SIMPLE SAGE DRESSING/STUFFING

Simple Sage Dressing/Stuffing image

Our family's traditional stuffing recipe for the Thanksgiving turkey. Although I have strayed from time to time over the years, this is the stuffing recipe I always return to. All ingredient amounts are estimated; Mom has never measured and neither have I. Mom wants me to remind you to be careful with the amount of sage you use. Start off using a small amount of sage then adjust as needed. Please note that for safety reasons I do not place the stuffing into the cavity of the turkey, rather, I bake it separately. Finally and most importanly, *please avoid using commercially produced stock in this stuffing*. This is the stock recipe I use every time: Recipe #55282 And the bread recipe I've used the past several Thanksgivings: Recipe #102949

Time 1h5m

Yield 12 cups

Number Of Ingredients 11

12 cups day old bread, cut into 1/2-inch cubes
butter, for sauteing
2 cups celery & leaves, minced
1 large yellow onion, diced small
1 -2 egg, lightly beaten
1 tablespoon dried sage or 3 teaspoons finely minced fresh sage, to taste
1 teaspoon poultry seasoning, to taste
1/2 teaspoon salt-free garlic powder
salt, to taste
white pepper, to taste
fresh salt-free turkey broth, warm but not too hot

Steps:

  • Preheat oven to 350 degrees.
  • In a skillet, melt approximately 2-3 tablespoons butter on medium heat and sautè the celery and onion until softened, about 3-4 minutes. Set aside to cool slightly.
  • In the meantime, cube the bread and set aside in a large, deep mixing bowl.
  • Place the cooled celery and onion in the mixing bowl with the cubed bread. Next, add the *egg(s), sage, poultry seasoning, garlic powder, salt, and white pepper. Toss to combine. *Usually I don't need more than one egg.
  • Now stir in about [1] cup of turkey stock. Mix. Add more stock, about 1/2 cup at a time until the bread mixture is {lightly} moistened but not saturated.
  • Place the stuffing mixture in a buttered ovenproof casserole dish and cover with foil.
  • Bake for about 45 minutes, removing the foil about 15 minutes before the cooking time is completed to allow the top to brown.
  • Serve hot.

SIMPLE CHICKEN STUFFING

Simple Chicken Stuffing image

This is how I often stuff chicken, probably not as good as some of the more elaborate recipes but better than using pre-packaged stuffing. This is enough for a small chicken, double the quantities for a large chicken. While a matter of personal prference I don't go too overboard chopping the onion / celery finely and like it to have a slightly chunky texture.

Time 1h35m

Yield 2 serving(s)

Number Of Ingredients 7

3/4 cup breadcrumbs
1 medium onion, chopped
1/4 cup celery, sliced
1 large egg
1 tablespoon soy sauce
2 teaspoons garlic
1 teaspoon dried tarragon

Steps:

  • Mix all ingredient in a bowl.
  • Stuff chicken and cook as per usual.
  • This is quite a moist firm mix so you could also roll into a firm pattie and cook to one side.

SIMPLE TURKEY STUFFING

Simple Turkey Stuffing image

The great thing about stuffing is that it's almost impossible to mess up: A little more of this or less of that won't affect your results too much. The onething you want to have just the right amount of is liquid, to keep the stuffing moist but not soggy.

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Number Of Ingredients 12

4 tablespoons unsalted butter
4 onions, coarsely chopped (about 4 cups)
5 stalks celery, coarsely chopped (about 2 1/2 cups)
1 large bulb fennel, coarsely chopped (about 2 cups), optional
Coarse salt and freshly ground pepper
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely chopped fresh sage
1 pound sweet fennel sausage, removed from casings and cut into 1-inch pieces
6 ounces jarred or vacuum-packed whole peeled chestnuts (about 1 heaping cup)
2 day-old Italian bread loaves (about 8 ounces each), cut into 1/2-inch cubes (about 12 cups)
2 to 3 cups Brown Turkey Stock
3/4 cup chopped flat-leaf parsley

Steps:

  • In a large saute pan, melt butter over medium heat. Add onions, celery, and fennel; season with salt and pepper. Add rosemary and sage. Cook, stirring occasionally, until vegetables are soft and golden, about 10 minutes.
  • Meanwhile, cook sausage in a medium nonstick skillet over medium heat, stirring occasionally, until browned and cooked through, about 8 minutes.
  • Using your fingers, break chestnuts into large pieces. Stir chestnuts and sausage into the vegetables. Transfer mixture to a large bowl. Add bread cubes; toss well to combine.
  • Drizzle 2 cups stock over mixture, tossing to moisten evenly. Use additional stock if necessary. (The mixture should feel quite moist when squeezed.) Season with salt and pepper. Stir in parsley.
  • Place the stuffing in a buttered 2 1/2- to 3-quart shallow baking dish or in an ovenproof gratin dish.
  • Preheat oven to 350 degrees. Bake stuffing until heated through and top is browned and crusty, 35 to 45 minutes. Serve hot.

