This treat is heavy on apples and light on batter, so it's more like a thin German pancake than a dense cake.

3 large eggs
1 cup low-fat milk
1/2 cup all-purpose flour
1 1/4 teaspoon coarse salt
2 tablespoons unsalted butter
3 sweet apples (such as McIntosh) peeled, cored, and cut into 1/4-inch slices
1/4 cup brown sugar
1/4 teaspoon cinnamon
2 teaspoon raw sugar
1/2 cup low-fat plain Greek yogurt, for serving (optional)

Steps:

  • Preheat oven to 425 degrees. In a bowl, whisk together eggs, milk, flour, and salt; set aside. In a large ovenproof skillet, melt butter over medium heat. Cook apple slices, stirring occasionally, until soft, 6 to 8 minutes. Add brown sugar and cinnamon and cook until caramelized, 2 to 3 minutes.
  • Pour in batter and transfer to oven. Bake until cake puffs, about 12 minutes. Sprinkle with raw sugar and return to oven until brown on top, 2 to 3 minutes. Let cool slightly. Serve each slice with a dollop of Greek yogurt, if using.

⅔ cup packed brown sugar
½ cup all-purpose flour
1 teaspoon ground cinnamon
6 tablespoons cold butter
1 cup chopped walnuts
1 apple - peeled, cored, and chopped
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 cup white sugar
⅓ cup butter, softened
1 cup milk
1 large egg
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Mix brown sugar, flour, and cinnamon for topping in a bowl. Cut in cold butter. Stir in walnuts and apple.
  • Combine flour, baking powder, and salt for cake in a bowl. Beat white sugar and butter together in a large bowl with an electric mixer until creamy. Add dry ingredients. Mix in milk, egg, and vanilla extract. Spread into the prepared pan and sprinkle streusel topping over top. Swirl a knife through both mixtures.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 35 to 40 minutes.

1 cup chopped apple
1 cup pecans or 1 cup walnuts
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
3 tablespoons melted butter
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup sugar
3 large eggs
1/2 teaspoon vanilla extract
1/3 cup orange juice
1/2 cup icing sugar
2 1/2 teaspoons orange juice

Steps:

  • Preheat oven to 350°F.
  • Grease a 9 or 10-inch bundt pan.
  • Streusel: Combine brown sugar, almonds, flour and cinnamon.
  • Stir in melted butter; set aside.
  • In a separate medium bowl, combine flour, baking powder and baking soda.
  • Mix well.
  • In a large bowl, beat sugar and butter with electric mixer until fluffy.
  • Add eggs one at a time; beat after each addition; add vanilla.
  • Set mixer to low.
  • Alternately beat flour mixture and orange juice into egg mixture.
  • Put half of the cake batter into the bundt pan.
  • Add half of the streusel.
  • Spoon and spread remaining batter over struesel.
  • Bake for 15 minutes. Remove from oven and add remaining streusel.
  • Bake 35-40 minutes more.
  • When completely cool, remove from pan and glaze with icing (a zig-zag pattern looks very nice!).

I tinkered with one of my favorite coffee cake recipes, and came up with this apple cake! It's delicious, hot or cold, and smells so good while it's baking! Can be served with whipped cream, but it's moist enough to serve by itself.

3 tablespoons unsalted butter
4 cups diced peeled cored granny smith apples
3 tablespoons sugar
1 teaspoon ground cinnamon
1 1/2 cups flour
1 cup brown sugar, firmly packed
1/2 cup unsalted butter, cut into pcs. room temperature
1/2 teaspoon salt
3/4 cup canned pumpkin puree
1/3 cup sour cream
2 tablespoons sugar
2 teaspoons pumpkin pie spice

Steps:

  • For Apples: Melt butter in large non-stick skillet over med-high heat.
  • Add apples, saute until apples begin to brown, about 5 minutes.

Using a cast iron skillet is just a different country way of making this cake you can use a traditional bundt pan if you wish. But using a skillet requires keeping a close eye on it since cast iron retains heat much better than other baking pans. You can use cut up pears instead of apples for a different twist or even use both apples and pears. Adding other fruits for the occasion and season is a great way to give someone a special treat, like cranbverries, raisins, raspberries. Even just sprinkling some grated coconut on top or using in cake mixture is a different treat as well.

  • add remaining cake mix swirl with knife if desired to make a pattern.
  • bake for 15 minutes remove from oven and sprinkle with the remaining streusel.
  • bake for 30-35 minutes until a toothpick comes out clean.
  • transfer to wire rack to cool completely.
  • make the glaze- combine powdered sugar and orange juice, mix well and drizzle with a spoon over the top of cake and serve.
