SIMPLE TACO SOUP

Steps:
- In a Dutch oven, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Add taco seasoning and mix well. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.

- 1. First, you'll want to brown one pound of ground beef, or ground turkey if you prefer. You can cook the meat in a separate skillet or the large pot you will need for the soup.
- 2. Once the meat is brown, drain it and add in two minced garlic cloves and half a cup of onions. Stir those in and then add in your spices-one tablespoon of cumin and one teaspoon of chili powder.
- 3. Let the spices soak in while you dice up an eight ounce block of cream cheese. Add in the cream cheese and use the back of a wooden spoon to mash it into the meat. You can use a metal or plastic spoon, but the cream cheese will not stick to the wooden spoon as much.
- 4. When the cream cheese completely coats the meat, add in two cans of Rotel, two cans of beef broth and half a cup of heavy cream.
- 5. Stir well and bring ingredients to a boil. Salt can be added to taste
QUICK AND SIMPLE TACO SOUP
I like this tasty soup because it is so quick and easy to put together. After work I often don't have energy for anything complicated. The ingredients from this seem to be different from most of the other taco soups listed here. I believe this one originated from Campbells - as you can almost tell by the ingredients :)

SIMPLE TACO SOUP
This recipe came out of the Southern Living magazine January 2009 issue. I have posted it just as it was written; however, when I make it I use regular diced tomatoes and add one small can of green chilis (taco aisle) and saute one jalapeno pepper along with the onion, garlic and ground beef. I also stir one cube of cilantro (Knorr makes this) into the soup as it cooks instead of using fresh cilantro on top. This freezes pretty well as long as you don't add sour cream and cheese to the whole pot.

- Brown and drain ground beef, onion and garlic together in a large soup pot.
- Add remaining ingredients except for fresh cilantro, sour cream and cheese (if using).
- Bring to a boil over medium-high heat. Cover, reduce heat to LOW and simmer 30 minutes.
- Top with cilantro, sour cream and cheese (if using).
