How much easier can you get? Veggies, rice, and beef, all layered in a casserole dish and cooked together in the oven. This is wholesome, satisfying comfort food - add a green salad and you're good to go. From the More-With-Less Cookbook. I haven't made it yet but it looks great.

4 medium potatoes, sliced
4 medium carrots, sliced
2/3 cup uncooked rice
4 small onions, sliced
2 lbs ground beef
2 quarts canned tomatoes, undrained
salt and pepper
2 tablespoons brown sugar

Steps:

  • Layer first six ingredients (in order given) in greased casserole dish, seasoning each layer with salt and pepper.
  • Sprinkle with brown sugar.
  • Baked at 300 degrees for 2 ½-3 hours.

2 cups ground beef (uncooked, I use ground round)
2 cups raw potatoes, sliced
2 cups celery, chopped
1/2 cup onion, diced
2 teaspoons salt
1/4 teaspoon pepper
1 cup green pepper, diced
2 cups canned tomatoes
onion (I like to add thin slices of onions on top)

Steps:

  • Grease a casserole dish.
  • Sprinkle each layer with salt and pepper before adding the next layer. Place potatoes in the bottom of the casserole. Add the layer of celery. Add the layer of hamburger. Add the layer of onions. Add the green pepper.
  • Pour the tomatoes over the mixture.
  • Bake for 2 hours at 350°F (I cover with foil after about an hour).

I made this for dinner tonight and was impressed. Simple but good. I found a few similar recipes posted, but not this exact one. I adapted this recipe (slightly) from a recipe found in the Shady Maple Employee Cookbook: Recipes from the Heart, a cookbook published by the employees of a restaurant I used to hostess at. The original recipe was submitted by Edna Horning. Serve with a green salad.

Number Of Ingredients 9

1 1/2 lbs ground beef
2 medium sweet potatoes
8 ounces baby carrots
2 cups frozen peas
1 large onion
4 celery ribs
2 (25 1/2 ounce) jars tomato sauce (use a good sauce as it will be the primary flavoring of the casserole)
8 slices mozzarella cheese or 8 slices farmer cheese
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Grease a 9 by 13 baking dish.
  • Brown the ground beef.
  • Meanwhile peel and dice the sweet potatoes, layer them on the bottom of the baking dish and sprinkle with salt and pepper.
  • Slice the carrots, layer over the potatoes and sprinkle with salt and pepper.
  • Layer the peas over the carrots and sprinkle with salt and pepper.
  • Dice the onion and layer over the peas, sprinkle with salt and pepper.
  • Dice the celery and layer over the onions, sprinkle with salt and pepper.
  • Layer the browned ground beef over the celery.
  • Pour the tomato sauce over the entire casserole.
  • Bake for 1 hour.
  • Top the casserole with the cheese slices and bake until golden brown, about an additional 15-20 minutes.

1 lb pork sausage, broken up
1 1/2 cups raw potatoes, peeled and sliced
1/2 cup raw onion, sliced
1 cup uncooked white rice
1 1/2 cups canned tomatoes, undrained
1 cup raw carrot, sliced
16 ounces tomato juice
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons sugar

Steps:

  • Partially cook sausage and drain off fat.
  • Place sausage in 2 quart casserole and cover with layers of rice, potatoes, onions and carrots. Add tomatoes with juice. Add tomato juice until it comes up about half-way on the layers. Combine salt, pepper and sugar and sprinkle over top.
  • COVER casserole and bake at 350 degrees for 1 1/2 to 2 hours.
  • Add some water or tomato juice while cooking if casserole seems too dry.

2 medium ripe avocados, peeled and sliced
2 tablespoons lemon juice
1/2 tablespoon garlic salt
1/8 teaspoon hot pepper sauce
1 cup sour cream
1 can (4-1/4 ounces) chopped ripe olives, drained
1 jar (16 ounces) thick and chunky salsa, drained
2 medium tomatoes, seeded and chopped
1 cup shredded cheddar cheese
Tortilla chips

Steps:

  • In a large bowl, mash the avocados with lemon juice, garlic salt and hot pepper sauce. Spoon into a deep-dish 10-in. pie plate or serving bowl. Layer with sour cream, olives, salsa, tomatoes and cheese. Cover and refrigerate for at least 1 hour. Serve with chips.

I really enjoyed this recipe. I got this recipe from a cooking class I attend. I did not get to attend the day my class made this but they all said it was good. When I made this at home I used canned carrots and the suggested cream soup.

2 -3 raw potatoes, sliced (medium size)
2 cups sliced carrots
1/4 teaspoon black pepper
1/2 teaspoon onion, sliced

10 ounces tomato soup

Steps:

  • Lightly oil or spray baking dish with cooking spray.
  • Layer ingredients in order given. Cover.
  • Bake at 350 for 45 minutes or until tender and throughly heated.
  • Uncover and bake 15 more minutes.
  • Note: Use a baking dish or pan large enough to fit all recipe items. Use peas or corn instead of green beans. Use your favorite cream soup instead of tomato soup.

This is one of my more obscure comfort foods. It's a recipe that's no longer included in Betty Crocker cookbooks. The original called for a greased casserole (I don't find that necessary, because of the hamburger), 2 cups of celery (sorry, my first job was in a Chinese Restaurant - took me years to be able to eat cooked celery again at all), a measured total of salt (2 tsp.) and pepper (1/4 tsp.), and a garnish of green pepper on top. But this is how *I* make it:

2 c raw potatoes, sliced
2 c celery, chopped
2 c carrots
garlic minced, (as many cloves as you like)
1/2 c onions, diced
salt and pepper to taste
1 c green pepper, diced (or jalapeno, or you can use the small can of green chilies))
2 c canned diced tomatoes (1 can can be rotel)
1 small medium onion, thinly sliced (optional for top layer)
1 c rice (raw)
1 c mushroom (can or fresh rinse can if using that)
1 can(s) water
sprinkle old bay in between layers

Steps:

  • 1. Grease a casserole dish. Sprinkle each layer with salt and pepper before adding the next layer.
  • 2. Place potatoes in the bottom of the casserole, rice, Add the layer of celery, carrots, garlic and onion. Add the layer of hamburger Add the green pepper. Pour the tomatoes over the mixture. Add another layer of onions.
  • 3. Cover & Bake for 2 hours at 350 degrees F.
