15 ripe passion fruit
1 1/2 cups freshly squeezed orange juice (about 4 oranges)
1/4 cup Simple Syrup for Passion-Fruit Orangeade

Steps:

  • Slice the passion fruit in half over a bowl, catching any juice. Set a fine strainer over the bowl. Using a spoon, scoop flesh into strainer; press down on seeds to extract all juice; you should have 1/4 cup juice. Reserve 2 tablespoons seeds; discard remaining seeds.
  • Combine passion-fruit juice, orange juice, simple syrup, and 1/2 cup cold water in a large pitcher; stir to combine. Fill pitcher with ice. Pour into individual glasses, and garnish each glass with 1 teaspoon seeds. Serve.

  • Combine simple syrup, 6 cups water, orange juice, and lemon juice in a large pitcher; refrigerate until cold.

2 cups white sugar
1 cup passion fruit pulp
2 lemons, juice of
1 teaspoon tartaric

Steps:

  • Put water and sugar into saucepan and boil for 5 minutes.
  • Add the passionfruit pulp, lemon juice and tartaric acid.
  • Boil for another 3 minutes then take off heat.
  • Strain out seeds and pulp, and pour the mixture into a clean bottle.
  • Keep the bottle of sauce in the refrigerator and use it within a month.
