3 cups fat-free (skim) milk
2 boxes (4-serving size each) French vanilla instant pudding and pie filling mix
4 containers (6 oz each) Yoplait® Original yogurt French vanilla
1 container (8 oz) Cool Whip fat-free frozen whipped topping, thawed
48 reduced-fat vanilla wafer cookies
6 small bananas, sliced
Additional banana slices for garnish, if desired

Steps:

  • In large bowl, beat milk and pudding mix with electric mixer on low speed until well mixed; beat in yogurt. Fold in whipped topping.
  • Place 24 vanilla wafers in a single layer in ungreased 13x9-inch (3-quart) glass baking dish. Spoon half of the pudding mixture over wafers. Place 6 sliced bananas over pudding mixture. Spoon remaining pudding mixture over bananas. Arrange remaining 24 vanilla wafers over top of pudding.
  • Cover; refrigerate at least 3 hours but no longer than 8 hours. Just before serving, garnish with additional banana slices.

A dreamy, luscious, and totally better-for-you banana pudding. The maple syrup and apple sauce were added to substitute the originally called for butter, but I imagine you could leave these two ingredients out if you don't have them readily available. Serve with sliced bananas, vanilla wafers, and/or graham crackers for a lovely dessert or trifle. Adapted from a recipe on a Silk coconut milk carton. Note: Cook time does not include chilling time.

1/2 cup stevia
2 tablespoons sugar
1/3 cup cornstarch
3 cups unsweetened coconut milk (I use Silk)
2 bananas, pureed
1 teaspoon vanilla
1 tablespoon maple syrup
1 tablespoon applesauce

Steps:

  • Mix stevia, sugar, and cornstarch until combined in a saucepan.
  • Turn heat to medium and slowly add coconut milk to saucepan while whisking to ensure dry and wet ingredients combine.
  • Add pureed bananas and continue whisking until mixture thickens.
  • Once mixture is to desired consistency, turn off heat and add vanilla, maple syrup, and apple sauce.
  • Refrigerate until cool and set (about 8 hours). Garnish with sliced banana, vanilla wafers, graham crackers, whipped cream, toasted coconut, or other garnishes of your choosing.

1/2 banana
6 ounces non-fat vanilla yogurt

Steps:

  • Put the banana half into a medium sized bowl.
  • Using the back of a spoon or fork, mash the banana until it is a thick mush.
  • Pour the yogurt into the banana mush, stir well.
  • refrigerate for 5-10 minutes.
  • Enjoy!
