Steps:
- Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
- Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
- In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

SLOW COOKER CREAM OF BROCCOLI SOUP
Easy vegetarian slow cooker cream of broccoli soup recipe, homemade with simple ingredients. This rich and creamy soup is full of fresh broccoli, onions, carrots, celery, garlic and swirls of heavy cream or coconut milk.

Steps:
- Heat olive oil and butter in a large nonstick pan on medium-high heat.
- Add onion, garlic, carrot and celery and saute for a few minutes until veggies are partially softened and garlic is fragrant (about 3-4 minutes).
- Transfer these vegetables to a crockpot (6 quart or larger).
- Add broccoli, broth, Italian seasoning, salt, pepper.
- Mix until combined.
- Cover and on High heat for 4 hours, or Low heat for for 6 hours.
- Use a hand-held immersion blender to puree the soup until smooth.
- Mix in additional broth if soup is too thick for your liking.
- Stir in coconut milk or heavy cream (Don't stir it in completely. A few white streaks makes a beautiful presentation).
- Sprinkle pumpkin seeds, sesame seeds, red chili flakes on top. Enjoy!

- Spray 4-quart slow cooker with cooking spray. In 2-quart saucepan, melt butter over medium-high heat. Add onions, pepper and salt; cook 3 to 4 minutes, stirring occasionally, until tender. Stir in flour. Cook 1 minute, stirring constantly. Gradually stir in evaporated milk until smooth. Pour mixture into slow cooker. Stir in broth and thawed broccoli.
- Cover; cook on Low heat setting 4 to 4 1/2 hours or until hot but not simmering.
- Add cheese cubes to slow cooker; stir until melted. Add 1 1/2 cups cheddar cheese and the Parmesan cheese; stir until melted. Sprinkle individual servings with additional cheddar cheese.

- In a small skillet, heat butter over medium-high heat. Add onion; cook and stir 3-4 minutes or until tender. Transfer to a 3- or 4-qt. slow cooker. Add broccoli, broth, milk and pepper., Cook, covered, on low 3-4 hours or until broccoli is tender. Stir in process cheese until melted. Add shredded cheeses; stir until melted. Just before serving, stir soup to combine. Top servings with additional cheddar cheese.
