PINEAPPLE PORK CHOPS

A very easy and delicious way to cook pork chops with a sweet, but not too sweet, sauce. I recommend serving the pork chops with white rice since the sauce is also excellent on the rice.

1 tablespoon olive oil
4 boneless pork chops
1 (14.5 ounce) can chicken broth
2 tablespoons soy sauce
1 tablespoon vinegar
2 tablespoons brown sugar
2 tablespoons cornstarch
½ cup pineapple juice

Steps:

  • Heat the olive oil in a skillet over medium heat, and brown the pork chops about 5 minutes on each side. Remove chops from the skillet, and set aside.
  • Mix the chicken broth, soy sauce and vinegar into the skillet, and bring to a boil. Return the pork chops to the skillet, reduce heat, and simmer 20 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Remove chops from the skillet, reserving broth mixture, and set aside.
  • In a bowl, blend the brown sugar, cornstarch, and pineapple juice. Mix into the skillet with the chicken broth mixture. Bring to a boil. Serve with the cooked pork chops.

1 cup chicken broth
1 (18 ounce) bottle honey barbeque sauce
1 onion, chopped
1 cup chopped fresh pineapple

Steps:

  • Place pork shoulder and chicken broth in a slow cooker.
  • Cook on Low for 5 to 7 hours. Drain all the liquid from the slow cooker and shred pork with fork. Mix barbeque sauce, onion, and pineapple into shredded pork. Continue cooking 1 to 1 1/2 hours more.

2 tablespoons smoked paprika
1 tablespoon packed brown sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
1 teaspoon ground black pepper
2 pork tenderloins
1 cup store-bought barbecue sauce
2 tablespoons olive oil
Grilled Pineapple Pepper Relish, recipe follows, for serving
1/2 pineapple, cored and sliced into rings
5 tablespoons olive oil
3 jalapeños, halved and seeded (or leave some seeds for more heat)
1 poblano pepper, halved and seeded
1 large red bell pepper, quartered
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh cilantro
1 tablespoon agave syrup
1 lime, zested and juiced

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil.
  • Mix the paprika, brown sugar, garlic and onion powders, salt and pepper in a small bowl. Season the pork tenderloins liberally with the seasoning mixture.
  • Pour 1/3 cup of the barbecue sauce into a small bowl for brushing on the seared pork and reserve the remaining 2/3 cup for serving.
  • Add the olive oil to a skillet and place over medium heat. When the oil is hot, sear the pork until nicely browned on all sides, 4 to 5 minutes. Transfer the pork to the prepared baking sheet and brush with some of the barbecue sauce.
  • Transfer to the oven and cook, brushing with the barbecue sauce and turning every 5 minutes, until the meat is sticky, charred and cooked through, about 15 minutes. Turn the oven to broil at 500 degrees F and broil until bubbly on top, 1 to 2 minutes. Let rest for 5 minutes before slicing.
  • Serve topped with the Grilled Pineapple-Pepper Relish and the reserved barbecue sauce on the side.
  • Heat a grill pan or grill over medium heat.
  • Lightly brush the pineapple with 1 tablespoon of the olive oil and add to the grill pan. Toss the jalapeños, poblanos and bell peppers with the remaining 4 tablespoons olive oil and a pinch of salt and pepper and add to the grill pan. Grill the pineapple and peppers until slightly charred on both sides, about 5 minutes. Remove to a cutting board. Chop into small dice and add to a bowl. Add the cilantro, agave and lime zest and juice. Toss to combine.

This is an easy dish to put together, Heinz chili sauce (sold in 12-ounce bottles) is best for this, I have made this using other brands and it is not as good, do not use the spicy chili sauce for this, you may finish the cooking in the oven instead of the stove top if desired, I would think this would work great using chicken in place of pork although cooking time would need to be adjusted -- you may reduce the recipe by half if desired, serve this with cooked rice :)

2 (8 ounce) cans pineapple chunks, drained
2 1/2 tablespoons cornstarch
1 cup chili sauce (use Heinz chili sauce)
2 -3 tablespoons brown sugar (you may adjust the amount of brown sugar to suit taste)
1/8-1/2 teaspoon cinnamon
1 pinch cayenne pepper (or to taste)
2/3 cup raisins or 2/3 cup dried cranberries
3 -4 tablespoons vegetable oil
6 -7 pork chops (can use less if desired)
garlic powder
seasoning salt or white salt

Steps:

  • Drain the canned pineapple over a medium bowl reserving the pineapple chunks; whisk in the cornstarch until well blended, then blend in the chili sauce, brown sugar, cinnamon and cayenne pepper; mix well to combine; set aside (leave the whisk in the bowl as you will need to whisk the mixture again just before before using).
  • Season the pork chops lightly with garlic powder and seasoned salt or white salt.
  • Heat oil in a large skillet over medium-high heat.
  • Brown the pork chops in oil until lightly browned on both sides.
  • Mix the juice mixture again then add to the pork chops in the skillet along with pineapple chunks and raisins (I use use only half of the pineapple chunks) stir to combine in the skillet.
  • Simmer over medium-low heat for about 20-25 minutes or until the pork chops are cooked thoroughly (cooking time will depend on the size of the thickness of the pork chops).
  • Serve over rice.

1 pork tenderloin (about 12 ounces), halved lengthwise and thinly sliced
Kosher salt and freshly ground pepper
1/4 cup vegetable oil
2 cups cooked brown rice or rice blend
1 white onion, cut into 1-inch pieces
1 large red bell pepper, cut into 1-inch pieces
6 ounces green beans, trimmed and halved
1/2 small pineapple, cored and cut into 3/4-inch pieces (2 cups)
1 tablespoon Sriracha or chili-garlic sauce

Steps:

  • Season pork with salt and pepper. Heat 1 tablespoon oil in a large cast-iron or nonstick skillet over high. Add rice and reheat, covered, shaking skillet a few times, 2 minutes. Transfer to a bowl, stir in cilantro, and cover to keep warm.
  • Return skillet to high heat; swirl in 1 tablespoon oil. Add pork and cook, stirring a few times, until browned in places and almost cooked through, 2 minutes; transfer to a plate.
  • Add remaining 2 tablespoons oil, onion, bell pepper, green beans, and pineapple to now-empty skillet and season with salt and pepper. Cook, stirring frequently, until vegetables are crisp-tender, 8 to 10 minutes.
  • Whisk together Sriracha sauce, cornstarch, and 1 cup water in a small bowl; add mixture to skillet along with pork and any accumulated juices.
