For game days, I skip the pasta and serve the chicken on submarine rolls with a bit of the sauce and some chopped lettuce. 1/2 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/2 teaspoon pepper
1/4 teaspoon salt
1 large egg, lightly beaten
1 tablespoon water
4 (6 ounces each ) boneless skinless chicken breast halves
1 jar (24 ounces) marinara sauce
4 slices part-skim mozzarella cheese
Hot cooked pasta, optional

Steps:

  • In a shallow bowl, combine bread crumbs, Parmesan cheese, Italian seasoning, pepper and salt. In another bowl, combine egg and water. Dip chicken in egg mixture, then in crumb mixture to coat both sides, patting to help coating adhere., Transfer chicken to a 4- or 5-qt. slow cooker. Pour sauce over chicken. Cook, covered, on low for 4-6 hours or until a thermometer inserted in chicken reads 165°. Top with cheese, recover, and cook for 10-15 minutes, until cheese is melted. If desired, serve with hot cooked pasta.

1 lb lean ground chicken (93% lean) or 1 lb lean ground turkey (93% lean)
2 large eggs
1 small onion, diced
1/2 cup Italian breadcrumbs
1 tablespoon italian seasoning
1 teaspoon garlic powder
1 cup marinara sauce, divided (I use Classico Tomato- Basil)
1 1/2 cups finely shredded mozzarella cheese, divided

Steps:

  • 1. In a medium bowl, combine the chicken (or turkey), eggs, onion, breadcrumbs, Italian seasoning, garlic powder, 1/2 cup marinara and 1/2 cup cheese (it's easiest to just use your hands to do this).
  • 2. Spray an 8x5-inch loaf pan with nonstick spray (metal or glass- see notes below). Scoop the meatloaf mixture into the pan and smooth the top. Spread the remaining 1/2 cup of marinara sauce over the top. Sprinkle remaining 1 cup of cheese on top. Put the pan in a 6-quart slow cooker and place the lid on top. Cook for 7 to 8 hours on low (or 4 hours on high).
  • 3. Slice, and serve.

This meatloaf features ground chicken to keep the meatloaf healthy, but adds some lovely Italian flavors with spices and herbs and Parmesan cheese!

2 Pounds Ground Chicken (or turkey (99% fat free))
1 Cup Plain Bread Crumbs
1 Cup Grated Parmesan Cheese
3 Tablespoons Egg Substitute (such as Egg Beaters brand)
1 Cup Jarred Marinara Sauce (Store Bought Or Homemade)
2 Teaspoons Dried Italian Seasoning
1/4 Cup Shredded Fat Free Mozzarella Cheese

Steps:

  • In a bowl mix together with your hands the ground chicken, bread crumbs, Parmesan cheese, egg, 1/2 cup marinara sauce and Italian seasoning until well combined.
  • Place meat mixture in the bottom of either a casserole crock-pot or a 5 quart or larger oval crock pot and shape into a loaf shape.
  • Pour the remaining 1/2 cup of marinara sauce over the top.
  • Cover and cook for 4 - 6 hours on LOW or 2 - 3 hours on HIGH.
  • During last 10 minutes of cooking sprinkle mozzarella cheese over top and cover again to let cheese melt.
  • Serve with a nice Caesar salad and some crusty bread for an easy meal and enjoy!

nonstick cooking spray
1 pound lean ground chicken
⅔ cup dry bread crumbs
¼ cup grated Parmesan cheese
¼ cup finely chopped onion, or more to taste
1 large egg, lightly beaten
2 teaspoons minced garlic
½ teaspoon dried basil
½ teaspoon dried thyme
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon ground black pepper
1 pinch chipotle chile powder
¼ cup marinara sauce, or more to taste
¼ cup shredded Italian cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x4-inch loaf pan with nonstick spray.
  • Mix together ground chicken, bread crumbs, Parmesan cheese, onion, egg, garlic, basil, thyme, oregano, salt, black pepper, and chipotle chile powder until well combined. Press into the prepared loaf pan and top with marinara sauce.
  • Bake in the preheated oven until no longer pink in the center, 40 to 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
