Why harden your arteries with mounds of sausage when you could make a lighter, healthier alternative? This turns out fantastic and is a lot easier on the waistline than the traditional favourite.

8 slices multigrain bread, crusts removed and cubed
1 cup grated low-fat cheese (the sharper the better)
1/2 cup onion, minced
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
8 eggs (omega 3)
2 cups skim milk
1 teaspoon mustard powder
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt
8 ounces crab, chopped (artificial is fine)
1 cup corn flakes or 1 cup muesli
cooking spray

Steps:

  • In a greased 9x13 pan, toss bread cubes with cheese.
  • Top with onion and peppers.
  • In a medium bowl, beat together eggs, milk, mustard powder, salt and worcestershire sauce.
  • Pour egg mixture over bread and cheese.
  • Top with chopped crab (you could substitute lean ham as well).
  • Let sit overnight in the refrigerator.
  • In the morning, preheat the oven to 400°F Sprinkle the cereal overtop the casserole, and spray lightly with cooking spray.
  • Bake for 55 minutes (or until set).

I certainly cannot take credit for this recipe but it is a Christmas classic. There are lots of little things to personalize this recipe. I have suggested using red and green bell peppers because they are Christmas colors! I also use grated cheese and spread it over the Canadian bacon instead of cheese slices. I have used regular bacon in this recipe, but I find that it overpowers the rest of the flavors. Make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning; let it cook while you open gifts and sip your rum-spiked coffee!

16 slices bread, crusts removed - divided
16 slices Canadian bacon
16 slices sharp Cheddar cheese
6 large eggs
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon dry mustard
¼ cup minced onion
2 tablespoons diced green bell pepper
2 tablespoons diced red bell pepper
2 teaspoons Worcestershire sauce
1 dash hot sauce
3 cups whole milk
½ cup butter, melted
1 cup crushed corn flakes cereal

Steps:

  • Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to fit over entire bottom of dish. Cover bread with slices of Canadian bacon and sharp Cheddar cheese. Cut and fit remaining 8 slices of bread to completely cover bacon and cheese.
  • Whisk eggs with salt and black pepper in a bowl. Whisk dry mustard, onion, diced green and red bell pepper, Worcestershire sauce, and hot sauce into eggs. Whisk in milk until egg mixture is smoothly combined. Pour egg mixture evenly over the casserole. Cover the dish and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour melted butter evenly over the casserole and sprinkle corn flake crumbs over the top.
  • Bake in the preheated oven until set and lightly browned, about 1 hour. Let casserole stand for 10 minutes before serving.

Wife Saver image

An easy version of what my Mother always called "Christmas Morning Wife Saver". Easy to prepare and cooks just long enough for the kids to open their presents. I like to serve it in the evening as a psuedo quiche. The addition of sage to the ground turkey makes it taste a lot like a sage sausage.

1 -2 russet potato
3/4 lb ground turkey or 3/4 lb lean ground beef
2 teaspoons garlic salt
1 teaspoon pepper
1/2 teaspoon sage
6 eggs
1 cup milk
1/2 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Thinly slice potatoes.
  • Line an 8x8 greased pan with the potatoes.
  • Mix ground turkey, garlic salt, pepper, and sage in a bowl.
  • Brown seasoned meat and drain the meat well.
  • Place seasoned meat on top of the potatoes.
  • Mix egg and milk together.
  • Pour egg mixture on top of potatoes and meat.
  • Bake for 40 to 50 minutes.
  • Sprinkle cheese on top of casserole just prior to removing casserole from oven, just long enough to melt it.
