NEW ORLEANS BBQ SHRIMP

A beloved classic, New Orleans style BBQ Shrimp is bathed in a buttery sauce that's kicked up with garlic, Worcestershire sauce, and Creole seasoning.

3 tablespoons plus 1 stick cold unsalted butter, cut into small pieces
6 cloves garlic, minced
1 1/2 pounds colossal (10 to 15 per pound) unpeeled shrimp , deveined
2 teaspoons cracked black pepper
1 1/2 teaspoons Creole seasoning
1/2 cup beer, preferably lager
2 tablespoons Worcestershire sauce
2 tablespoons hot sauce, preferably Crystal
1 tablespoon fresh lemon juice, from about half a lemon
Crusty French bread , for dipping

Steps:

  • Gather the ingredients.
  • Heat 3 tablespoons butter and the garlic over medium-high heat in a large (12-inch) skillet.
  • When the garlic is sizzling, add the shrimp, black pepper, and Creole seasoning and cook, stirring and flipping the shrimp, until lightly browned, about 2 minutes.
  • Add the beer and cook, while stirring and scraping with a wooden spoon, until the beer is reduced by half, about 1 minute.
  • Add the Worcestershire sauce, hot sauce, and lemon juice and bring to a simmer, stirring until sauce is reduced and shrimp are cooked through, 3 to 4 minutes.
  • Turn the heat down to low and slowly stir in the remaining butter, in small batches, to form a smooth and velvety sauce, 3 to 4 minutes.
  • Remove from heat, divide among bowls, and serve with crusty bread to dip in the buttery sauce.

8 cups water
3/4 teaspoon salt
2 cups quick-cooking grits
2 cups shredded cheddar cheese
1/2 cup butter, cubed
8 bacon strips, chopped
2 pounds uncooked shrimp (26-30 per pound), peeled and deveined
4 garlic cloves, minced
1 tablespoon Cajun seasoning
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes

Steps:

  • In a large saucepan, bring water and salt to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, until thickened, about 5 minutes, stirring occasionally. Remove from heat. Stir in cheese and butter until melted; keep warm., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Cook and stir shrimp in bacon drippings until shrimp turn pink, 3-4 minutes. Add garlic; cook 1 minute longer. Stir in Cajun seasoning and parsley., Divide grits among 8 serving bowls; top with shrimp mixture and the bacon.

3 tablespoons olive oil
1 tablespoon light brown sugar
1 tablespoon smoked paprika
1 tablespoon kosher salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon cayenne
Zest and juice of 2 limes, plus lime wedges, for serving
2 pounds 16/20 shrimp, shell on and deveined

Steps:

  • Set up your grill for even medium-high heat. If using a charcoal grill, distribute the coals evenly. If using a gas grill, heat both sides evenly.
  • In a mixing bowl, whisk together the olive oil, brown sugar, paprika, salt, cumin, coriander, cayenne and lime zest and juice. Add the shrimp and allow to marinate for 15 minutes at room temperature and up to 3 hours refrigerated.
  • Remove the shrimp from the marinade and place on a cooling rack in a single layer. Put the cooling rack on the grill and cook the shrimp, pulling the cooling rack off the grill to flip them, until charred and cooked through, 2 to 3 minutes per side.
  • To serve: Add the shrimp to a platter and garnish with lime wedges.

1 cup canola oil
¾ teaspoon hot pepper sauce (such as Tabasco®)
2 cloves garlic, crushed
¼ cup tomato-based chili sauce
1 lemon, juiced
1 teaspoon dried oregano
2 pounds peeled and deveined medium shrimp
16 skewers

Steps:

  • Whisk together the canola oil, hot pepper sauce, garlic, chili sauce, lemon juice, and oregano in a large glass or ceramic bowl. Add the shrimp and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator 1 hour.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the shrimp from the marinade, and shake off excess. Discard the remaining marinade. Thread about 4 shrimp onto each skewer.
  • Cook on the preheated grill until pink on the outside and no longer translucent in the center, about 3 minutes per side.

SOUTHERN BARBECUE SHRIMP

I adapted this recipe from one I found in Gourmet Magazine grilling issue. I added a bit more brown sugar to the sauce to take some of the bite out of the Worcestershire. The original recipe called for the shrimp to be broiled in their shells. Today happened to be in the high 90's, so I decided to cook these, peeled, in the sauce over the stove...ANYTHING to not have to turn the broiler on!! I think they turned out great. Next time I think I will definitely try these on the grill.

1 lb large shrimp, shelled and deveined
6 tablespoons unsalted butter
1/3 cup Worcestershire sauce
1/3 cup fresh lemon juice
2 tablespoons brown sugar
1 teaspoon brown sugar
2 tablespoons Old Bay Seasoning (or other seafood seasoning)
lemon wedge

Steps:

  • In a sauce pan over low heat, melt butter, Worcestershire sauce, lemon juice, brown sugar, and Old Bay seasoning.
  • Whisk until brown sugar is dissolved.
  • Add about 1/2 the sauce to a large skillet over medium heat.
  • Add shrimp and cook for about 5-7 minutes, or until shrimp turn pink and are cooked through.
  • as the shrimp were finishing, I turned the heat up a bit under the remaining sauce until it just bubbled a bit.
  • Transfer cooked shrimp to platter and serve with lemon wedges, and remaining sauce.
