12 ounces andouille sausage
1 tablespoon olive oil or vegetable oil
1 pound ground pork
2 tablespoons fresh thyme, finely chopped
3 to 4 cloves garlic, chopped
2 ribs celery, chopped
1 onion, chopped
1 green bell pepper, seeded and chopped
Salt and freshly ground black pepper
1 cup tomato puree or tomato sauce
1 cup chicken stock
2 tablespoons hot sauce, such as Frank's Red Hot
2 tablespoons light brown sugar
2 tablespoons red wine vinegar
2 tablespoons Worcestershire
Portuguese or sesame rolls
Chopped hot pickled vegetables (giardiniera)
Scallions
Chopped sweet bread and butter pickles

Steps:

  • Remove the casing from the sausage and chop.
  • Heat the oil in a deep skillet over medium-high heat, add the sausage and brown. Remove to a plate. Add the pork and brown. Then add the thyme, garlic, celery, onions, peppers and some salt and pepper. Cook, partially covered, 8 to 10 minutes. Add the andouille, tomato sauce, stock, hot sauce, sugar, vinegar and Worcestershire. Reduce the heat, stir and simmer to thicken. Cool and store for a make-ahead meal. Reheat over medium heat. Serve on warm rolls with the toppings of your choice.

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

2 tablespoons unsalted butter
1 medium onion, diced
1 green bell pepper, diced
1 clove garlic, minced
1 pound lean ground beef
12 ounces (1 1/3 cup) tomato sauce
3/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon red wine vinegar
1 teaspoon paprika
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
6 hamburger buns, toasted

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

2 pounds ground beef
2 medium onions, chopped
2 to 3 garlic cloves, minced
2 cups ketchup
1 cup barbecue sauce
1/4 cup packed brown sugar
1/4 cup cider vinegar
2 tablespoons prepared mustard
1 teaspoon Italian seasoning
1 teaspoon onion powder
1/2 teaspoon pepper
12 hamburger buns, split

Steps:

  • In a large skillet, cook beef, onions and garlic over medium heat until the meat is no longer pink, breaking meat into crumbles; drain. Stir in ketchup, barbecue sauce, brown sugar, vinegar, mustard, Italian seasoning, onion powder and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Serve on buns., Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

2 tablespoons vegetable oil
1 1/4 pound ground turkey
1 carrot, grated
1/2 yellow onion, diced
One 6-ounce can pineapple juice
2 tablespoons tomato paste
1 cup chicken stock
1/2 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
One 15-ounce can tomato sauce
Kosher salt and freshly ground black pepper
8 whole wheat buns, buttered and toasted
Bread and butter pickles

Steps:

  • Heat a large skillet over medium heat and add 1 tablespoon of the vegetable oil. Add the turkey to the pan and brown until it is no longer pink and the meat crumbles, 8 minutes. Remove the turkey from the pan and set it aside in a bowl or plate. Add the other tablespoon of oil to the pan, followed by the carrot, onion and 2 tablespoons of the pineapple juice, and cook until the onion becomes translucent, 8 to 10 minutes. Add the tomato paste and cook for 2 minutes. Next, add the chicken stock, ketchup, mustard, Worcestershire sauce, tomato sauce and the remaining pineapple juice. Bring to a boil, reduce to a simmer and cook uncovered until thickened and reduced by one third, 15 to 20 minutes. Add the cooked turkey to the sauce and stir to combine. Cook for 6 to 8 minutes, to warm through. Season with salt and pepper.
  • Scoop the sloppy lo mixture evenly onto the buns and top with the pickles. Serve with 14 napkins, preferably near a bathtub.
