1/4 c flax seeds (ground). do not use seeds
1 tsp coconut oil
2 tsp cinnamon (ground)
1 tsp baking powder
1 egg
1 tsp stevia or trivia
MIX ALL INGREDIENTS IN COFFEE MUG

Steps:

  • 1. Mix all ingredients in the coffee mug very well. Microwave for 50 seconds. Flip out one plate. ENJOY cooking ..... Keep it clean

One Minute Flax Muffin - Low Carb image

Got this recipe from a message board for low carb'ers and wanted it here for my reference. Sadly, I don't know who the originator of this recipe is. This is quick easy, healthy, very low carb and high fiber. Works great as a sweet muffin as well as savory muffin (just omit the sweetener - goes well with soups). Original called for one packet of splenda as a sweetener. I only use stevia. Add in options; fruits, nuts, flavored sweeteners/syrups, cheese, bits of ham, vegetables or spices ... get creative and enjoy!

1/4 cup flax seed meal
1/2 teaspoon baking powder
1/4 teaspoon stevia powder
1 teaspoon cinnamon
1 egg
1 teaspoon oil

Steps:

  • Mix all ingredients in a coffee mug.
  • Micorowave for one minute on high.
  • If using frozen berries, microwave for 1:30 on high.
  • Smooth on some butter and enjoy!
  • It will be moist at first, but as the muffin cools it goes away.

1 Egg
1 teaspoon Coconut Oil (, melted)
1 teaspoon Vanilla Extract
1/4 cup Flaxseed Meal
1/2 teaspoon Baking Powder
1/4 teaspoon Ground Cinnamon
1 tablespoon Erythritol (or erythirtol )
2 tablespoons Raspberries (fresh or frozen)
1 tablespoon Sugar-free Chocolate Chips

Steps:

  • In a bowl, whisk egg, oil, and vanilla together. Set aside.
  • Stir in the dry ingredients: flax meal, baking powder, cinnamon, and sugar-free sweetener.
  • Stir in the optional ingredients. Raspberries and chocolate chips are my favorite.
  • Transfer into a mug - mine was 2.5 inches in height. That's the minimum required to prevent the muffin from overflowing.
  • Microwave on high for 1 minute 30 seconds.
  • Wait 1 minute before eating not to burn yourself.

I got this recipe from a flax seed site and it is one I make often. The recipe says it makes 12 muffins, but because it has so much flax in it, I make 18. I have only made this with freshly ground flax seed as that is all I use. This has a very nutty flavor and is great with dried fruit. Please Note: Only eat one a day!!!! THESE ARE SUPER POTENT!!!

1 1/2 cups flour
1 1/2 cups ground flax seeds
3/4 cup brown sugar
1 tablespoon baking powder
3/4 teaspoon nutmeg
1 1/2 teaspoons cinnamon
2 cups milk
1 egg
1/2-1 cup dried fruit

Steps:

  • Preheat oven to 350°F.
  • Grind flax seeds.
  • Mix first 6 ingredients together.
  • Add milk and egg.
  • Spray muffin pan with cooking spray or use liners.
  • Fill until 3/4 full.
  • Bake at 350 F for 25-30 minutes.

Okay, so this may not be *exactly* like a muffin, but it's pretty close, and was still pretty tasty! The taste and texture turned out to be a little more like that of a very thick pancake, but that's close enough, right? ;) Anyway, I was wanting just one muffin this morning, and decided to tinker around a little and make just one in the microwave. I'll probably play around with this a little more, but here are the basics. Really, you could probably add fruit or chocolate chips or whatever to this, and have yourself a tasty little treat in roughly five minutes. I'd love to hear other people's ideas on additions/changes to this!

Number Of Ingredients 8

2 tablespoons whole wheat flour
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon flax seed meal
1 teaspoon brown sugar
1/2 teaspoon canola oil
2 tablespoons skim milk
2 teaspoons unsweetened applesauce

Steps:

  • In microwavable coffee mug, ramekin, or custard dish, combine flour, baking powder, cinnamon, and flax meal (I used a custard dish).
  • In another coffee mug (etc), mix brown sugar, oil, milk, and applesauce.
  • Pour wet ingredients into dry, and mix thoroughly.
  • Microwave on MEDIUM power for 2 minutes (cooking time may be different with different microwaves; 2 minutes is just what worked for me).
  • Muffin will be done when toothpick inserted near middle comes out clean.
  • I put some applesauce on top and just ate it with a spoon right out of the custard dish.
