¼ cup balsamic vinegar
¼ cup lemon juice
¼ cup soy sauce
1 teaspoon salt
1 tablespoon brown sugar
1 ½ teaspoons ground ginger
1 teaspoon paprika
1 teaspoon black pepper
1 teaspoon crushed red pepper flakes
4 cloves garlic, minced
¼ cup chopped green onions
1 teaspoon sesame oil
½ cup peanut oil
8 (4 ounce) skinless, boneless salmon fillets

Steps:

  • Stir balsamic vinegar, lemon juice, and soy sauce with salt, brown sugar, ground ginger, paprika, pepper, and red pepper flakes until the salt has dissolved. Stir in garlic, green onions, sesame oil, and peanut oil until well combined.
  • Pour marinade into a resealable plastic bag or glass bowl. Add salmon to marinade and gently toss to coat. Place into refrigerator and marinate 2 to 24 hours.
  • Prepare an outdoor grill for medium-high heat.
  • Drain excess marinade from salmon fillets. Grill until firm and opaque, about 4 minutes per side.

These cakes will make a salmon volunteer for the honor to be in this dish. I love these crispy little suckers and so does Dugan. The delicious sauce I blatantly stole from my friend Chef #119466 who blatantly stole it from Cooking Light. There is no honor among thieves.

Number Of Ingredients 20

6 tablespoons fat-free mayonnaise
2 teaspoons capers
1/2 teaspoon lemon juice
1/2 teaspoon fresh lemon rind
1/4 teaspoon fresh black pepper
1/8 teaspoon red pepper flakes
1/4 cup red bell pepper, diced (I sometimes use jarred or drained pimientos)
1 teaspoon garlic, minced
4 green onions, chopped
1/4 cup mayonnaise
2 tablespoons lemon juice
1/2 teaspoon seasoning salt
1/2 teaspoon Old Bay Seasoning
1/8 teaspoon dried dill
1/8 teaspoon cayenne
1 small egg, beaten
4 tablespoons dry breadcrumbs
14 3/4 ounces pink salmon, skin and bones removed and flaked
1 cup crushed corn flakes (not too finely or they won't be crunchy like I like them) or 1 cup panko breadcrumbs
vegetable oil, for frying

Steps:

  • Combine ingredients for the Gayla sauce and refrigerate.
  • Sautee red pepper about 3 minutes in a non stick skillet in some butter or margarine. Add chopped garlic for the last thirty seconds.
  • Combine peppers and garlic and all the rest of the ingredients except corn flakes in a bowl and mix together.
  • Make four equal sized balls of this mixture and roll well into cornflake crumbs. Pat crumbs firmly and make sure it is well coated.(Balls will be about the size of a small baseball).
  • Place balls on platter and press into patties about 1 inch thick.
  • Fry immediately in a few tablespoons of hot oil in a non stick skillet on medium high heat. (You don't want them to sit around too long or the cornflakes will absorb moisture from the patties and not fry up as crispy.) Sear them quickly but of course, do not burn them about 3 or 4 minutes a side.
  • NOTE: After mixing all the ingredients together you may refrigerate this to stiffen mixture up but I don't find it necessary unless you have used a very large egg. You may also make everything ahead of time and refrigerate. Simply remove about an hour before dinner and bring to room temperature or they will be hot on the outside but cold in the middle. Just don't roll in the cornflake crumbs until the last minute.
  • Another Note: For a nice variation feel free to add 1/2 tsp or so of cumin to give these a "Tex-Mex" taste topped with some chili con queso. Yum! Be creative! This is a drop-to-the-floor-crawl-to-the-door moist patty. Make it as directed the first time and then EXPERIMENT! Make it your own.

This is the easiest and most delicious meal that I make! It turned my non-fish eating husband into a salmon maniac! It is quick simple and so luxurious. I have wowed many a guest with this simple recipe.

