inch skillet over medium high heat. Add onions, sugar and salt and cook until onions are golden brown, about 8 minutes. Add 1/2 cup apple juice and pepper and simmer until syrupy, 1 to 3 minutes. Transfer to oval shaped slow cooker.
  • Melt remaining 1 tablespoon butter in now empty skillet over medium-high heat. Add apples and cook, stirring occasionally, until beginning to brown, 3 to 5 minutes. Stir in raisins. Transfer to slow cooker.
  • Nestle inverted (upside down) disposable 5 by 3-inch aluminum pan into apple mixture. Place foil wrapped pork on top of disposable pan, cover and cook on low heat until pork registers 140 degrees, 4 to 5 hours.
  • Transfer pork to carving board, open top of foil, and let rest 20 minutes. Meanwhile, discard disposable pan, gently stir apple compote to recombine, and transfer to serving bowl. Carve pork into 1/4-inch-thick slices. Serve with compote.

1 small onion
1 small green pepper
3 TBLS. butter
3 garlic cloves, minced
2 tsp. dried thyme
1 tsp. paprika
1/2 each salt, white pepper and pepper
1/2 tsp. ground mustard
1/2 tsp. hot pepper sauce
1 boneless pork loin roast (about 4 lbs)
2 tsp. cornstarch
2 tsp. cold water

Steps:

  • Finely chop vegetables and saute in a large skillet with the butter until tender. Add garlic and cook 1 minute longer. Stir in all seasonings and hot pepper sauce. Cut roast in half. Cut several slits in roast within 1/2 inch from the bottom. Place in slow cooker. Spoon vegetable mixture into the slits and over the top of the roast. Cover and cook on low 6 - 8 hours. Transfer roast to a serving platter and cover to keep warm. Pour cooking juices from slow cooker into a small saucepan. Combine cornstarch and water in a separate bowl until smooth and then stir into the pan of juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over the roast.

3 to 4 pound pork loin (I use a center cut)
2 granny smith apples, sliced and divided
1 white onion, sliced
1/2 cup butter, sliced
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon cinnamon
1/4 cup honey or real maple syrup
1/2 teaspoon dried thyme or a few sprigs of fresh
6-quart or larger

  • Cut slits on the top of the pork loin, I cut about an inch down. Plug in apple slices into the slits. Set aside. Add the onions and remaining apple slices down in the slow cooker. Lay over the slices of butter. Add the pork loin. Sprinkle the pork with the salt, pepper and cinnamon. Add the thyme. Drizzle over the honey. Cover and cook on LOW for 6 hours without opening the lid during the cooking time. When the cooking time is done. Remove the pork onto a platter and let rest for at least 5 minutes. 1½ tsp fennel seeds
2 garlic cloves
5-6 thyme sprigs
2 tbsp rapeseed or olive oil
1.8kg pork loin, skin removed and fat well scored (cut from the thicker end of the joint)
300g shallots
1 small celeriac, peeled, quartered and cut into chunks
2 eating apples (such as Braeburn or Cox), peeled, cored and cut into wedges
150ml white wine
250ml chicken or pork stock
1 tbsp honey
1 tbsp Dijon mustard

Steps:

  • Lightly crush the fennel, garlic and the leaves of 3 thyme sprigs together in a pestle and mortar. Add 1 tbsp oil and season well, then bash to a rough paste. Rub the mixture all over the pork, then cover and chill for at least 2 hrs or up to 24 hrs.
  • Set the slow cooker to low. Tip the shallots into a heatproof bowl and pour a kettleful of boiling water. Leave to soak for 2 mins, then drain and rinse under cold water until cool enough to handle (this will make them easier to peel). Cut off the roots and remove the papery skins.
  • Heat the remaining oil in a frying pan or flameproof casserole that's large enough to fit the pork joint. Brown the shallots for a few minutes over a medium heat, then tip into the slow cooker. Add the celeriac and apples, then season well and mix.
  • Put the pork in the pan and brown really well on all sides, then transfer to the slow cooker fat-side up on top of the vegetable mixture. Pour the wine into the pan and bubble for 1 min. Add the stock, honey and mustard and bubble for 1 min more, then pour the mixture over the pork. Cover and cook on low for 5-6 hrs, turning the meat and stirring the veg halfway through cooking, if you can.
  • Lift the pork out of the slow cooker, wrap and leave to rest for 10 mins before carving. Serve with the cooked vegetables and some greens, if you like.
