1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts)
1/3 cup low-sodium soy sauce
1/3 cup honey
2 tablespoons tomato paste
2 teaspoons chili paste (sambal oelek, sriracha, or hot sauce of choice)
4 cloves garlic (minced)
1 tablespoon rice vinegar
2 tablespoons cornstarch
Prepared brown rice, quinoa, or cauliflower rice
Toasted sesame seeds
Chopped green onion

Steps:

  • Place the chicken in the bottom of a 6-quart or larger slow cooker. In a medium mixing bowl or very large measuring cup, whisk together the soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar. Pour over the chicken. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the chicken reaches an internal temperature of 165 degrees F on an instant-read thermometer. If you are available, flip the chicken over once halfway through to coat both sides. (If not, don't stress; it will still be tasty.)
  • Remove the chicken to a plate and let cool slightly. Whisk the cornstarch into the slow cooker cooking liquid. Cover and cook on HIGH for 15 minutes, until the sauce thickens slightly, stirring occasionally. If you'd like the sauce particularly thick, you can cook it for a full 30 minutes in the slow cooker OR follow the stovetop method below.
  • For quicker sauce thickening, reduce the sauce on the stove: After whisking in the cornstarch, transfer the cooking liquid to a medium saucepan. Cook on the stovetop over medium heat, stirring often until the sauce thickens, 5 to 10 minutes. (If your slow cooker insert is stovetop safe, you can remove it from the slow cooker and place it directly on the burner, but do not do this unless you are POSITIVE your insert is stovetop safe or it may crack.)
  • With two forks (or your fingers if the chicken is cool enough), shred the chicken and place it in the slow cooker. If you reduced the sauce on the stove, add it back to the slow cooker now. Stir to coat the chicken with the sauce. Serve over rice, sprinkled with green onions and sesame seeds.

1/2 cup diced onion
3/4 cup honey
1/2 cup soy sauce
1/4 cup ketchup
2 tablespoons olive oil
1 teaspoon sesame oil
3 to 4 cloves garlic, minced
4 boneless skinless chicken breasts
2 teaspoons cornstarch
3 tablespoons water
1 tablespoon sesame seed

Steps:

  • In small bowl, mix onion, honey, soy sauce, ketchup, oil, sesame oil and garlic. Set aside.
  • Place chicken in 4- to 5-quart slow cooker. Pour honey mixture evenly over chicken.
  • Cover; cook on Low heat setting 4 hours.
  • With slotted spoon, remove chicken from slow cooker, leaving sauce in cooker. In small bowl, stir cornstarch into water until dissolved. Pour into slow cooker; stir to combine with sauce. Cover; cook sauce on High heat setting 10 minutes longer or until sauce has thickened.
  • While sauce is cooking, shred chicken with 2 forks.
  • Return shredded chicken to slow cooker; toss with sauce. Sprinkle with sesame seed before serving.

½ cup honey
¼ cup soy sauce
2 tablespoons ketchup
2 tablespoons dried minced onion
1 tablespoon vegetable oil
½ teaspoon garlic powder
2 teaspoons cornstarch
3 tablespoons water
sesame seeds, or to taste

Steps:

  • Spread chicken into the crock of a slow cooker.
  • Stir honey, soy sauce, ketchup, minced onion, vegetable oil, and garlic powder together in a bowl; pour over the chicken.

3 large bone-in skinless chicken breasts or 2 1/2-3 lbs skinless chicken breasts
1/2 cup honey
1/2 cup low sodium soy sauce
1/4 cup blackberry jam
1/4 cup hoisin sauce
2 tablespoons olive oil
3 garlic cloves, minced
1/2 cup diced onion
1/4 teaspoon crushed red pepper flakes (optional)
1 tablespoon cornstarch
sliced scallion, for garnish
sesame seeds, for garnish

Steps:

  • Arrange the chicken breasts in the slow cooker so that they are not overlapping.
  • In a medium bowl, whisk together the honey, soy sauce, blackberry jam, hoisin, olive oil, garlic, onion and crushed red pepper flakes, and then pour the sauce over the chicken. Cover the slow cooker and cook the chicken on LOW for 4 to 5 hours until the chicken is fully cooked.
  • Using tongs, remove the chicken from the slow cooker (reserving the liquids) and place it on a cutting board. Remove the bones then use two forks to shred the chicken into smaller pieces. Place the shredded chicken in a large bowl.
  • In a small bowl, whisk together the cornstarch with 3 tablespoons of cold water to make a slurry.

I found this on the Six Sisters' blog and had to try it. I can never get the sauce to thicken in the crock pot so I put the juices in a separate pan, add the cornstarch and cook it on the stove but I posted as it was written.

salt and pepper
1 cup honey
1/2 cup soy sauce
1/2 cup diced onion

1/4 teaspoon red pepper flakes (optional)
4 teaspoons cornstarch (dissolved in 6 Tablespoons water)

  • Season both sides of chicken with lightly with salt and pepper, put into crock pot.
  • In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken.
  • Cook on low for 3-4 hours or on high 1 1/2 - 2 1/2 hours, or just until chicken is cooked through.
  • Remove chicken from crock pot, leave sauce.
  • Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot. Stir to combine with sauce.
  • Replace lid and cook sauce on high for ten more minutes or until slightly thickened.
  • Cut chicken into bite size pieces, then return to pot and toss with sauce before serving.
  • Sprinkle with sesame seeds and serve over rice or noodles.
  • You can also sprinkle more red pepper flakes on top if you want more heat.
