PIG SLOP
This is a favorite dish in my family, it's so easy to make and tastes great! My mom couldn't think of a good name for the casserole so she asked my brother and I for help coming up with the name. We named it 'Pig Slop' and as gross as the name sounds, it just works. You can call it Bean Casserole if the original name grosses you out! My mom would always serve this dish with cornbread, either on the side or she'd put the Pig Slop over the cornbread.

SIMPLE CHICKEN SLOP

- 1. Cut up chicken into bite-sized pieces. Cook chicken and onion in a dutch oven with oil. Cook until chicken is cooked through and onion tender.
- 2. Add chicken broth, cream of celery soup, mixed vegetables, and noodles. Mix through. Add salt, pepper and lemon pepper to taste. Bring mixture to a boil.
- 3. Reduce to simmer. Cover and cook for 45 minutes or until vegetables are tender checking and stirring mixture every 10-15 minutes.

MEXICAN CHICKEN SLOP
I love this recipe!!! it comes out a bit runny so don't worry. Also, it tastes even better the next day as leftovers! My suggestions are to maybe fry the tortillas a bit before layering, and if you want, add even more hot salsa to the chicken mixture. If you don't want it to spicy, you can spread mild salsa on top of the cheese when layering, but be sure to use hot salsa for the final layer. ENJOY!

- Place a layer of corn tortillas ontop of chicken.
- Sprinkle about a cup of cheese ontop of chicken.

- Let the chicken breast thaw for about 30 minutes.
- While thawing the chicken pour the rice (half a bag) into a rice cooker filled with water and let steam till the rice is big and soft.
- After the chicken has thawed set the stove on high and get a medium size sauce pan.
- Place the butter in the pan (with choice of seasoning) and a splash of water until they start to sizzle.
- Place chicken breast into the pan and grill till cooked thoroughly.
- While grilling the chick on the stove mix and prepare the Cream of Chicken soup with the milk till warm and soupy.

Bob Evan's restaurants makes this on their breakfast menu (they call it country Biscuit Breakfast), but I took one look at it, and said to my husband they should call it "Breakfast Slop" instead. Despite the not too encouraging name, this is really good, and one of the better things you can have for breakfast at Evans. You'll like this a lot if you are a fan of biscuits and gravy, because this basically is the magnum opus of that sort of thing. At Evans they serve this with home fries (hash browns) and that or something like grits would be just great. Enjoy!

- Prepare biscuits if not already made.
- Brown sausage in a large skillet, crumbling it as it cooks and draining any fat.
- Melt butter in a different large skillet and stir in flour.
- Cook flour, stirring, over low heat until it just starts to change color (it doesn't need to get dark/coffee brown).
- Whisk in milk, salt and pepper and continue stirring until mixture thickens to your liking.
- If you like the gravy thicker, stir a little flour into a small amount of milk until smooth, and whisk that into the gravy; if you like it thinner, just add more milk and stir until blended.
- Cook eggs singly in a small skillet either sunny-side-up or over-easy, whichever you prefer (this is best when the yolk is still a little runny).
- For each serving, split biscuit and place on plate.
- Top biscuit with crumbled sausage and cover with fried egg.
- Cover egg with milk gravy and sprinkle with cheddar cheese.
- If you like the cheese melty, nuke it (microwave) for 30-45 seconds on high.
- Serve with hash browns or cheese grits, if desired.

CADILLAC JACK'S " POKER SLOP" BREAKFAST
Ha Ha!! NOT FOR THE DIET CONCIOUS!!! This comes from when I was a restaurant supervisor at Cadillac Jack's Diner/Casino in Deadwood, SD. The poker player guys that stayed at the casino for hours, even days on end would order breakfast and sometimes couldn't make up their minds between having an omlette and hashbrowns or biscuits and gravy with eggs and bacon/sausage so this is what one of the brilliant cooks came up with!! It never was on the menu (should of been!!) and now no one is there that knows how to make it. But the legend lives on.....

- Melt enough butter to cover pan/part of flat grill and sautee onions and green peppers until transclucent. Then add mushrooms and sautee.

- Ok it may not sound appetizing but you'll get the image with the finished product.
- Start off with the tuna--drain it and put it in a bowl, a little vinegar to moisten it and then add the mayonnaise--basically make tuna mayonnaise.
- After that chop up one tomato into small strips/cubes and do the same with the cheese, ham, celery and cucumber.
- Throw all that into the mix and add a generous tablespoon of coleslaw and a smaller helping of cottage cheese and mix it up thoroughly.
- With this you can literally raid your cupboards and add anything you find.
- Pork Pies, Scotch eggs-- absolutely anything can go into this mix up, its basically a way of using up all those leftovers.
- One bowl can make about 6/8 generous sandwiches or even as a side dish and as long as you use the low fat substitutes for mayonnaise and cottage cheese etc. it's pretty healthy too.
