This version of Sloppy Joes ups the nutrition ante by swapping the meat for lentils, and adding in extra veggies. Adjust this recipe to how you prefer your Sloppy Joes--make them sweeter with additional molasses, spicier with additional chili powder, or tangier with additional mustard. Serve warm, with your favorite rolls or buns, and top with sliced red onion and fresh spinach or lettuce, if desired.

1 tablespoon vegetable oil
1 large onion, chopped
1 large carrot, peeled and chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 ½ teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon freshly ground black pepper, or to taste
4 tablespoons tomato paste
2 cups water
1 (14.5 ounce) can no-salt-added diced tomatoes
1 cup red lentils, rinsed and drained
2 tablespoons molasses, or more to taste
1 tablespoon Worcestershire sauce
1 teaspoon prepared yellow mustard
1 teaspoon apple cider vinegar
¾ teaspoon kosher salt, or to taste
6 medium hamburger buns, split

Steps:

  • Heat vegetable oil in a large skillet over medium heat. Add onion, carrot, bell pepper, and garlic. Cook, stirring frequently, until vegetables are softened, 7 to 9 minutes. Season with chili powder, cumin, paprika, onion powder, garlic powder, and black pepper. Cook and stir for 30 seconds. Mix in tomato paste, and cook another 60 seconds, stirring constantly.
  • Add water, diced tomatoes, and lentils, stirring to combine. Bring mixture to a gentle simmer, cover, reduce heat to low, and cook until lentils are tender, but not falling apart, 15 to 20 minutes.
  • Mix in molasses, Worcestershire sauce, mustard, vinegar, and salt. Cook, uncovered, an additional 10 minutes, or until mixture has thickened slightly. Taste, and adjust seasonings as needed. Allow to cool 5 minutes before serving on buns with desired toppings.

1 pound ground beef
1/2 cup chopped onion
1 garlic clove, minced
2 cups water
1 can (8 ounces) tomato sauce
1/2 cup dried lentils, rinsed
1/2 cup ketchup
1 teaspoon cider vinegar
1/2 teaspoon ground mustard
1/4 teaspoon pepper
6 to 8 hamburger buns, split

Steps:

  • In a skillet, cook beef, onion and garlic over medium heat until meat is no longer pink; drain. Add the water, tomato sauce, lentils, ketchup, vinegar, mustard and pepper. Bring to a boil. Reduce heat; cover and simmer for 60-70 minutes or until lentils are tender. Serve on buns.

1 small red bell pepper, chopped (or green bell pepper)

Steps:

  • Heal the oil in a skillet over medium heat; add in the onion and bell pepper; cover, and cook about 5 minutes, until softened.

Sloppy Joe Lentils (Slow Cooker or Crock Pot) image

This is a semi-homade version inspired by the other sloppy joe lentil recipes here (thanks, guys!). This is for the 5-6 qt. slow cooker too. Hubby tried it and liked even though he's a carnivore. I made this one afternoon and froze half of the batch for another time. With a 6 qt. slow cooker, you can probably double the recipe easily (I ended up adding extra lentils to the recipe because I used too much water at first...ended up with 1.5lb. lentils and I still had plenty of room in my crock pot).

3/4 cup brown lentils, dried
1 teaspoon ground cumin
1 teaspoon thyme, dried
1 cup water, divided
2 cups plum tomatoes, diced
1 bay leaf
4 (6 inch) whole wheat pita bread, cut in half
1/2 cup Greek yogurt, plain
1 cup cucumber, thinly sliced
of fresh mint, chopped (optional)

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add onion, garlic, salt, pepper, and vegetarian burger; cook 5 minutes or until vegetables are tender, stirring occasionally to crumble up the vegetarian burger.
  • Add lentils, cumin, and thyme; stir until seasonings become fragrant. Add 1/2 cup water, tomatoes, and bay leaf; bring to a boil. Cover, reduce heat to medium, and cook 15 minutes or until lentils are tender and mixture is thick (add additional water as needed). Discard bay leaf.

1/2 cup ketchup
1 teaspoon mustard powder
1 tablespoon chili powder
3 tablespoons rapadura, molasses, or honey
1 Tbsp white vinegar
salt and ground black pepper to taste
4 hamburger buns, split
cheddar cheese, grated (to top your lentils when serving)

Steps:

  • Combine all your ingredients in the crock pot (besides the buns and cheese!). Turn on low and cook for approximately 5 hours, until lentils are tender and the mixture has thickened and absorbed most of the liquids. Serve on open faced hamburger buns and top with melted cheese, as desired.
