4 medium apples, peeled, chopped
1 bag (12 oz) fresh cranberries (3 cups)
1/2 cup packed brown sugar
1 teaspoon grated orange peel
1/4 cup orange juice

Steps:

  • Spray 3-quart slow cooker with cooking spray. In slow cooker, mix all ingredients.
  • Cover; cook on High heat setting 5 hours (or on Low heat setting 8 hours).
  • Leave sauce chunky, if desired, or stir well to break down apples and cranberries more. Serve warm.

½ cup water
½ cup brown sugar
½ cup white sugar
¼ teaspoon ground cinnamon
1 (12 ounce) package fresh cranberries

Steps:

  • Combine orange juice, water, brown sugar, white sugar, and cinnamon in slow cooker; stir in cranberries. Cook on High for 3 hours, stirring once each hour.
  • Remove lid; stir well. Cook on High until sauce has thickened and most cranberries have popped, about 45 more minutes.

1 (3 pound) Turkey, fryer-roasters, breast, meat and skin, raw
½ cup water
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 (16 ounce) can whole cranberry sauce (such as Ocean Spray®)

Steps:

  • Place turkey breast skin side-up in a slow cooker. Add water. Sprinkle salt and pepper over turkey breast and cover with cranberry sauce.
  • Cover and cook on Low until no longer pink in the center, about 7 1/2 hours. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1 package (12 ounces) fresh or frozen cranberries, thawed
1 package (12 ounces) frozen pitted dark sweet cherries, thawed
1/4 cup packed brown sugar
1/4 cup Marsala wine or unsweetened apple juice
1/3 cup raspberry vinaigrette
1 large red onion, sliced
1 large apple, peeled and sliced
1 boneless whole pork loin roast (4 pounds)
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1 teaspoon coarsely ground pepper
2 teaspoons cornstarch
2 teaspoons water

Steps:

  • In a large saucepan, combine the cranberries, cherries, brown sugar and wine. Cook over medium heat until the berries pop, about 15 minutes. Stir in vinaigrette., Place half of the onion and apple in a 4- or 5-qt. slow cooker. Cut roast in half; add to slow cooker. Top with remaining onion and apple. Pour cranberry mixture over top. Sprinkle with rosemary and pepper. Cover and cook on low for 8-10 hours or until meat is tender., Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into the pan. Cranberry sauce is easy to make, but this recipe you don't even have to watch! And my 10 year old made it while I was busy slaving over the pies on Thanksgiving eve. The lime zest is a great little touch! And I left the slow cooker out for the morning when I mulled my cider for my guests - yum!

4 cups fresh cranberries (12 ounce bag rinsed and picked over for stems)
1 cup sugar
1/2 cup water
lime zest or orange zest

Steps:

  • Combine the cranberries, sugar and water in the slow cooker. Cover and cook on HIGH for 2 to 2.5 hours; the cranberries will have popped open.
  • Stir the zest into the hot sauce. Turn off the cooker, remove the lid, and let cool in the crock to room temperature (it will be very liquidy at first, don't worry!).
  • When cooled (it will be thick and yummy now) store covered in the refrigerator for up to 3 weeks.
  • Serve chilled or at room temperature.
  • * If you use frozen cranberries, add 30 to 45 minutes cooking time.

When I became diabetic, a good friend, gave me some cookbooks to help me. Most of the recipes seem like regular recipes to me. This one does call for some fat-free and light products. But, you can use regular ones, if you want. From Fix-It and Forget-It Diabetic Cookbook. Start with a 4 quart slow cooker. This recipe is similar to an English pudding, which is like a steamed cake & has a sauce on the side to pour on individual portions. So, it isn't what we are used to as a pudding at all.

1 1/3 cup(s) flour
1/2 teaspoon(s) salt
2 teaspoon(s) baking soda
1/3 cup(s) boiling water
6 tablespoon(s) dark molasses
2 cup(s) whole cranberries
1/2 cup(s) chopped walnuts
1/2 cup(s) water
***BUTTER SAUCE***
1 cup(s) confectioners sugar
1/2 cup(s) fat-free half-and-half
4 tablespoon(s) light, soft tub margarine or light, butter*
1 teaspoon(s) vanilla
- *light butter, may be more healthy--margarine usually has transfats. check labels. may change nutritutional values some.

Steps:

  • Mix together flour and salt. Dissolve soda in boiling water. Add to flour and salt. Stir in molasses. Blend well. Fold in cranberries and nuts.
  • Pour mixture into well greased and floured bread or cake pan, that will sit in your cooker. Cover with greased tin foil.
  • Pour 1/2 cup water, into cooker. Place foil-covered pan in cooker. Cover with cooker lid, and steam on HIGH 3-4 hours, or until pudding tests done with a wooden pick. Remove pan and uncover. Let stand 5 minutes, then, unmold. Makes 12 servings.
  • To Make BUTTER SAUCE: Mix together all ingredients in saucepan. Cook, stirring over medium heat, until sugar dissolves. Serve warm butter sauce over warm cranberry pudding.
