1 tablespoon sugar
2 (14 ounce) cans cream-style corn
1 large potato, diced (about 2 cups)
2 large poblano chiles, seeded and diced (about 2 cups)
1 (10 ounce) package frozen whole kernel corn, thawed
1 lb boneless skinless chicken, cut into cubes
1/2 lb chorizo sausage, diced
1 cup heavy cream
1/4 cup chopped fresh cilantro leaves

Steps:

  • Stir the broth, sugar, canned corn, potato, chiles, thawed corn, chicken and sausage in a 6-quart slow cooker.
  • Cover and cook on LOW for 7 to 8 hours or until the chicken is cooked through. Stir in the cream and cilantro.

1 tablespoon sugar
2 (14 1/2 ounce) cans cream-style corn
1 large potatoes, diced or 2 cups diced potatoes
2 large poblano chiles, seeded and diced or 2 cups diced poblano chiles
1 (10 ounce) package frozen whole kernel corn, thawed
4 boneless chicken breast halves, cut into cubes
1/2 lb chorizo sausage, diced
1 cup heavy cream
1/4 cup chopped fresh cilantro leaves

Steps:

  • Stir the broth, sugar, canned corn, potato, chiles, thawed corn, chicken and sausage in a 6-quart slow cooker.
  • Cover and cook on LOW for 7 to 8 hours or high 4-5 hours or until the chicken is cooked through. Stir in the cream and cilantro.
  • To enhance the flavor of the chowder, roast the chiles and thawed frozen corn before adding to the cooker. Place the chiles and thawed corn in a single layer in a roasting pan. Drizzle with 1 tablespoon olive oil. Toss to coat. Bake at 375°F for 30 minutes.

8 slices OSCAR MAYER Bacon, cut into 1/2-inch-thick slices
1 cup chopped onions
1 poblano chile, chopped
2 tsp. minced garlic
1 carton (32 oz.) fat-free reduced-sodium chicken broth, divided
1 lb. baking potatoes (about 2), peeled, cut into 1/2-inch pieces
1 tsp. ground cumin
1/4 cup flour
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
2 ears corn on the cob, husks and silk removed
1 pkg. (8 oz.) KRAFT Shredded Pepper Jack Cheese, divided
1 avocado, chopped
1/4 cup chopped fresh cilantro

Steps:

  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from skillet. Refrigerate cooled cooked bacon until ready to use.
  • Add onions, chiles and garlic to reserved drippings in skillet; cook and stir 3 to 4 min. or until onions are crisp-tender. Spoon into slow cooker sprayed with cooking spray. Stir in 3 cups broth. Add potatoes and cumin; stir.
  • Whisk flour and remaining broth until blended. Gradually add to Neufchatel in medium bowl, mixing well after each addition. Add to slow cooker; stir. Cover with lid. Cook on LOW 6 to 7 hours (or HIGH 3 to 4 hours).
  • Cut corn kernels off the cobs. Add to ingredients in slow cooker along with 1-1/2 cups of the shredded cheese; stir until shredded cheese is melted. Cook, covered, 5 min. or until heated through.
  • Place bacon on paper towel-covered microwaveable plate. Microwave on HIGH 20 to 30 sec. or until heated through. Serve soup topped with bacon, remaining shredded cheese, avocados and cilantro.

50 g butter
1 small onion, finely chopped
4 garlic cloves, chopped
500 g floury potatoes, cubed
1 leek, thinly sliced
1 teaspoon cayenne
1 liter vegetable stock
250 g chorizo sausages, cut into 1 cm wide slices
salt & freshly ground black pepper

Steps:

  • Heat the butter in a large pan and cook the onion, garlic and potatoes for 5 minutes until lightly golden.
  • Add the leek and cayenne and cook for a further 1 minute.
  • Add the stock, bring to the boil and simmer for 20 minutes until the potatoes are very soft and beginning to break up into the soup.
  • Using a potato masher, roughly mash the potatoes into the soup.
  • Stir in the chorizo and simmer gently for 5 minutes until the orange coloured oil from the chorizo rises to the surface of the soup.
  • Check the seasoning, ladle into bowls and garnish with a sprig of flat leaf parsley.
  • Serve with lots of crusty bread for mopping up.

2 boneless skinless chicken breasts
2 cups water
4 cups frozen corn, divided
1 cup milk
1 tablespoon olive oil
2 poblano chiles, seeded, diced
1 white onion, chopped
3 medium garlic cloves, minced
1 teaspoon sugar
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper
1 large tomatoes, diced
1/4 cup feta cheese, crumbled
cilantro, chopped (optional)
avocado, slices (optional)
lime slice (optional)
black pepper, freshly ground

Steps:

  • In a small saucepan, add the chicken breasts and 2 cups of water; bring to a boil and cook until chicken is tender; approximately 10 minutes.
  • Shred the chicken reserving poaching liquid.
  • Puree 2 cups of the corn kernels in a blender with the milk; set aside.
  • In a soup pot, heat the olive oil; add the diced chilies, onion and garlic; sauté 4 to 5 minutes.
  • Measure the poaching liquid and add enough water to make 2 cups, add to soup pot along with the chicken.
  • Add remaining corn and seasonings bring to a boil; reduce heat and simmer for 5 minutes.
  • Stir in pureed corn, tomato and cheese; simmer to heat through and melt cheese, about 3 minutes.
  • Ladle into servings bowls and garnish as desired.

5 potatoes, peeled and cubed
2 tablespoons butter
2 onions, chopped
salt and pepper
2 cups diced ham
4 chicken bouillon cubes
3 stalks celery, chopped
1 (12 ounce) can evaporated milk
1 (15 1/4 ounce) can whole kernel corn, undrained
2 carrots, chopped
1 small red pepper, chopped
2 (15 ounce) cans creamed corn
instant potato flakes

Steps:

  • In a slow cooker, place potatoes, onions, ham, celery, carrots, red pepper, whole kernel corn, butter, and salt and pepper to taste.
  • Add enough water to cover and the bouillon cubes.

3/4 pound bulk fresh chorizo or spicy pork sausage
1 large onion, chopped
1 medium sweet red pepper, chopped
1 poblano pepper, seeded and chopped
3 garlic cloves, minced
1/3 cup all-purpose flour
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
2 cartons (32 ounces each) reduced-sodium chicken broth
1-1/2 pounds potatoes (about 4 medium), peeled and cut into 1/2-inch cubes
3 cups frozen corn (about 16 ounces)
1/2 cup sour cream
Optional: Queso fresco and chopped fresh cilantro

Steps:

  • In a Dutch oven, cook and crumble chorizo over medium heat until cooked through, 4-6 minutes. Using a slotted spoon, remove chorizo to paper towels, reserving 2 tablespoons drippings in pan., In drippings, saute onion and the red and poblano peppers over medium heat until tender, 8-10 minutes. Add garlic; cook and stir 1 minute. Stir in flour and seasonings until blended; cook and stir 3 minutes. Gradually stir in broth., Add potatoes and corn; bring to a boil.
