Light and Tasty Cucumber Slices image

This is another attempt at me trying to find low fat and low calories 'treats' that also pack a bit of flavor. I am a pickles freak so I would pretty much be happy with any cucumber and vinegar combo but I especially like these when I want a more delicate flavor. They are good as a side with dishes like salmon or I even sometimes just put a few on a sandwich when I want some zest without any fat. I make this with Splenda because I really don't want the sugar as I am counting fat and calories.

13 ounces cucumbers
2 garlic cloves, crushed and chopped
3/4 cup white vinegar
1 1/2 cups Splenda granular
1/4 teaspoon dried dill

Steps:

  • Slice the cucumber into really thin slices. I use my food processor to do this and it just takes a few seconds.
  • In a bowl combine the white vinegar, Splenda, garlic and dill and just stir until the Splenda is dissolved.
  • Pour wet mixture over the cucumber slices and stir so that the mixture has coated all of the slices.
  • You can eat right away but they are much better if you put them in an air tight container and chill them in the fridge for a few hours (I do them overnight).

Some of the best spicy pickles I've ever eaten. Simple to make but takes a while to prepare. Good appetizer. This is also good poured over asparagus.

3 large cucumbers, unpeeled
4 1/2 teaspoons salt
3 -4 garlic cloves, sliced
4 dried hot red chili peppers, chopped
1/3 cup sesame oil
1/2 cup rice vinegar or 1/2 cup white vinegar
1/3 cup sugar

Steps:

  • Wash cucumbers, cut in half lengthwise and remove seeds. Cut cucumber halves into 1/2 inch slices. Place in medium bowl, sprinkle with salt and let stand for 4 hours.
  • Squeeze liquid from cucumbers and rinse, place with garlic and red peppers in serving dish.
  • Heat sesame oil in a small saucepan over high heat until it begins to smoke. Pour over cucumber slices. Heat vinegar in small saucepan until it boils. Remove from heat add sugar and mix well. Pour over cucumbers and stir well.
  • Cover and refrigerate for about 4 hours before serving. May be refrigerated up to 1 week. Serve cold.

Wonderful snack for anyone who likes vinegar, onions and garlic! This recipe is only for one cucumber, adjust quantity as desired.

white vinegar
1 cucumber, sliced
water
1 small sliced onion
1 -2 diced garlic clove

Steps:

  • Put cucumbers, garlic, and onion in a bowl.
  • Pour in vinegar and water until covering cucumbers, at a 3-1 ratio between vinegar and water.
  • (3parts vinegar for every part water).
  • Allow to marinate overnight before serving.

JUST CUCUMBER SLICES



Just Cucumber Slices image

This is a simple recipe to have as a refreshing side dish. It's especially good for picnics, bar-b-ques, potlucks and buffets. If you like your slices on the tart side cut back on the sugar a little bit. Please note it will need to be chilled at least 3 hours.

1/2 sliced onion (optional)
1/4-1/2 teaspoon dried dill weed
1/4 cup sugar
1/8 cup vinegar

  • In a bowl toss together the cucumbers, onion, if using, and dill.
  • Combine sugar, vinegar, water and salt and bring to a boil.

From the southern Pacific island of Guam where we lived for 4 years! These were a favorite at our church potluck suppers and picnics with barbequed chicken and ribs! Very refreshing in hot and humid weather! (The name "Chamorro" comes from the native people of Guam...very warm, and friendly people...)

2 -3 medium cucumbers
1/4 cup finely chopped onions or 1/4 cup thinly sliced scallion
1/8 teaspoon black pepper
1/4 cup soy sauce
2 lemons, juice of or 2 tablespoons white vinegar
1/8 cup water

Steps:

  • Pare the cucumbers and leave narrow strips of skin for color.
  • Slice into 1/4-inch slices.
  • In a zip-lock plastic bag, combine onions, pepper, soy sauce, lemon juice, and water.
  • Add cucumber slices.
  • Seal bag securely.
  • Turn bag over and over to coat cucumbers.
  • Place bag in refrigerate for at least 15 minutes.
  • A longer time will enhance flavor.
  • Serve in bowl.
