Skewered Grilled Fruit With Ginger Syrup image

This is a melange of quickly grilled fruit, brushed with a ginger sauce that itself takes about five minutes to put together. The sauce is a simple sugar syrup -- half sugar, half water, boiled together until the sugar melts -- and is infused with a lot of ginger. You could use other flavors instead (mint, lemon verbena, thyme, even chili), but ginger seems perfect to me.

1/2 cup sugar
1/4 cup thinly sliced fresh ginger (don't bother to peel it)
4 unpeeled bananas (not overripe)
1 small pineapple
1 starfruit (carambola), optional

Steps:

  • Heat a gas or charcoal fire; it should be quite hot, with the rack positioned 4 to 6 inches from the source of heat.
  • Combine the sugar, fresh ginger and 1/2 cup of water in a small saucepan over medium heat. Bring to a boil, and simmer for 3 minutes. Remove from the heat, and let sit while preparing the fruit. (Refrigerate if you're not using this right away; it will keep for at least a week.)
  • Cut the unpeeled bananas into 2-inch-long chunks, and make a shallow vertical slit in the skin for peeling at the table. Peel and core the pineapple, then cut it into 2-inch chunks. If you're using starfruit, cut it into slices 1/2 inch thick.
  • Skewer the fruit. Strain the syrup, and brush it on the fruit lightly. Grill the fruit until the pineapple is nicely browned, 2 to 4 minutes to a side. While it is grilling, brush it occasionally with the syrup.
  • When the fruit is done, brush once more with syrup. Serve hot or warm.

1/2 5-to-6-pound seedless watermelon, cut into 1-inch cubes
1 pineapple, peeled, cored and cut into 1-inch cubes
2 mangoes, peeled, pitted and cut into 1-inch cubes
Grated zest and juice of 1 lime
Vegetable oil, for brushing
2 teaspoons chili powder
Coarse sea salt

Steps:

  • Soak 18 wooden skewers in water 20 minutes. Thread the watermelon, pineapple and mango cubes on the skewers. Put the skewers in a large zip-top plastic bag, being careful not to puncture the bag; add the lime juice, seal and toss gently to incorporate. Refrigerate at least 30 minutes or until ready to use.
  • Preheat a grill or grill pan to medium high. Remove the skewers from the bag and place on a baking sheet. Brush the fruit with vegetable oil and place the skewers on the grill. Grill, turning once, until marks appear, 6 to 8 minutes. Transfer to a serving platter.
  • Combine the lime zest, chili powder and 1 teaspoon salt in a small bowl. Sprinkle the seasoning over the grilled fruit.

Glaze
1/2 cup pure maple syrup
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
4 cups fruit chunks such as pineapple, peaches, and/or bananas

Steps:

  • Build a charcoal fire for direct grilling. Soak the bamboo skewers in a bowl of water and set aside.
  • Combine the glaze ingredients in a medium bowl and mix well. Add the fruit and toss gently to coat with the glaze. Cover and refrigerate.
  • Thread the fruit on the soaked skewers, alternating each fruit type. Place the skewers on the grill and cook directly over medium-high heat for 1 1/2 minutes on each side, or until browned and caramelized. Serve warm.

4 (10-inch) skewers
1/2 cup brown sugar
1/4 cup water
1 teaspoon ground cinnamon
1/2 orange, juiced, plus remaining half zested, reserved from Chicken Satay recipe
1 (20-ounce) can pineapple chucks, reserve the juice and 4 pieces for cocktail
2 nectarines, cut into 1-inch chucks
1 mango, peeled, flesh cut into 1-inch chucks
1 (8-ounce) container vanilla yogurt

Steps:

  • If you are using wooden skewers, soak them in water for at least 30 minutes.
  • In a small pot combine the brown sugar with 1/4 cup water, cinnamon and orange zest. Bring to a boil over medium heat. Remove from heat and set aside to cool to room temperature.
  • Preheat the grill or grill pan over low heat.
  • Thread 2 pieces of each type of fruit onto each skewer. Grill the skewers until the fruit is warm and lightly charred about 6 minutes giving the skewers a quarter turn every 1 1/2 minutes. Make sure to brush with the brown sugar syrup after each turn.