1 lb salmon fillet (preferrably fresh but frozen works well too! Just cook it alittle longer.)
blackening seasoning (I like Zatteran's found at most supermarkets)
olive oil

Steps:

  • Remove salmon from package and rub with blackening seasoning on skin free side.
  • Use just enough to cover the piece of fish but not so much that you can't see the pink behind the seasoning.
  • Heat grill pan on med heat and brush lightly with olive oil (very lightly) Place salmon skin side down on pan and cook on med heat until half of the salmon (from the bottom up) is opaque.
  • Flip salmon and remove skin (it will peel off very easily and usually in one piece- I place it in a small plastic bag and tie it before dropping it in the garbage can to reduce fishy odors) Cook another 5-8 minutes until the entire piece of fish is opaque and runs with a white milk like substance (healthy omega fatty acids) Serve immediately with rice or potato and veggie of your choice for a healthy meal that tastes like you're at a restaurant even when you cooked it yourself!

2 lb fresh salmon cut in 4 pieces
3 Tbsp sorrento lemon olive oil-or sub extra virgin olive oil with zest 1 lemon
2 Tbsp feiny's chesapeake bay rub-or favorite seafood seasoning
1 tsp maui onion sea salt-or sub favorite sea salt
STUFFING
8 oz crab meat
1/3 c panko bread crumbs
2 Tbsp sorrento lemon olive oil-or sub extra virgin olive oil with zest 1 lemon
2 Tbsp butter, unsalted softened
2 Tbsp scallions, chopped
2 small chili peppers medium heat, chopped
1 Tbsp asian fried garlic-can sub 1/2 tsp garlic
1 tsp feiny's chesapeake bay rub-or favorite seafood seasoning

Steps:

  • 1. Drizzle olive oil on both sides of salmon pieces. Rub chesapeake bay rub on salmon filets. Cut (slits) pockets in the middle of salmon filets about 3/4 of the way.
  • 2. Combine stuffing ingredients together in a mixing bowl. Stuff salmon pockets with crab stuffing and place on oven proof pan. Add butter to pan and drizzzle a little olive oil on top of salmon.
  • 3. Meanwhile preheat oven to 380 degrees F. Bake for 15-20 minutes or until fish is done.

SLAMMIN' SOUTHWESTERN SALMON PATTIES OR SALMON CAKES

I was hungry for salmon patties, wanted something fresh tasting and healthy. Was also hungry for cilantro. This is what I came up with, it will be my only way to cook canned salmon from now on...hope you enjoy! *Note: the amounts for onion, peppers and herbs are approximate. I typically use more of all and especially more sriracha...use your discretion!

1 (14 3/4 ounce) can salmon
1 cup old fashioned oats (NOT quick cooking!)
1/3 cup skim milk
1 egg (I use 1/4 c eggbeaters, southwestern style)
1/8 cup red onion, finely minced
1/8 cup bell pepper, finely minced
2 -4 tablespoons cilantro, fresh and minced
2 -4 tablespoons chives, fresh and minced
1 dash garlic powder
1 dash lime juice
1 -2 tablespoon sriracha sauce
1/8 cup cheese, shredded (I use Soy-Sation 3 cheese blend from TJ's)

Steps:

  • Mix all ingredients together in bowl. Cover with plastic wrap and let sit, refrigerated for at least half-hour to allow flavors to blend.
  • Heat non-stick skillet on med-hi, spray with olive oil spray.
  • Form patties and cook in skillet for about 5 mins each side or until outside is crispy.
  • The cheese helps the patties stay together and keeps everything moist. Yum!

On a snowy night when I didn't get out to the store,I needed something for dinner.So I raided the pantry,and came up with this simple recipe. Hope you give it a try.

1 14.75oz can(s) red salmon, canned
1 large egg
1 tsp dijon mustard
1 Tbsp mayonnaise
1/2 tsp dill, dried
1/2 tsp white pepper
1/8 tsp salt
2 Tbsp green bell pepper (minced)
3 sprig(s) scallions (minced)
1/4 c bread crumbs, whole wheat

Steps:

  • 1. Mix, and mold into uniform patties. Chill for 10min. If you want to keep your carbs down,replace bread crumbs with Almond flour.
  • 2. Fry in 2 T olive oil,and a pat of butter, until golden on both sides. Then place in a 350 oven for 15min. Serve with Horseradish cream sauce
  • 3. For the sauce:) Mix 2T. mayo 1T.sour cream 1/2 t. dill weed 1/8t.salt horseradish to taste dash Worcestershire sauce 1/2 t.white pepper 1/2t.onion powder 1/2 of a lime,juice

