Number Of Ingredients 13

3 tablespoons oil or other fat
2 pounds ground meat of your choice, such as turkey, lamb, pork, beef, chicken, etc.
1 teaspoon cayenne or smoked paprika
1/2 teaspoon ground cumin
Salt and pepper
1/2 cup chopped onion (about 1 small)
2 cloves garlic, minced
1 cup tomato product of your choice, such as sauce, crushed, diced, etc.
1 cup liquid of your choice, such as water, stock, beer, etc.
1/4 cup mustard
1/4 cup brown sugar, optional
6 to 8 tortillas or buns
Optional toppers: diced avocado, chopped tomatoes, fresh cilantro leaves, lime wedges, sliced radishes, shaved cabbage, sliced jalapenos

Steps:

  • Heat a large pan over medium heat and add the oil. When hot, add the meat, cayenne, cumin and some salt and pepper. Cook, without stirring, until the meat is browned on the bottom, about 5 minutes. Break it up with a wooden spoon, then add the onions and garlic and cook for 2 more minutes.
  • Add the tomato, liquid, mustard and sugar, if using, to the pan and bring to a simmer; simmer for 5 minutes.
  • Toast the tortillas or buns. Serve the sloppy joe mixture on the tortillas or buns and top with your favorite toppers.

1-1/2 pounds extra-lean ground beef (95% lean)
1 can (15 ounces) tomato sauce
3/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper
12 taco shells, warmed
Optional toppings: Shredded lettuce, shredded cheese, chopped tomatoes, avocado and olives

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, breaking into crumbles. Stir in the tomato sauce, garlic powder, salt, pepper and cayenne. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes., Fill each taco shell with 1/4 cup beef mixture and toppings of your choice.

1 lb lean (at least 80%) ground beef
1 box (4.6 oz) Old El Paso™ taco shells (12 shells)
1 can (15.5 oz) sloppy joe sauce
1 small red bell pepper, chopped (1/2 cup)
1 can (11 oz) whole kernel sweet corn, drained
1 can (2 1/4 oz) sliced ripe olives, drained
1 cup thinly sliced romaine lettuce
1/2 cup shredded Colby-Monterey Jack cheese (2 oz)

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain.
  • Meanwhile, heat taco shells as directed on box.
  • Stir sloppy joe sauce, bell pepper and corn into ground beef. Cook 2 to 3 minutes longer, stirring occasionally, until mixture is hot and bubbly.
  • Spoon about 1/4 cup beef mixture into each warm taco shell; top with olives, lettuce and cheese.

Number Of Ingredients 16

1 lb lean ground beef
1/2 cup onion (chopped fine)
1/4 cup green pepper (chopped fine)
1 jalapeno pepper (seeded and chopped)
3 tablespoons cooking oil
1 cup water
4 tablespoons chili powder
2 tablespoons cumin
1 tablespoon paprika
1 tablespoon ground mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1 dash ground black pepper
1 dash red chili pepper flakes
1 cup aged cheddar cheese (shredded)

Steps:

  • In a large hot skillet, add cooking oil and brown off ground beef.
  • Using a slotted spoon, put cooked beef onto paper towels to drain.
  • In the same skillet, combine chopped green pepper, onions, and jalapeno, and cook for 5 minutes over medium heat.
  • When onions are translucent, add cooked beef back into the pan.
  • Add water and stir.
  • Add chili powder, cumin, paprika, mustard powder, garlic powder, onion powder, salt, pepper and red chili flakes to the beef mixture and mix thoroughly.
  • Reduce heat to low and simmer covered for 10 minutes. Add more water if mixture gets dry.
  • Place the bottom half of 4 burger buns on a baking sheet.
  • Spoon meat mixture evenly between burger buns and top each bun with 1/4 cup of shredded cheese.
  • Place baking sheet under broiler until cheese has melted and starts to brown.
  • Remove and serve hot.
  • Make a quick salsa side dish by combining chopped tomatoes, green pepper, cucumber, green onion, kernel corn, olive oil, lemon juice, cilantro, salt and pepper.

Steps:

  • For lime sour cream:
  • Mix sour cream, lime zest, lime juice, cilantro, and vinegar in a medium bowl; season with salt. Cover and chill at least 1 hour or up to 1 day.
  • For filling and assembly:
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook beef, breaking up with a spoon, until cooked through, about 5 minutes. Transfer to a large bowl. Reduce heat to medium. Heat remaining 1 tablespoon oil in skillet. Add onion and garlic; cook, stirring occasionally, until just beginning to brown, about 5 minutes.
  • Preheat oven to 400°F. Add tomatoes to skillet; cook, breaking up, until thickened, 8-10 minutes. Add beef; chili and Worcestershire sauces; chile, garlic, and onion powders; sugar; and cumin. Cook, stirring, until flavors meld, 10-12 minutes. Spread in a 13x9x2" baking dish; bake until a crust forms, 30-40 minutes. Serve filling in shells with toppings.