SUNNY'S SIMPLE STUFFING

Sunny's Simple Stuffing image

This stuffing is great on its own, or choose the add-in combination that best suits your meal.

Provided by Sunny Anderson

Categories     side-dish

Time 1h20m

Yield 8 to 10 minutes

Number Of Ingredients 20

One 12-ounce bag stuffing mix, such as Pepperidge Farm
1/4 cup loosely packed chopped fresh parsley
4 tablespoons unsalted butter
1 cup chopped celery
1 cup chopped onions
1 tablespoon chopped fresh thyme
5 to 6 fresh sage leaves, chopped
4 cloves garlic, grated on a rasp
Kosher salt and freshly ground black pepper
2 1/2 cups turkey or chicken stock
8 ounces sausage, sauteed
1 green bell pepper, chopped and sauteed
1 red bell pepper, chopped and sauteed
1 yellow bell pepper, chopped and sauteed
8 large oysters (about 1 cup)
2 hard-boiled eggs, coarsely chopped
1 cup dried apricots, diced
1 bulb fennel, sliced and sauteed
1 cup walnuts, toasted and chopped
2 apples, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mix the stuffing mix with the parsley and set aside.
  • In a large pan on medium heat, add the butter, celery, onions, thyme, sage and garlic. Season with a pinch of salt and a nice grind of pepper. Cook until the onions and celery are tender but the garlic is not browned. Remove to the bowl of bread cubes. Pour the stock over the bread and veggie mixture and stir to combine (this is a wet dressing, so it should be very moist). If using one of the add-in combinations, mix in the ingredients carefully.
  • Pour the mixture into a 13-by-9-inch baking dish. Press down to make it compact, and then cover tightly with aluminum foil. Bake for 45 minutes, then raise the oven temperature to 400 degrees F and bake, uncovered, until golden brown on top, about 15 minutes more.

SIMPLE STOVE TOP STUFFING

Simple Stove Top Stuffing image

I originally found this recipe in The Rookie Cook by Jean Paré and adjusted it to reduce the amount of butter and use chicken broth to soften the bread. It is a quick and easy side dish and a good excuse to use up the crusts of your bread loaves (I keep them in the freezer just to use in this dish). We use whole wheat bread and it is still great.

Provided by Tuffykenwell

Categories     Low Protein

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 cup chopped onion
1 cup chopped celery
1/4 cup butter
1 tablespoon parsley flakes
1 1/2 teaspoons poultry seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups stale bread, torn into small pieces (you can use crusts)
chicken broth (I use Campbell's reduced sodium boxed chicken broth)

Steps:

  • In a saucepan sauté onion and celery in butter on medium for about 5 minutes until onion is soft. Mix next four ingredients in small bowl and add to onion mixture. Heat and stir for about 1 minute until fragrant.
  • Add bread cubes and stir. Then add chicken broth slowly while stirring. Bread should be moist but not mushy. Fluff with fork to serve.
  • If you want to make Simple Baked Stuffing put stuffing into greased 2 quart casserole dish. Cover and bake at 325F for 30 minutes. Can buddy with chicken in oven.

SIMPLE CORNBREAD STUFFING

Simple Cornbread Stuffing image

This is a family recipe (more method than recipe) for no frills, yummy cornbread stuffing from my grandma, who was a great cook. Take care to not put too much liquid in the dressing, but enough that it is moist. You can always add more liquid, but you can't take it out!

Provided by Sidney Street woman

Categories     Grains

Time 1h15m

Yield 2 casseroles, 12-15 serving(s)

Number Of Ingredients 10

2 loaves day-old white bread
1 cornbread, baked
1/2 cup butter or 1/2 cup oil
3 stalks celery
1 onion
salt and pepper
2 -3 tablespoons dried sage
1 quart chicken broth
2 eggs
2 tablespoons dried parsley or 1/4 cup fresh parsley

Steps:

  • Tear up bread into shreds or bite sized pieces and leave out to dry for a couple of hours while you make the cornbread and chop the onion and celery. Bake the cornbread (I often make a 9x13 pan the night before and we have some of it for dinner, saving the rest for the stuffing.) Put the bread into a very large bowl and crumble cornbread over the bread cubes. Sprinkle with sage, a little salt, and pepper, add parsley.
  • Saute' the onion and celery in butter or oil until translucent. Mix this with 2 cups of the chicken broth, and whisk in the 2 eggs. Pour the sauteed vegetables, broth, and egg mixture over the "two breads" mixture and mix gently with your hands. Add more broth as needed until the mixture is well moistened, but not soggy. Taste for salt and sage amounts and add more if needed.
  • Spoon stuffing into one very large or two medium greased casserole pan(s) or into the turkey cavity and bake until done (30-40 minutes) at whatever temperature you have everything else in the oven baking. Usually 350 is the best - watch that it doesn't dry out. You have to be flexible on Thanksgiving or whenever your oven is being used for other things!
