SLOW COOKED POLISH SAUSAGE, CABBAGE AND POTATO SOUP



Slow Cooked Polish Sausage, Cabbage and Potato Soup image

My version/combination of several other recipes. I only cook for myself but this lasts several days in the fridge for reheating portions. Delicious with a crusty roll!

2 small jacket potatoes (fist sized, would fit in a mug)
1/2 lb medium-course Polish sausage (I use half a pack of Torunska)
1 large onion
1/2 cabbage
2 reduced salt chicken stock cubes
sprinking garlic
sprinkling parsley
sprinkling black pepper

Steps:

  • Wash and dice the potatoes (no need to peel unless it's how you prefer them) and place them at the bottom of the slow cooker/crock pot. Two small potatoes approximately 450g total weight.
  • Slice the sausage length ways and then cut into slices. I personally slice them in half again so the pieces are roughly the same size (or slightly larger) than the diced potato. Put the sausage on top of the potatoes in the pot.
  • Finely dice the onion and add that on top of the sausage.
  • Chop the cabbage and add that on top of the onion.
  • Season with garlic, parsley and plenty of cracked black pepper. Don't add salt as the amount of salt coming from the sausage can vary.
  • Prepare the chicken stock to make up 1 litre (the stock cubes I use are 1 cube per 500ml so I mix two) and pour the stock over the other ingredients. Again, I use reduced salt stock cubes. You can always add more salt later.
  • Cook on high for 6 hours, medium for 8 hours or low for 10 hours (based on Morphy Richards slow cooker). Stir half way through to ensure everything gets a good 'submerging' or if you can't then closer to the finish time is fine.

This easy slow cooker Polish sausage soup is full of flavor. The kielbasa is cooked with cabbage, onions, and potatoes, along with optional tomatoes.

1 to 1 1/2 pound red-skinned or round white potatoes
1 to 1 1/2 pounds Polish kielbasa sausage
1 large onion (chopped)
1/2 medium cabbage (shredded or chopped)
1 quart chicken stock (low sodium or unsalted)
1 can (14.5 ounces) diced tomatoes (optional)
Kosher salt and freshly ground black pepper (to taste)
Optional: 4 to 6 strips bacon (diced)
Optional: 1/2 teaspoon caraway seeds

Steps:

  • Gather ingredients.
  • Dice the potatoes (peeled or not) into 1/2-inch cubes. Put the potatoes in the slow cooker .
  • Dice the sausage into 1/2-inch cubes.
  • Place a large skillet over medium heat. Add the diced bacon, if using, and cook until crisp . Drain on paper towels and then add to the slow cooker.
  • Wipe the skillet out and place it over medium-high heat. Add the diced sausage and onion . Cook while frequently stirring until the sausage and onions have browned. Drain well and transfer to the slow cooker with the potatoes.
  • Add 2 tablespoons of butter to the skillet along with the cabbage and place it back over medium-high heat. Cook while frequently stirring until the cabbage begins to brown. Transfer to the slow cooker.
  • Add the chicken stock to the slow cooker along with the tomatoes and caraway seeds if using.
  • Cover and cook on low for 7 to 9 hours.
  • Taste and add salt and pepper, as needed. Serve the soup with crusty bread .

1 lb Polish sausage, smoked, halved length-wise and chopped 3/4 inch
3 teaspoons extra virgin olive oil
6 cups chicken broth
2 cups water
1 head green cabbage, chopped
3 carrots, peeled and coarsely chopped
1 white onion, coarsely chopped
2 -3 garlic cloves, peeled
2 teaspoons caraway seeds
1 1/2 teaspoons italian seasoning
1 teaspoon celery salt
1 teaspoon garlic powder
1 teaspoon black pepper

Steps:

  • Heat skillet with olive oil over medium heat. Add chopped sausage and sautee until heated through.
  • Add sausage, cabbage, carrots, garlic, onion, caraway seeds, italian seasoning, celery salt, broth, and water to crock pot. Cook on high for two hours, stirring occasionally.
  • Add remaining seasonings to crock pot, stir well. Continue cooking on high for three more hours until carrots are soft and all cabbage is cooked throughout. Enjoy!

2 teaspoons caraway seeds, crushed (optional)
1 1/4 pound Polish sausage, cooked, halved lengthwise and cut into 1/2 inch slices
4 cups fat free chicken broth, or you can use water
Black pepper and salt, to taste

Steps:

  • Place potatoes, cabbage, carrot, onion, caraway seeds, sausage, pepper and salt in crock pot. Pour broth over all. Cover, cook on low for 10 to 12 hours or high for 5 to 6 hours.
