1 1/2 cups Gold Medal™ whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup sugar
1/4 cup canola oil
2 egg whites
1 cup mashed ripe bananas (2 large)
1/4 cup fat-free (skim) milk
1 teaspoon vanilla
1/4 cup chopped walnuts or pecans, toasted*

Steps:

  • Heat oven to 350°F. Grease bottom only of 8x4-inch or 9x5-inch loaf pan with shortening, or spray with cooking spray. In medium bowl, mix flour, baking powder, baking soda, salt and cinnamon.
  • In large bowl, beat sugar, oil, egg whites, bananas, milk and vanilla with spoon until well blended. Stir in flour mixture until well blended. Stir in walnuts. Spoon into pan.
  • Bake 8-inch loaf 55 to 62 minutes, 9-inch loaf 45 to 52 minutes, or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to cooling rack. Cool completely, about 1 hour, before slicing.

1 ¾ cups whole wheat flour
3 teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon baking soda
¼ teaspoon salt
¼ teaspoon ground nutmeg
3 mashed ripe bananas, or to taste
2 eggs
½ cup applesauce
⅓ cup brown sugar
3 tablespoons flaxseed meal
⅛ cup milk
½ tablespoon vanilla extract
½ cup chopped walnuts

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease two 4x8-inch loaf pans.
  • Combine flour, baking powder, cinnamon, baking soda, salt, and nutmeg in a bowl.
  • Combine bananas, eggs, applesauce, brown sugar, flaxseed meal, milk, and vanilla extract in a large bowl and mix until well combined. Gradually add flour mixture to the banana mixture, stirring until uniform. Add walnuts and mix lightly just until evenly distributed. Pour batter evenly into the prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 45 to 60 minutes.
  • Remove loaves from oven and set aside to cool for 15 minutes. Remove loaves from pans and let cool about 5 minutes more before serving.

2 c all purpose flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
2 Tbsp butter melted
3 Tbsp apple sauce
1/4 c skim milk
1 tsp vanilla
1 1/2 c mashed banana
1/2 c chocolate chips
1/4 c unsweetened cocoa powder
1/2 c chopped walnut's optional
1/2 c splenda sugar blend,or 1 cup of granulated sugar
1 egg
1 egg white

  • 2. measure the flour,baking soda,baking powder,cocoa powder, and salt in to bowl.
  • 3. melt butter in a bowl. Add the Apple sauce,and Splenda blend. Whisk until combined well. Add the applesauce,banana,milk,and eggs.Whisk all together.
  • 4. Add the banana mixture to the flour mixture. Whisk well . Add the vanilla,nuts and chocolate chips. Stir in to combine.

Number Of Ingredients 12

3 very ripe bananas, mashed
5 oz non-fat Greek yogurt
1 Tbsp light butter
2 egg whites
1½ cups whole wheat white flour
½ tsp salt
1 tsp baking powder
1 tsp baking soda
½ cup brown sugar
½ cup Stevia (or your favorite sweetener)
1 tsp vanilla extract
⠓ cup semi-sweet dark chocolate mini chocolate chips

Steps:

  • Preheat oven to 330 degrees. Spray two loaf pans with non-stick cooking spray and set aside. I used regular sized loaf pans or you could use mini loaf pans. In a small bowl, mash bananas using a fork and set aside. In a large bowl, cream butter, yogurt, vanilla, and brown sugar, and Stevia. Add in egg whites and mashed bananas to wet ingredients and beat with a mixer on medium speed for 2-3 minutes. In a separate bowl, add whole wheat flour, salt, baking powder, and baking soda. Using a wire whisk, gently mix dry ingredients together. Add dry ingredients to wet ingredients and mix together until blended but not over mixed. Fold in chocolate chips to mixture. Transfer mixture evenly into the two loaf pans. Both pans should only be about ½ full with mixture. If using mini loaf pans, the mixture should make 4 mini loafs. Bake for 30-35 minutes until a fork inserted in the middle of chocolate chip banana bread loaf comes out clean. If using mini loaf pans, bake for only 25-30 minutes.
