Whip up our easy beef chili in advance, and you can get this giant pan of nachos on the table in just 20 minutes. It's all about layering the meat with tortilla chips, cheese, and beans.

10 cups tortilla chips
2 cups Easy Beef Chili
1 can (15 ounces) drained and rinsed black beans
2 cups shredded cheddar cheese
Sliced radishes and jalapenos, and cilantro leaves, for topping
Sour cream, salsa, and sliced avocado, for serving

Steps:

  • Preheat oven to 425 degrees, with rack in upper third.
  • Spread 5 cups chips in a 12-inch heavy-bottomed skillet (preferably cast iron). Top with 1 cup chili, then half the beans and 1 cup cheese. Layer with remaining 5 cups chips, 1 cup chili, remaining beans, and 1 cup cheese.
  • Bake until cheese is melted and bubbly, 5 to 7 minutes. Top with radishes, jalapenos, and cilantro; serve with sour cream, salsa, and avocado.

1 pound ground beef
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup fresh or frozen corn, thawed
3/4 cup uncooked instant rice
1/2 cup water
1 envelope taco seasoning
1/2 teaspoon salt
1 cup shredded Colby-Monterey Jack cheese
1 package (16 ounces) tortilla chips
Optional toppings: Sour cream, sliced fresh jalapenos, shredded lettuce and lime wedges

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in tomatoes, corn, rice, water, taco seasoning and salt. Bring to a boil. Reduce heat; simmer, covered, until rice is tender and mixture is slightly thickened, 8-10 minutes., Remove from heat; sprinkle with cheese. Let stand, covered, until cheese is melted, about 5 minutes. Divide tortilla chips among 6 plates; spoon beef mixture over chips. Serve with toppings as desired.

1 medium green bell pepper, chopped (1 cup)
1 small zucchini, chopped (1 cup)
1 cup Old El Paso™ Thick 'n Chunky salsa
1 cup chili beans in sauce (from 15-ounce can)
4 ounces tortilla chips
1 1/2 cups shredded Monterey Jack cheese (6 ounces)
Sliced ripe olives, if desired

Steps:

  • In 12-inch skillet, heat oil over high heat. Add bell pepper and zucchini; cook and stir about 2 minutes or until vegetables are crisp-tender. Stir in 1/2 cup of the salsa and the beans; cook until hot. Remove mixture from skillet.
  • Wipe skillet clean. Arrange tortilla chips in single layer in skillet. Spoon vegetable mixture onto chips. Sprinkle with cheese.
  • Cover and cook over medium-high heat about 5 minutes or until cheese is melted. Sprinkle with olives. Serve with remaining 1/2 cup salsa.

1 can (7 oz) whole kernel sweet corn, drained
2 cups shredded Mexican cheese blend (8 oz)
6 oz tortilla chips (about 42 chips)
1/4 cup chopped fresh cilantro

Steps:

  • In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 3 to 5 minutes, stirring occasionally, until no longer pink in center.
  • Stir in taco seasoning mix, tomato sauce, bell pepper, beans, corn and 1 cup of the cheese. Reduce heat to medium; cook 3 to 5 minutes, stirring occasionally, until heated through and cheese is melted.

These skillet nachos are full of flavor, cheesy and can be made in less than 20 minutes! They make the perfect appetizer, lunch or dinner!

1 (16-ounce) can Old El Paso™ refried black beans
1/2 (10-ounce) can Old El Paso™ red enchilada sauce
3 cups freshly grated mozzarella, monterey jack or fontina cheese
1 bag tortilla chips (thick ones work best)
Optional toppings: Guacamole, Pico de gallo, Fresh cilantro, jalepenos, sour cream

Steps:

  • Preheat oven to 375°F. Pour a thin layer of enchilada sauce across the bottom of a large skillet. Spread the refried beans on top and add a little salt and pepper if desired. Then sprinkle on a little bit of cheese. I like to use a mix of freshly grated mozzarella and fontina.
  • Next, layer on tortilla chips with another layer of cheese (about 3/4 cup). Repeat, so that you have 3 layers of chips. Top the final layer of chips with the remaining cheese. Drizzle 2 to 3 Tablespoons of the enchilada sauce on top. Bake for 10 to 15 minutes, or until the cheese is nice and bubbly hot.
  • Top with your favorite toppings, just before serving. My favorites are guacamole and pico de gallo. Serve immediately.

2 Tbsp vegetable oil
1 small onion small dice
1/2 lb ground beef
3 clove garlic minced
1 Tbsp chili powder
1 tsp mexican oregano
1/2 tsp each cumin, salt and coriander
1/4 tsp red pepper flakes
1/2 c chicken stock
8 oz each monterey jack cheese and sharp cheddar cheese
8 oz tortilla chips
1/2 c jarred jalapeno's drained
1/2 red onion thinly sliced
1/2 c pico de gallo
2 scallions sliced
1/2 c fresh cilantro chopped
1/2 c salsa
sour cream for drizzling

Steps:

  • 1. In 10 to 12 inch cast iron skillet that has been heated up on stove add the oil. Add the onion and cook a couple of minutes. Add the ground beef breaking it up while cooking. Add the garlic, oregano, cumin, salt , coriander and red pepper flakes. When the burger is no longer pink add the chicken stock. Cook until most has evaporated.
  • 2. Place one cup each of the Monterey Jack and Cheddar Cheese in a bowl. Add the beef mixture and stir to melt the cheese. Whip out the skillet.
  • 3. Preheat oven 400 degrees. Add a layer of chips to bottom of pan. Add a layer of the meat and cheese mixture. Add some red onion, green onion, and jalapeno's. Add 1/2 cup of each of the cheeses. Repeat twice more ending with the meat mixture and the remaining cheese. Place in the oven. Bake for 10 to 15 minutes until cheese is melted through.
  • 4. Top with Pico, cilantro, salsa, and sour cream

I am SO into nachos. Always have been. We make them A LOT in our house and I never hear complaining. Like, never ever. Shrimp just makes these nachos seem so decadent. It also makes these nachos appealing to adults. Especially shrimp-loving adults like myself. The best part about this recipe isn't even the shrimp though, it's how easy the nachos are to make. There are just a few ingredients needed and they take approximately 7 minutes to make. I made these nachos in a cast-iron skillet. Makes it easy to throw in the oven and melt the cheese. Super easy!

1 cup shredded iceberg lettuce
1/2 cup chopped tomatoes
1/2 cup chopped green peppers
1/2 cup TACO BELL® Thick & Chunky Salsa

  • Cook chicken in large skillet on medium-high heat 5 to 7 min. or until done, stirring occasionally; drain.
