1 tablespoon vegetable oil
1 (20 ounce) package Simply Potatoes Red Potato Wedges
1 (16 ounce) package smoked kielbasa, diced
1 red bell pepper, sliced
1 yellow bell pepper, sliced

Steps:

  • Heat the oil in a saucepan over medium heat. Place kielbasa and potatoes in the saucepan. Cover, and cook 25 minutes, stirring occasionally, until potatoes are tender.
  • Mix red bell pepper and yellow bell pepper into the saucepan, and continue cooking 5 minutes, until peppers are just tender.

This is a quick and easy one-dish meal that I concocted one hectic Christmas shopping/baking season when it seemed we were eating takeout all the time. My kids loved it and I've been making it ever since. I only listed this as 4 servings because everyone usually has seconds.

1 lb kielbasa (can use Smoked Sausage)
2 (15 1/4 ounce) cans green beans (can use 1 bag frozen)
3 medium potatoes
1 medium onion
1 (15 1/4 ounce) can chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cut kielbasa into 1" chunks and place in Dutch oven or large pan.
  • Add enough water to completely cover the meat and cook on high till it comes to a boil.
  • Meanwhile, peel potatoes and the onion, and cut into eighths; drain the green beans.
  • Let kielbasa boil for 2 minutes to extract the grease.
  • Lower the heat and skim off all grease and foam; discard.
  • Turn heat to high again and add vegetables, chicken broth and seasonings to pot; stir to combine.
  • If necessary, add enough water to bring the liquid level to about 1" below top of the ingredients.
  • Bring to a boil; lower heat to simmer and cover.
  • Cook for 20 minutes.
  • Serve in soup bowls with crusty bread, which is delicious dipped into the broth.
  • NOTE: If frozen green beans are used, put them in with the kielbasa to cook for 7 extra minutes before adding the potatoes and onion; then cook for 20 more minutes.

  • Place potatoes and water in a microwave-safe dish. Microwave, covered, on high until potatoes are tender, 3-4 minutes; drain., Meanwhile, mix brown sugar, vinegar, mustard, thyme and pepper. In a large skillet, heat oil over medium-high heat; saute onion and kielbasa until onion is tender., Add potatoes; cook and stir until lightly browned, 3-5 minutes. Stir in brown sugar mixture; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. Stir in spinach until wilted. Stir in bacon.

The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

1 lb turkey kielbasa (linked sausage)
Simply Potatoes Diced Potatoes with Onion
0.5 (16 ounce) bag baby carrots (Sliced or Julienned)
1 (16 ounce) bag frozen green beans
1 (4 ounce) can mushrooms, Undrained

Steps:

  • Brown potatoes and carrots in electric skillet (300-325 degrees), use juice from mushrooms if you need to add liquid - this avoids using oil. While potatoes are cooking cut sausage into bite size pieces. Once potato mixture is cooked, add fz green beans, sausage and mushrooms. Make sure to stir so all ingredients are mixed thoroughly. Turn skillet down to low or steam. Put the lid on and vent, steam for 15 minutes or until beans are tender. Season to taste.

Over the years I have added bacon and increased the cheese, making it even better than the original. Multi-purpose dish, can be used as a main dish or side dish. Can also be served at breakfast, brunch, lunch, or even dinner.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
8 large eggs
1 1/2 cups half-and-half
2 cups shredded monterey jack and cheddar cheese blend
1 lb bacon, cooked and crumbled

Steps:

  • Heat oven to 350°F Spray 11x7 glass baking dish with nonstick cooking spray. Add 1 bag Simply Potatoes hashbrowns. Next, layer crumbled bacon on top of potatoes. Crack eggs, 1 at a time and evenly spaced, across top of potatoes and bacon. Poke yokes with a fork. Spread 2 cups grated cheddar cheese evenly over top. Pour 1 1/2 cups half and half over casserole. Cover with foil and bake for 1 hour, remove foil and bake for additional 15 minutes or until cheese begins to bubble and turn lightly brown.
  • Remove from oven, let sit for 5 minutes and serve.
