SKORDALIA (GARLIC SAUCE)
This Greek sauce has a potato as the unusual base. I haven't tried this yet, I found the recipe in an old cookbook I've had for years, & thought it would be a perfect submission for the ZWT4 - let's hope it's a good one!

Steps:
- Peel potato and boil until tender. Put through a ricer or sieve. Measure 1/2 cup of potato & put in a bowl; mix in garlic and salt. Gradually add olive oil and vinegar alternately while beating with a spoon. Chill. Serve with meat or fish.
SKORDALIA (GARLIC-WALNUT SAUCE)

Steps:
- In a small bowl, soak the bread in 1/2 cup water for 2 minutes. Remove excess water from the bread so that it is wet, but not dripping. Place bread and walnuts in the bowl of a blender or food processor and pulse until a paste forms. Add the garlic, olive oil and salt and process until well blended, scraping down the sides as necessary. Transfer the mixture to a bowl and stir in the lemon juice and vinegar. Adjust salt to taste. Serve with bacalao fritters (see recipe).

Use this to accompany roasted beets, or fried salt cod, or any of the greek fritter recipes. It is a condiment and is used like a mayonnaise and/or dip.

Steps:
- Soak bread in water.
- Squeeze dry between hands.
- Put in food processor along with garlic, pine nuts or walnuts.
- Process for 20 seconds.
- Slowly drop in olive oil and vinegar, alternately, until mixture binds into a thick mayonnaise-like sauce.
- (you may need slightly more oil and/or vinegar, depending on personal taste).
SKORDALIA (GARLIC SAUCE FOR ARTICHOKES)

Steps:
- Tear the bread into small pieces. Put bread, garlic, olive oil and 3 tablespoons lemon juice into a mixing bowl. Add 1/4 cup water, toss to combine and let stand 20 minutes to soften.
- Transfer the mixture to a food processor, blender or electric mixer, and process until smooth. Add more water by the tablespoonful and blend until a saucy consistency is achieved. Season to taste with salt; add additional lemon juice, if desired.

GREEK GARLIC SAUCE DIP (SKORDALIA) SALSA DE AJO GREIGA
I have loads of International Cookbooks, I am fortunate that my brother has traveled the world and each country he visits he sends me cookbooks of their national cuisine. I have two incredible books from Greece and one from Cyprus. This recipe is most interesting. It's made from stale bread and lots of garlic and good virgin olive oil. It is really good. Enjoy

- Soak the bread in the chicken broth or water. When soft remove the crust if you want. I leave mine on. Squeeze the bread in your palms to remove most of the water. I have a large seive and I put my bread in the sieve and kind of push down gently to squeeze some of the water out
- Put the pre-soaked bread and all the above ingredients in a blender, Beat until all is well incorporated. Some People like to put a scoopfull of mashed potatoes that is optional. Pour into a bowl and garnish with parsley sprig or cilantro or some mint leaves. You can refrigerate until serving time. NOTE: Do not over beat or it will curdle, Serve with carrot sticks, celery sticks, black olives, scallions, green bell pepper rings, and tomato slices, Enjoy
SCHWARMA GARLIC SAUCE (SKORDALIA)
This is a thick, white garlic sauce that's commonly served on schwarma. I found the recipe in a cookbook published by my husband's grandmother's Armenian Orthodox church. The sauce is tastiest and most authentic when made with potatoes, but white bread will also work and is often more convenient.