SLAMMIN' CEDAR PLANK SALMON

2 teaspoons freshly grated pepper
1 tablespoon lemon peel, minced
1 large garlic clove, minced
1 tablespoon fresh tarragon, minced
1 tablespoon fresh basil, minced
1 tablespoon paprika
1 Tablespoon Sea salt crystals
2 teaspoons light brown sugar
2 6 oz. salmon fillets with the skin removed.
1 cedar plank
1 lemon, cut in wedges

Steps:

  • Soak the plank for at least 5 hours. I usually fill my plastic cooler with water the night before, put the plank in, and then put a brick on top to keep it submerged. Make a rub by mixing the pepper, lemon peel, garlic, tarragon, basil, paprika, sea salt, and brown sugar. Place the salmon fillets on a sheet of wax paper on a plate or a pan and work the rub into both sides with the back of a spoon or your fingers. Place the fillets in the refrigerator for at least 2 hours. When you are ready to barbecue, remove the plank from the water and lightly oil the top surface before placing the salmon. Squeeze a little lemon juice over the top of each fillet. Preheat the barbecue on high for at least ten minutes. Turn the barbecue to medium heat, place the plank with the salmon on the grill, and cover. Keep a spray bottle handy in case the planks catch on fire (they will). Cook until the internal temperature of the salmon is 120 degrees (8 to 10 minutes). The fish will turn pink and smoky brown, and the plank will be completely charred underneath. I like to have a second plank ready to serve the salmon on.

This recipe was something I saw on Iron Chef but I have modified it to fit my taste. It is a fantastic mixture of textures. The crust is primarily made up of Panko,a Japanese breadcrumb that I am really amazed by. You can find it in pretty much any grocery store. The marinade for the fish is something I discovered when I lived in Santa Cruz, CA. It's called Soy Vay and is now available in any grocery store. It is a ginger, sesame, soy, garlic mixture and it is FULL of flavor.

2 salmon fillets, skin removed
1/2 cup asian sesame dressing, Ken's
1/2 cup panko breadcrumbs
2 tablespoons roasted unsalted peanuts, chopped
2 tablespoons sweetened flaked coconut

Steps:

  • Preheat oven to 400°.
  • Place fish in plastic bag or glass dish with Marinade. Let sit in fridge for at least 1 hour.
  • Mix panko, peanuts and coconut in a shallow dish.
  • Dredge on side of the fillets in the panko mixture.
  • In an oven safe skillet, heat 1 Tbsp olive oil on medium high heat.
  • Place fish in skillet, panko side down, but be careful--it will splatter a bit.
  • Leave the fish to sizzle away for 3 minutes. Do not move it.
  • Flip the fish over and place entire pan in the oven for 15 minutes.
  • Enjoy.

I love appetizers and I love salmon, this really kicks it up a notch! You can put this on a toasted bagel open faced, put it on a ritz, or wrap it up in crescent rolls and bake it, chop the onions finely for that one lol.

2 - bagels or 2 sleeves of ritz crackers
8 ounce(s) salmon cream cheese spread
1 tablespoon(s) lemon juice
1 tablespoon(s) hot horseradish
2 teaspoon(s) dried dill weed, divided
4 ounce(s) very thinly sliced nova salmon
1 small red onion, sliced very thin and broken into rings
- capers for garnish, maybe 1 1/2 tablespoons

Steps:

  • Split and toast bagels if you are using them
  • In a bowl combine the cream cheese, lemon juice, horseradish, 1 teaspoon of dill weed.
  • Spread a desired amount of salmon mixture on either the bagels or your Ritz.
  • Top each with a small piece of salmon, then an onion ring or 2.
  • Sprinkle capers in onion rings, sprinkle dill over all.
  • If you want to turn these into a hot appetizer chop the red onions finely and mix all other ingredients together. You will want 2 crescent roll tubes.
