Sinful Double Fudge Chocolate Cake With Incredible Icing image

This was one of my absolute favorite cakes. I used to serve this cake at every birthday party while my girls were growing up. This is fast, easy and incredibly sinful!!!

2 eggs
1 cup sugar
2 tablespoons butter, soft
1 cup vegetable oil (safflower or canola)
1/2 cup cocoa, packed
1/2 cup buttermilk
1 teaspoon vanilla
2 1/4 cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 cup boiling water
1/2 cup chocolate chips
1/2 cup butter, soft
1 cup icing sugar
2/3 cup cocoa
1 teaspoon vanilla
2 tablespoons milk
2 tablespoons coffee, hot

Steps:

  • Prepare 2 - 8" round pans, with butter and flour.
  • Preheat oven 350.
  • Cake: In a mixer, beat first 7 ingredients in order, adding one at a time. Sift the dry ingredients. Fold in boiling water and chocolate chips. (Note: if you add the boiling water and the chips together, they will melt, but if you delay adding the chips for a couple of seconds, they will keep their form).
  • Bake for 25 minutes at or until cooked. Remove from pans and let cool on baking racks.
  • Incredible Icing: In a food processor, blend butter, sugar and cocoa for 4 seconds. Combine vanilla, milk and hot coffee and blend in just enough liquid until icing is smooth and silky.

3/4 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg plus 1 large egg yolk, room temperature
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips
1/2 cup butter, softened
4-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
5 to 6 tablespoons 2% milk
Optional: Food coloring and sprinkles

Steps:

  • Preheat oven to 350°. Line the bottom of a 9-in. springform pan with parchment. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg, egg yolk and vanilla. In another bowl, whisk flour, cornstarch, baking soda and salt; gradually beat into creamed mixture. Stir in chips. Press onto the bottom of prepared pan. , Bake until golden brown, 20-25 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; cool completely. Remove rim from pan. Carefully remove cookie cake from bottom pan; transfer to serving platter., In a large bowl, beat butter, confectioners' sugar, vanilla and enough milk to reach piping consistency. If desired, beat in food coloring. Pipe around edge of cookie cake. If desired, garnish with sprinkles.

Homemade cookie cake is so easy and so much tastier than the store-bought version! Perfect for special occasions and simple enough for an everyday treat! Food coloring can be added to the buttercream, if desired.

¾ cup brown sugar
¾ cup unsalted butter, at room temperature
¼ cup white sugar
1 egg
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup semi-sweet chocolate chips
½ cup shortening
½ cup butter, softened
4 cups confectioners' sugar, divided
1 tablespoon water, or more as needed
1 teaspoon vanilla extract

Steps:

  • Beat brown sugar, unsalted butter, and white sugar together in a bowl using an electric mixer until light and fluffy, 3 to 4 minutes. Mix in egg and 2 teaspoons vanilla extract until smooth. With the mixer on low speed, add flour, baking soda, and salt and blend until batter is just mixed. Fold chocolate chips into batter. Batter will be thick. Chill in refrigerator at least 30 minutes to overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch cake pan with parchment paper.
  • Spread batter into the prepared cake pan.
  • Bake in th preheated oven until edges are golden brown, about 20 minutes. Slightly cool cake in the pan before transferring to a wire rack to cool completely, about 30 minutes.
  • Beat shortening and butter together in a bowl using an electric mixer until smooth. Slowly beat in 3 cups confectioners' sugar until smooth. Mix water and 1 teaspoon vanilla extract into confectioners' sugar mixture; add remaining confectioners' sugar and mix until buttercream is smooth. Add more water to thin, if needed.
  • Spread buttercream onto cookie cake.
