Sesame Chicken and Melon image

This is inspired by another recipe from a recipe book put out by Costco®. I'm trying to cut down on carbs and this seemed like a yummy way to do so!

Number Of Ingredients 9

2 Tbsp vegetable or peanut oil
4 chicken breasts, boneless and skinless, cut into chunks
1 Tbsp soy sauce
2 Tbsp mirin
6 clove garlic, thinly sliced
1 Tbsp ginger, minced fresh
2 bunch green onions, chopped
1/2 c toasted sesame seeds
4 c cantaloupe, diced

Steps:

  • 1. Heat oil in wok over high heat. Add chicken and stir-fry until they begin to get brown.
  • 2. Reduce heat to medium. Add soy sauce, mirin, garlic and ginger. Stir-fry until most of liquid is gone.
  • 3. Add green onions and sesame seeds. Sauté until chicken is done.
  • 4. Arrange melon on 4-6 plates and top with chicken.
