- In a small bowl, combine the brown sugar, mustard, horseradish and 2 tablespoons cola. Rub over ham. Transfer to a 5-qt. slow cooker; add remaining cola to slow cooker. Cover and cook on low until a thermometer reads 140°, 6-8 hours.

SLOW-COOKED HONEY-GLAZED HAM
The secret of this tender honey-baked ham is slow cooking. I start it in a low temp oven around 6 p.m. the night before if used for breakfast. If used for dinner, it can be started later in the evening, turned off and restarted the next morning. Don't use a spiral-sliced ham because it will dry out.

- Blend brown sugar, honey, molasses, orange juice, and mustard together in a saucepan over medium-low heat until thickened, about 45 minutes. Remove from heat. Let glaze sit until flavors blend, 8 hours to overnight.
- Preheat oven to 225 degrees F (110 degrees C). Place ham in a roasting pan.
- Bake in the preheated oven, checking occasionally, about 10 hours. If ham begins to darken at that point, cover with aluminum foil. Continue baking, about 2 hours more.
- Increase oven temperature to 275 degrees F (135 degrees C). Bake, coating ham thoroughly with the glaze mixture every 30 minutes, about 2 hours more. Remove from the oven and let stand 15 to 20 minutes before slicing. Serve any remaining glaze with ham, if desired.

SLOW COOKED HAM AND POTATO CHOWDER
This recipe is great to use up leftover ham from holiday dinners. It is warm and hearty and is very easy to make in your slow cooker. - Whisk 3 cups warm water with chicken soup base in slow cooker until soup base has dissolved; stir in cream of chicken soup until almost smooth.
- Stir potatoes, ham, corn, yellow onion, and butter into the soup mixture.

FORK TENDER SLOW-COOKED BAKED HAM

- Wash ham and pat dry with paper towels.
- Score ham with a sharp knife in a diagonal pattern. Repeat scoring, diagonally, in the opposite direction to create a criss-cross pattern. Randomly insert cloves at the crossings.
- Place the ham fat side up on a large enough sheet of heavy duty aluminum foil to securely wrap it. (The melting fat will baste your ham while it cooks.).
- In a small saucepan combine 1/3 cup butter, 3/4 cup maple syrup and the the next six (6) ingredients; cook over medium heat and bring to a full boil, stirring frequently. Reduce heat and cook one (1) minute.
- Brush ham with maple glaze. (Any leftover glaze can be warmed up and served with ham.)
- Lay orange slices on top, and place one slice of ginger on each side of the ham.
- Wrap up the ham; place in crock-pot.
- Cover and cook on HIGH for one (1) hour, then reduce the heat to LOW and contiune to cook for 6 to 7 hours, or until the meat thermometer registers 160 degree F.
- Remove the ham from the crock-pot; let sit for a few minutes before removing from the foil.
- Meanwhile, in a skillet, melt the 2 tablespoons of butter over medium heat. Add the apples, raisins, remaining maple syrup, vanilla and apple pie seasoning. Cover and cook for 10 minutes, or until apples are tender -stirring occasionally.
- Place ham on a warmed serving platter. Drizzle the juices from within the foil over the ham.
- Slice ham; serve with the apples.
- COOK'S TIP: The leftovers make delicious Monte Cristo sandwiches or split pea and ham soup. Another idea, cube the leftover ham and freeze it in 1-cup packages to use in casseroles.

- Combine the tomato paste, Worcestershire sauce, red pepper flakes and paprika in a 5-to-6-quart slow cooker. Add the ham, beans, bay leaf and thyme. Pour in 4 cups water; cover and cook on low, undisturbed, 8 hours.
- Pour the tomatoes into a bowl and crush them with your hands. Add the tomatoes and their juices, the scallions and garlic to the slow cooker. Cover and cook 30 more minutes.
- Remove the ham from the slow cooker and transfer to a cutting board to cool slightly before slicing. Set aside about one-third of the ham and 3 cups of the stewed bean mixture to make Ham Jambalaya. Serve the remaining ham with the bean mixture.

SPANISH SLOW COOKED HAM WITH SHERRY VINEGAR AND TOMATO: SALPICON DE JAMON
Steps:
- Cut the fresh and smoked ham into large pieces about 3 inches by 3 inches and set aside.
- In a large stockpot, saute the carrots and onions. Add 3 tablespoons of tomato paste and carmelize the mixture. Add the pieces of fresh and smoked ham. Add enough water to cover (approximately 1 gallon). Add the bay leaves and white wine and then bring to a boil and cook until very tender, about 1 1/2 hours, adding more water as needed. Strain and reserve the liquid.
- Shred the meat and set aside.
- In a medium size skillet, saute the julienne tomato and onion. Add the garlic cloves. Crush the canned tomatoes by hand and add to the mixture. Add the sun-dried tomatoes. Add the Sherry vinegar and cook for 5 minutes. Add the shredded ham and slow cook for 15 minutes (add the reserved cooking liquid from the ham to keep stew moist at all times). Season with salt and pepper and serve with yellow rice.

This is an easy and satisfying way to transform leftover ham and a ham bone into a hearty meal. It's slow cooked with a nice mix of garden vegetables and dried beans. - 1. Pick over the dry beans and discard any broken or shriveled looking ones. Rinse beans several times. Place in a 6 ½ quart crock pot with about 3 quarts water, the vinegar and 2 Tbsp Cajun seasoning. Set on warm and allow beans to soak overnight about 10 to 12 hours.
- 2. The next morning, drain the beans and discard the water. Place beans back into the slow cooker along with the ham bone. Add chicken broth, enough to cover beans and ham bone. Add remaining ingredients (except for the diced tomatoes) and add the remaining 1 Tbsp Cajun seasoning. Turn cooker to HIGH and cook beans until they're tender and cooked through, 6 to 7 hours.
- 3. The last hour of cooking remove ham bone and cut any meat left on bone and return to cooker. Add tomatoes. Adding tomatoes sooner may work against the beans becoming soft causing them to be tough.
- 4. Serve with cornbread or a nice crusty roll.
